Pratto 2020 IGT Benaco BS...

Pratto 2020 IGT Benaco BS...
Pratto

Pratto represents a challenge that we wanted to take up, going beyond conventional schemes while maintaining unaltered respect for the territory. In this late harvest, the
aromaticity of Sauvignon vinified in stainless steel, the softness of Chardonnay and the finesse of Turbiana meet harmoniously with an exclusive result. The nose shows
notes of tropical fruit accompanied by a vegetality and minerality that enhance the finesse and elegance with a very communicative impact that induces salivation stimulating
the taste. On the palate it is rich with an exquisitely sweet attack followed by perfectly balanced acidity and flavour, and finally the fruity and mineral notes return. Ideal with
structured starters such as crostini with foie gras and also with delicate but richly flavoured first courses, light and white meats and fish with aromatic herbs.
Perfect with mature cheeses.
Technical data

Grape varieties used: Turbiana, Chardonnay and Sauvignon Blanc
Soil composition: calcareous - clayey
Training system: Guyot and spurred cordon
Planting system: 2.30 x 0.70
Yield per hectare: 80 quintals
Type of vinification: Steel
Malo/actic: Not carried out
Ageing and development: In steel on fine lees 12 months, followed by two months in bottle
Alcohol content: 13.5%.
Total acidity: 6.60 g/L
Volatile acidity: 0.35 g/L
pH: 3.10
Dry extract: 21.5 g/L
Chardonnay 'Cardellino'...

Chardonnay 'Cardellino'...

Chardonnay 'Cardellino' 2021 - South Tyrol DOC

The Chardonnay 'Cardellino' was Elena Walch's first wine and is still probably the winery's most popular wine. According to an old tale, the goldfinch - the 'Cardellino' - only
builds its nest in Chardonnay vines, while it does not nest in other grape varieties. Elena Walch has thus dedicated her debut, an elegant Chardonnay full of character, to
this faithful little bird, which has won many lovers with its minerality, freshness, coupled with suppleness and excellent structure. The Chardonnay 'Cardellino' has long
since become a South Tyrolean classic and continues to be the most popular wine at the Walch family's table. A wine to which one remains loyal, just as the Cardellino
remains loyal to its Chardonnay.

The Chardonnay 'Cardellino' convinces with a strong, straw-yellow colour, with a complex interplay of fruity aromas, citrus and orange peel, some lime blossom, mineral
richness and a spicy hint of tobacco. On the palate, this classic from Elena Walch surprises with exciting freshness and mineral race, with elegance and juicy length:
inviting, refreshing and easy to drink.

OUTCOME OF THE YEAR 2021: we are delighted with a vintage of outstanding quality, especially for our white wines! A dry and cool spring led to a late flowering of the
vines, followed by a warm and dry June. After a volatile midsummer, there was a surprising change in the weather in mid-August, which brought dream weather until the end
of September and created the very best conditions for optimal ripening of the grapes. The harvest began in mid-September, about 10 days later than last year. Blue skies
and lots of sunshine as well as midsummer daytime temperatures and autumnally cool nights enabled the grapes to reach ideal sugar levels while retaining very good
acidity. Accordingly, the wines of the 2021 vintage show a markedly high quality.

VINIFICATION: gentle pressing, static clarification, fermentation at a controlled temperature of about 20°C, long contact with the yeast after fermentation. Part of the must
(about 15%) is fermented in French oak barrels where it matures for six months. The assemblage takes place in spring.

Alcohol: 13,50% Vol.
Total acidity: 6.7 g/L
Residual sugar: 0,5 g/L
Grape variety: 100% Chardonnay
Vinsanto Chianti Classico...

Vinsanto Chianti Classico...

Marchese Antinori Vinsanto Chianti Classico DOC 2016

Climate: After an autumn and winter that tended to be mild and not very rainy, spring 2016 began with good weather in Chianti Classico, bringing bud break about 10 days
earlier than the historical average. Starting in May and during the first half of June, rainfall and average cool temperatures were recorded, but did not affect the decisive
phases of flowering and fruit set. The summer up to the end of August was hot, dry and without heat peaks: optimal conditions for maintaining an excellent vegetative-
productive balance and ensuring constant growth of the grapes. Harvesting took place between 7 and 10 September.

Vinification: the grapes, sourced exclusively from the vineyards of the Antinori estates in Chianti Classico, were carefully selected and harvested in boxes; they were then
placed by hand on the special mats of the appassitoio (drying room) of the Tignanello estate or on the penzane of the Pèppoli estate (mobile frames where the bunches are
hung in suspension). The grapes, left to dry until the end of December, were then softly pressed in order to maintain their organoleptic and aromatic characteristics. The
must obtained was put into the typical 'caratelli', made from different types of wood and with a capacity varying between 50 and 200 litres, where the long, slow alcoholic
fermentation took place. The wine remained in the kegs for about 3 years and was then blended and finally bottled.

Historical data: The production of Vinsanto in Tuscany dates back at least to medieval times: it is considered a true regional speciality and the Antinori family has always
produced it. The first vintage of Vinsanto Tenute Marchese Antinori (a 'natural' production vinsanto) was, however, 1987.

Tasting Notes: The Marchese Antinori Vinsanto has a dark amber colour with golden reflections. On the nose sweet notes of dried fruit, such as hazelnut and date, combine
with an intense sensation of candied orange, honey, and a slight hint of cinnamon. On the palate it is full, soft, supported by a pleasant freshness that makes it lively and
pleasant. Good persistence on the palate.
