Pfeffer PINK<br />IGT Dolomiti Rosato<br /><br />Joy of life 'Pfefferer' in rosé: Clear fruit, fine, spicy notes, pleasant freshness and a bright, pale pink colour.<br />Description: A fresh wine with an appealing aromatic bouquet and a bright rosé hue. Aromas of red berries such as strawberry and delicate peach and spicy notes<br />followed by a stimulating acidity are typical of this palate-pleasing wine.<br />Ageing potential: 2 years.<br />Recommended food: Ideal aperitif wine! The winter of 2017 ended a five-year drought with January recording the most rainfall in over 20 years. The abundant rainfall continued into March, causing a modest<br />delay in budbreak, and pushing bloom back by two weeks. Increased soil moisture allowed for healthy vine growth and development. The summer, in turn, was warm and<br />punctuated by occasional heat waves. Despite Mother Nature's variability, favorable weather in August provided optimal conditions for fruit development and maturation.<br />Superb flavors and excellent ripening led to an earlier than expected harvest, which commenced on the 5th of September.<br /><br />The Opus One 2017 offers a harmonious aromatic balance of rich dark fruit, stems of roses, and earthy forest floor. The juicy entry offers a round, silky mouthfeel with just<br />enough acidity to complement the satin texture. This seductive wine shows flavors of black cassis, black cherry and a hint of cocoa powder. The fine-grained, plush tannins<br />evolve into a long, supple finish. Through hard work and meticulous attention to detail, we ultimately achieved great results.<br />Our vines coped well with both the wet spring and the hot and dry summer, and the golden autumn helped us achieve perfect ripeness. Physiolog-ical ripeness, sugar<br />ripeness and acidity are in perfect balance. Ripe fruit, cool character and moderate alcohol characterise the vintage.<br />From mid-September to the end of October, we were able to harvest all our red wine varieties at the best time. The average yield per hectare was 53 hl.<br /><br />Winemaking<br /><br />La Rose de Manincor is the result of the top red wine batches being made by the saignée method, i.e. bleeding off a proportion of wine after only short contact with the<br />skins - in this case 6 to 12 hours; it increases the ratio of skins to juice in the vat in order to obtain a red wine with more colour and tannin. Consequently the composition<br />and character of the rosé wine may vary slightly from year to year. The lightly coloured juice so obtained is fermented in oak barrels partially using yeasts occurring<br />naturally on the grapes. The grapes are<br />pressed in the traditional tanks called lagares, followed by maturation of the Port in large old oak vats in the cellars in Vila Nova de Gaia.<br />COLOUR: intense ruby<br />BOUQUET: Intense aroma of wild fruits, spices, notes of dark chocolate, with a slight floral profile, making it a refined and very expressive Port wine<br />PAIRINGS: perfect with desserts in which chocolate predominates, especially dark chocolate. The fermentation in stainless-steel vats preserves the full aromatic freshness. The wine has a<br />nose of citrus and apricots, a round and generous mouthfeel, and a fresh and flavourful finish.<br />
