Distillery<br />Romano Levi<br /><br />Features<br /><br />Chamomile grappa lightly aged in Acacia wood.<br /><br />Alembic: discontinuous copper still, the only one in the world still working with direct fire for the distillation of grappa.<br /><br />Grape varieties:<br />Nebbiolo da Barbaresco Docg, Dolcetto d'Alba Doc and Barbera d'Alba Doc according to an ancient recipe of Romano Levi found in diaries.<br /><br />Origin and conservation of the pomace: Neive, Barbaresco, Trezzo, Treiso and Alba. The pomace, chosen to be fresh and still dripping with must, mixed according to an<br />ancient recipe of Serafino Levi, is immediately compressed in underground pits in order to obtain a natural tanning, able to extract all the aromas and flavours of the grape.<br /><br />Vinification:<br />Ageing: in wood for six months in classic Piedmontese barrels of about 700 litres stored at a constant temperature between 14 and 19 degrees C°.<br /><br />Tasting notes:<br />Light straw colour with rich and clean aromas with typical and aromatic notes reminiscent of chamomile. Engaging on the palate with fine and persistent floral notes on the<br />finish.<br />

<br />Eligo of Ornellaia<br />Grappa Riserva<br /><br />Eligo dell'Ornellaia Grappa Riserva is an expression of Ornellaia's philosophy that a rigorous process of grape selection in the vineyard and at every stage of production is<br />fundamental to creating the best possible quality.<br /><br />With the arrival of autumn, after the Ornellaia wines have been transferred to French oak barrels for ageing, the marc is entrusted to an artisanal distillery in the heart of the<br />Tuscan countryside. Here the master distiller, armed with his expertise, extracts the delicate aromatic heart from the skins of Cabernet Sauvignon, Merlot, Cabernet Franc<br />and Petit Verdot.<br /><br />After patient distillation in small copper stills, the grappa is aged for at least three years - twice as long as the time required to obtain a Grappa Riserva - in Ornellaia's own<br />barrels.<br /><br />It is then blended with the reserves from previous years to obtain greater breadth and character. <br />KERNER<br />GRAPPA<br /><br />Kerner Grappa. Kerner, which is only cultivated on about 30 hectares in South Tyrol's Vinschgau and especially in the Eisack Valley, is a comparatively young grape<br />variety - it was bred in the 1920s as a cross between red Trollinger and white Riesling. The vine produces a spicy, straw-yellow white wine with greenish reflections. The<br />Hofbrennerei Zu Plun obtains the marc for this wine from the Köferer vineyard in Neustift, where, in addition to Riesling and Silvaner, a solid Kerner with the minerality typical<br />of the growing region is pressed. Its class is also found in a clear grappa full of character. Like the wine, the Kerner Grappa from the Hofbrennerei Zu Plun is reserved on the<br />nose, but dry, full and very present on the palate. Pinot Noir, also known as Pinot Noir or Pinot Nero depending on the region, is one of the most important noble grape varieties and a classic red wine of<br />cooler wine-growing regions. In Italy, for example, the majority of the area under cultivation is in the northern zones - such as South Tyrol, where this bright ruby-red wine<br />has been cultivated for over 150 years. Its juicy fruit aromas and dense structure also give Grappa Pinot Noir a special, complex richness. This single-varietal speciality is<br />distilled from pomace from small vineyards, such as the Eppan Stroblhof. This estate is known for its Pinot Noir Pigeno with its fine sour cherry bouquet and the special<br />Riserva, which is only vinified in above-average vintages. Selected, healthy and fully ripe grapes from the best sites and old vine stocks guarantee an elegant Pinot Noir with<br />balanced tannins and fine aromas, qualities that the master distiller from Plunhof also knows how to bring to life again in the grappa. On the nose, the Pinot Noir Grappa<br />unfolds aromas of fully ripe cherries, wild berries and a hint of bitter almond.
