Distillery<br />Romano Levi<br /><br />Features<br /><br />Chamomile grappa lightly aged in Acacia wood.<br /><br />Alembic: discontinuous copper still, the only one in the world still working with direct fire for the distillation of grappa.<br /><br />Grape varieties:<br />Nebbiolo da Barbaresco Docg, Dolcetto d'Alba Doc and Barbera d'Alba Doc according to an ancient recipe of Romano Levi found in diaries.<br /><br />Origin and conservation of the pomace: Neive, Barbaresco, Trezzo, Treiso and Alba. The pomace, chosen to be fresh and still dripping with must, mixed according to an<br />ancient recipe of Serafino Levi, is immediately compressed in underground pits in order to obtain a natural tanning, able to extract all the aromas and flavours of the grape.<br /><br />Vinification:<br />Ageing: in wood for six months in classic Piedmontese barrels of about 700 litres stored at a constant temperature between 14 and 19 degrees C°.<br /><br />Tasting notes:<br />Light straw colour with rich and clean aromas with typical and aromatic notes reminiscent of chamomile. Engaging on the palate with fine and persistent floral notes on the<br />finish.<br />

Here the master distiller, armed with his expertise, extracts the delicate aromatic heart from the skins of Cabernet Sauvignon, Merlot, Cabernet Franc<br />and Petit Verdot.<br /><br />After patient distillation in small copper stills, the grappa is aged for at least three years - twice as long as the time required to obtain a Grappa Riserva - in Ornellaia's own<br />barrels.<br /><br />It is then blended with the reserves from previous years to obtain greater breadth and character. Provocative spicy notes appear just before its nuttiness and terrific acidity<br />cuts through the sweetness. With a truly unforgettable finish.<br /><br />Each wine (Oloroso and Pedro Ximénez) is matured, separately in its own solera for 12 years. Once blended together, the resulting sherry is returned to a 45-cask solera for<br />a further 3 years ageing. In centuries gone by, casks with sherry were lashed to ships sailing for the Indies and were found to develop an extraordinary smoothness and<br />complexity. Lustau has revived this style of sherry in the East India wine.<br /><br /><br />ALCOHOL: 20 %<br />VERAGE AGE: 15 años<br />PROFILE: Sweet<br />Fresh, mineral and pungent on the nose with almonds and bakery notes. Dry and crisp, yet rich and with a full finish.<br /><br />PAIRINGS:<br />This wine is a perfect companion to light desserts and cakes, but can also be served with creamy cheeses or foie-gras.
