<br />The elegant Marlborough red<br /><br />A balanced and lively expression of Pinot Noir from the Marlborough region.<br /><br />The 2017 growing season began with ideal spring conditions; warm temperatures and few frost events encouraged good canopy growth. Settled weather over flowering led to<br />high potential crops, fruit thinning was widely employed to reduce yield and achieve optimum vine balance. Fastidious canopy management throughout the mild and sunny<br />growing season ensured fruit developed, then ripened, at an ideal rate. The excellent weather during the ripening season was interrupted by rain events during the harvest.<br />The single-minded quality focus of the viticulture and winemaking teams, with hour by hour assessment, led to optimum picking decisions. Our low-yielding, early-ripening<br />vineyards with their open canopies, stood us in good stead in what was a tricky vintage across Marlborough and New Zealand.<br /><br />Nose: Appealingly aromatic, the 2017 Pinot Noir reveals notes of Morello cherry and bramble.<br />Palate: Fine, silky tannins and juicy acidity provide an elegant structure, with complexity coming from gentle toast and.<br /><br />Harvest:<br />We hand-picked the Pinot Noir from March 24th until April 11th, at a point of excellent flavour concentration and acid balance.<br />Vinification: The Pinot Noir fruit was all de-stemmed before being gravity fed into the open topped fermentation vessels. The grape skins were gently plunged with an average<br />of 18 days skin contact. After fermentation the wines were matured in French oak for 11 months, of which 35% was new. FERRARI ROSÉ<br />Made from a prestigious blend of Pinot Noir vinified in rosé and Chardonnay, this is a delicate and intriguing Trentodoc.<br />Denomination: TRENTO DOC<br />Grapes: Pinot Noir 60% and Chardonnay 40%, harvested by hand between late August and early September.<br />Length of maturation: At least 20 months on selected yeasts in its own culture.<br />Production area: Vineyards on the slopes of the Trentino mountains at an altitude of over 300 metres, facing south-east and south-west.<br />Alcohol content: 12.5% vol.<br />First year of production: 1969<br />TASTING NOTES: Visual examination: copper tending to antique pink. The 'flower' must, i.e. the one obtained from the first pressing, was subjected to<br />the first alcoholic fermentation which took place in stainless steel tanks and a small part in barriques. Towards the spring of the following year, the wine began the second<br />fermentation process in the bottle, remaining in contact with the yeasts for a period of 48 months.<br /><br />Tasting notes: Pale straw yellow colour with very light golden reflections, creamy mousse with fine and persistent perlage, delicate aroma with hints of floral notes of white<br />pulp fruit. The palate is harmonious, complex and elegant. The ideal serving temperature is between 7 and 9°C. Food pairings and drinking occasions: Particularly suitable<br />as an aperitif or with pasta dishes with fish, baked fish and white meat.<br /><br />Historical data: Tenuta Montenisa is located in the heart of Franciacorta, around the village of Calino, near Lake Iseo. DENOMINATION<br />Franciacorta Riserva.<br /><br />GRAPE VARIETY<br />100% pure Pinot Noir.<br /><br />VINEYARDS OF ORIGIN<br />3 Pinot Noir vineyards on the 'Belvedere' estate, located in the Municipality of Iseo, at an altitude of 466 metres above sea level, on the hills bordering the lake to the south.<br /><br />AVERAGE YIELD PER HECTARE<br />6,400 kilograms of grapes, equivalent to 3,200 litres of wine (wine yield: 50%).<br /><br />VINIFICATION AND PROCESSING<br />The Vintage Collection Dosage Zéro Noir is the result of careful selection of the Pinot Noir grapes, first in the vineyard and then in the cellar, and of skilful vinification carried<br />out with full respect for our know-how. The grapes, freshly harvested by hand in small crates, are traced by vineyard of origin and cooled. Each bunch is selected by expert<br />eyes and hands. The berry has a colourless pulp but a black skin: in order to create the base for Dosage Zero Noir, it is essential that the juice, the must extracted remains<br />white or slightly pink. This is why pressing is carried out strictly at low pressure, so that the skin remains intact and does not lose its colour. The must thus obtained<br />ferments in small oak barrels. In order to seek maximum aromatic complexity and expressive power, without losing elegance, the elevage in barrels lasts only 5 months. A<br />pair of flying tanks allows the wine to be transferred by gravity from the small barrels to the ageing tanks. Six months after the harvest, the three base wines from the three<br />vineyards of origin are blended so that the proportion between delicacy, nervousness, vinosity and aroma is optimal. The Pinot Noir imparts its complex aromas of red fruits<br />to the wine and gives it body, persistence in the mouth and longevity. The magic of its terroir, combined with the skills of the men, have resulted in a wine of exceptional<br />purity. To reach its maximum qualitative expression and to develop the characteristic aromatic profile that makes it unique, 8 years of ageing are required. A Franciacorta<br />rightly ennobled by the 'Riserva' classification. The dégorgement takes place in the absence of oxygen, using a unique system invented and patented by Ca' del Bosco.<br />This avoids oxidative shocks and further additions of sulphites. It makes our Franciacorta wines purer, more pleasant and longer-lived. So that this 'blanc de noir' can<br />express itself with great personality and convey the typicality of the terroir from which it was born, we have chosen not to add any liqueur at disgorgement. In accordance with the Ca' del Bosco method, the grapes, harvested by<br />hand in small crates, are promptly codified and cooled in cold rooms.<br />Each bunch is selected by expert eyes and hands, and then benefits from our exclusive 'bunch spa'. A special system of washing and hydromassage of the bunches,<br />using three soaking tubs and a system for complete drying. The base wines are obtained exclusively from first-pressing musts. Alcoholic fermentation takes place<br />exclusively in small oak barrels made from selected woods and matured for at least 3 years. Here it remains on its lees for a further 6 months, also carrying out malolactic<br />fermentation. No compromises, no concessions: only the wine from the best barrels, from the 15 base wines of origin, is tapped to give rise to Annamaria Clementi. A pair of<br />flying tanks transfers it by gravity from the barrels to the blending tank. A very long refinement in contact with the yeasts, lasting more than 8 years, determines its unique<br />profile. An absolute Franciacorta. The dégorgement takes place in the absence of oxygen, using a unique system designed and patented by Ca' del Bosco. This avoids<br />oxidative shocks and further additions of sulphites. Altemasi Riserva Graal 2013<br />TRENTO DOC CLASSIC METHOD<br />An elegant classic sparkling wine Riserva Millesimato that Cavit produces only with grapes from great vintages. Graal derives from medieval Latin with the meaning of<br />container, this name gained notoriety in the cycle of King Arthur's novels because it was associated with the cup used by Jesus during the Last Supper.<br /><br />Production area: The highest and most suitable hilly areas for sparkling wines in Trentino (Colline di Trento, Altopiano di Brentonico and Valledei Laghi). Medium-textured<br />soils of fluvial-glacial and volcanic nature, on average not very deep and situated at altitudes between 500 and 600 metres above sea level.<br />Grape varieties: 70% Chardonnay and 30% Pinot Noir with a yield of 70 hl per hectare.<br />Climate: After a mild winter with plenty of water, a spring with plenty of rain accompanied us until the beginning of June, followed by a hot, dry summer. Towards the end of<br />August, thunderstorms cooled the days and led to sudden drops in temperature at night. These sudden changes in temperature delayed the ripening process, postponing<br />the start of the harvest until 10 September.<br />Vinification and ageing: Manual harvesting into boxes preceded the traditional soft pressing of the perfectly ripe grapes, with separation of selected fractions of the must,<br />which fermented at a controlled temperature in stainless steel and barriques.frothing took place in May, after a period of maturation of the base wine.the first disgorgement<br />took place 68 months after tirage.<br />Analytical data:<br />Alcohol: 12.50% vol.<br />Total acidity: 6 g/l<br />Dry extract: 22 g/l<br />Residual sugars: 5 g/l<br />Contains sulphites<br />Organoleptic characteristics: White mousse with fine and continuous perlage; straw yellow colour with greenish reflections. Refreshing and lively.<br />Brilliant yellow with golden reflections. Intense and particularly fine, velvety bouquet of almond blossom, peach and apricot, with hints of fresh hazelnut and bread crust. Very<br />fine and long-lasting perlage.<br />Terroir:<br />The Chardonnay grapes are rooted in vineyards above St. Pauls between 300 and 500 m above sea level on the calcareous dolomite rock of the Mendel mountain range with<br />sand and clay deposits. The south-east exposure, the constant aeration by fall winds and the autumnal temperature differences between day and night ensure a unique<br />microclimate in which the grapes ripen well on the vine for an above-average length of time and thus develop an optimal acid-sugar ratio.<br />Vinification:<br />Ripe grapes, harvested by hand. Gentle whole bunch pressing. Fermentation takes place separately for both grape varieties at a<br />controlled temperature of 15°-16°C. After blending to form the cuvée, the tirage liqueur is added to the base wine in spring, so that the second fermentation takes place in<br />the bottle at a cellar temperature of 11°-12°C, during which the wine is left on its lees for at least 22 months before being degorgéed and put on the market.<br />Organoleptic characteristics: With a pale pink colour and peachy reflections, fine and persistent perlage, it expresses fruity notes of raspberry and sweet spices, enveloped<br />by pleasant scents of yeast.
