Most Barrique Ex-Amarone<br /><br />MOST, the aqua-vitae made from grape must, is born from the crushing of prized grapes still fresh from the harvest. The berries, with their fragrant and sugary pulp are<br />transformed into must, distilled according to the 'Tosolini method' with Charante steam stills (double distillation). Matured in oak barriques, Most ex Amarone barrique is<br />born. It has an aromatic bouquet, with intense notes of morello cherry and sweet spices. The bottle of Most, with its inverted goblet shape, is the trademark of the Tosolini<br />distillery, unmistakable and precious.<br /><br />Variety: blend of noble grapes<br />Alcohol content: 40% vol.<br />Artisanal distillation: discontinuous, with Charante steam stills<br />Maturation: in former Amarone oak barriques<br />Colour: limpid with intense amber hues<br />Body: intense and elegant<br />Sensory profile: extremely pleasant on the palate, with intense notes of morello cherry<br />and sweet spices. Enveloping, aromatic and silky on the palate. Fruity aftertaste with excellent persistence reaching more complex notes on the finish. The smoothness of<br />Most and its<br />rich and full flavour are released at the first sip.<br />Serving suggestion: Serve at room temperature in the classic tulip glass.<br />During the summer period the best temperature is cellar temperature around 16/18°C.<br />

Based in Nogaro, in<br />the heart of Bas Armagnac, it distils only wines from this area, reputed for the refinement of its crus.<br /><br />CHARACTERISTICS<br />Between Gers and Landes, the continuous still is used at 58% vol. and the 'Charantais' system, recognised by the 1972 decree as being of superior quality thanks to the<br />elimination of impurities and the consequent obtainment of a more refined and elegant spirit.The minimum ageing period of 7-8 years takes place in new (30%) Guasconian<br />oak casks of 400 litres. SOIL: sandy-loamy. GRAPES: Ugni Blanc, Baco and Folle Blanche.<br />TASTING NOTES<br />The intense amber colour anticipates clean hints of coffee and dried flowers. The palate has good texture, body and length with candied fruit aftertaste.<br />

The fruits soon form a pasty mass from which a sweet and fragrant juice is obtained. Fermentation of the<br />fruit begins after one or two days and lasts five to six weeks Its progress must be carefully monitored. Then distillation begins in copper stills using the discontinuous<br />method.<br /><br />COLOUR: clear transparent<br /><br />BOUQUET: Gives the nose all the intense and captivating varietal notes of the Williams pear.<br /><br />PAIRINGS: Enjoy as a digestive, in cocktails but also on fruit salads, sorbets.<br /><br />FLAVOUR: harmonious on the palate, with a good balance between the freshness of the fruit and its roundness... <br />PEAR WILLIAMS DISTILLATE<br /><br />Pear Williams distillate. No other fruit type is more frequently distilled in our areas than the Williams pear - it is undisputedly the queen among more or less aromatic pip<br />fruit types. Williams is a favourite, although whoever tasted a glass of a true top quality distillate will find the large majority of common or garden pear brandies flat at best,<br />even artificial at worst. Top quality is seldom reached in the industry because substantial effort is required: the Williams pear for the Zu Plun distillate come from the<br />Burgraviato and lower Venosta area near Naturno. When they are picked they need to be much riper than the pears grown for eating. Only then do they release the<br />concentrated aroma which is captured in this distillate. Freshly picked and brightly coloured, these pears are immediately cored by hand in order to avoid unwanted bitter<br />tones, then mashed straight away: a labour-intensive process where time is of the essence. Athanor plant with two bain-marie boilers of classical<br />design installed in 2001, used for the distillation of grapes, fruit and wine. Crisopea plant with two vacuum bain-marie boilers, installed in 2009 after years of research. Brandy over 12 years<br /><br />The base is a single-varietal wine from a single vintage, 2003. The Montepulciano grapes were selected, harvested and vinified specifically for this production. The raw<br />material was distilled using a discontinuous bain-marie still in water diffusion. The passage of years, the balanced use of small oak casks and the magic of the microclimate<br />make this Brandy an exceptional product.<br /><br />Processing and refinement<br />The Brandy was distilled in 2003 from a wine specially vinified for this production. In 2004 the Brandy was aged in small, medium-toasted Allier oak barrels, previously used<br />to age Chardonnay wine. The Brandy remains in these barrels until 2012 when it is bottled and then left to rest in the bottle for a further 3 years. Finally, after 12 years from<br />the grape harvest, our Brandy is ready to be tasted.<br /><br />Colour: pale amber.<br />Nose: elegant woody floral notes, with hints of vanilla, sweet spices and dried fruit.<br />Taste: warm and enveloping sip, it introduces a pleasant texture<br />that conquers with an 'aroma of refinement' and softness.<br />Alchol: 43% vol.<br />Serving temperature: 16° - 18° C<br />
