Pinot Noir LAFÓA<br />This Pinot Noir is full of character, elegance and finesse.<br />Pinot Noir. Intense fruit aromas combine with firm tannins.<br />tannins. Another part thrives on<br />loamy and calcareous gravel soils.<br /><br />Yield: 35 hl/ha<br /><br />Vinification: Part of the must is cold macerated; fermentation takes place in large wooden barrels for about 3 weeks at a temperature of 25-28° C. It needs attention, time to mature and likes to play the leading role: as the crowning glory of a festive table or even as a proud solitaire.<br /><br />Grape variety:<br />Pinot Noir<br />Site and soil: Mazzon, called 'Mason' by us to avoid confusion with the larger site above Neumarkt. Four hectares are planted with Pinot Nero in this unique site: a south-<br />facing high plateau at 400 - 450 m above sea level, sunny and constantly exposed to the wind. Ideal conditions for the tightly berried Pinot grapes. The soil is sandy loam<br />and interspersed with various stones: Dolomite, porphyry, gneiss and granite can be found from small grains to fist-sized stones. Grape: Nebbiolo<br />First vintage: 1978<br />Aspect and height above sea level: south-facing, 300-350 metres<br />Soil type: moderately loose-packed, slightly clayey, limestone-based<br />Vine training system and planting density:<br />Guyot-trained at 4,500 vines per hectare.<br />Average age of productive vines: 40 years<br />Harvest period and method: second 10 days of October, manual harvest.<br />The vinification procedure for Barolo Ginestra Casa Matè<br />involvesalcoholic fermentation in temperature-controlled stainless steel<br />tanks,with daily pumping over. After completing malolactic<br />fermentation,the wine matures in 25-hectolitre barrels of Slavonian oak.<br />Bottling normally takes place in August. The Barolo Ginestra Casa<br />Matèthen stays in the binning cellar for 8-10 months before release.<br />

Cultivation area<br /><br />Years of testing by vinification of small quantities of wine have finally led us to the ideal site, the monopollage Ganger. It is located in Mazon, at an altitude of 360 to 380<br />metres above sea level, facing southwest, with a slope of 3-5%, and is characterised by a unique microclimate and deep clay and limestone soils. It is the place of origin of<br />the Vigna Ganger Pinot Noir Riserva.<br />Vinification and ageing<br /><br />The fully ripe grapes are harvested by hand in mid-September and delivered in small containers. The grapes - one fifth of which are vinified as whole clusters - are then<br />gravity-fed into steel vats where fermentation takes place (25 days). After the malolactic fermentation, the wine is matured in barriques for 20 months. Finally, the wine is<br />stored in the bottle for another 18 months.<br />Wine portrait<br /><br />Intense ruby red with aromas of ripe fruit, sour cherries, wild berries, raspberries and a slight hint of marzipan. The wine presents itself elegant and refined with good acidity<br />and spiciness. It has a filigree and at the same time complex structure as well as soft and balanced tannins. This wine elegantly accompanies main courses based on red<br />meat, roast meat and game. Growing area<br />The grapes come partly from the vineyards of the Überetsch, at an altitude of 450 - 500 m above sea level, from well-ventilated vineyards, and<br />partly from the sunny slopes of Mazon and Montan in the Unterland. The loamy and chalky soil is ideal for Pinot Noir and gives it a velvety softness<br />and an elegant structure.<br /><br />Vinification and ageing:<br />The grapes are harvested by hand and delivered in small containers. After destemming, the must is gravity-fed into steel vats where fermentation<br />takes place (12-15 days). After malolactic fermentation, the wine is aged for 15 months in small and large wooden barrels. The wine is kept in the<br />bottle for another 6 months.<br /><br />Wine portrait:<br />Very well structured and distinctly fruity, versatile Pinot Noir. The thermal values characterise a rather warm environment, with very low annual rainfall and very high temperature ranges, a condition that has a beneficial<br />influence on the quality of the grapes. This is the classic production area for Primitivo di Manduria PDO<br /><br />Soil: fine-textured residual red soil with a calcareous substratum and sparse rocky outcrops. The famous red hue of these soils derives from an intense presence of iron<br />oxides<br /><br />Harvest: Mid-September<br />Vinification: Manual harvesting of the grapes when slightly overripe; destemming-crushing, pre-fermentation maceration at 8°C for 24-48 hours. Thermo-controlled maceration<br />and alcoholic fermentation with selected yeasts for about 10 days at 24-26°C. Per la produzione del Cabernet-Merlot Sanct Valentin vengono utilizzate solo uve<br />provenienti da vigneti particolarmente soleggiati. La resa è estremamente bassa e i vitigni vengono vinificati singolarmente. Il Cabernet-Merlot Sanct Valentin, prodotto per la<br />prima volta nel 2013, è un vino rosso di prima classe, estremamente complesso e con tannini fini.
