Brigantia - Franciacorta Satén Millesimato<br /><br />Alkohol: 13% Vol.<br />Residual sugar: 10gr/lt<br />Grape varieties used: Chardonnay in purity<br />Training system: Guyot 90/100 cm from the ground<br />Planting system: 2.5×0.85 m<br />Plant density: 4,500/5,000 plants/ha<br />Average grape yield per hectare: about 100 q.li per hectare<br />Grape selection: in the vineyard with manual harvesting into crates of a maximum of 18 kg.<br />White vinification in pneumatic press with soft pressing of the whole grapes and separation of the 1st and 2nd fractions. After static and physical separation from the<br />impurities of the must at low temperatures, selected yeasts are inoculated for fermentation in temperature-controlled stainless steel tanks. This is followed by racking and<br />lowering the temperature to around 10°C to avoid malolactic fermentation. Once the 'draught syrup' has been added, which contains a maximum of 18gr/lt of sugar to<br />enhance the softness and 'silkiness' of the wine, it is bottled, corked with a crown cap and laid down in a pile for frothing.<br />Ageing in bottles: 36 months on average<br /><br />Beautiful, bright straw yellow, where gold peeps out, minute effervescence, great continuity.<br /><br />The bouquet is initially shy, opening gently with notes of vanilla and white chocolate, followed by wild flowers and chamomile, then almond milk and white pepper, closing<br />with chalky scents and oyster water.<br />On the palate it is creamy, the effervescence denotes great envelopment; it has excellent persistence, complete, tasty and rich in nuances of pastries, ripe yellow fruit, at<br />times exotic and citrus meringues.<br />To be served at 6-8° in a medium-sized goblet; a wine that is not afraid of rising temperatures.<br />It can be served on the table just about anywhere, from starters inspired by the woods, such as a carpaccio of porcini mushrooms, or meat tartare, even game, such as<br />venison, or tartare or carpaccio of fish and shellfish with spicy condiments, pepper and ginger.<br />Going down the boot you can think of combining it with dishes that use spicy ingredients, to enhance its creamy side.<br />If you want to accompany its creamy, milky notes, you could pair it with a cheese made from mixed milks, the three-milk tome or some mature robiola.<br />

The winter of 2017 ended a five-year drought with January recording the most rainfall in over 20 years. The abundant rainfall continued into March, causing a modest delay in<br />budbreak, and pushing bloom back by two weeks. Increased soil moisture allowed for healthy vine growth and development. The summer, in turn, was warm and punctuated<br />by occasional heat waves. Despite Mother Nature's variability, favorable weather in August provided optimal conditions for fruit development and maturation. Superb flavors<br />and excellent ripening led to an earlier than expected harvest, which commenced on the 5th of September.<br /><br />The Opus One 2017 offers a harmonious aromatic balance of rich dark fruit, stems of roses, and earthy forest floor. The juicy entry offers a round, silky mouthfeel with just<br />enough acidity to complement the satin texture. This seductive wine shows flavors of black cassis, black cherry and a hint of cocoa powder. The fine-grained, plush tannins<br />evolve into a long, supple finish. Brut<br />Alto Adige - South Tyrol DOC<br />Grape variety: Pinot Bianco 30%, Chardonnay 60%,Pinot Nero 10%<br />Growing region: Medium-high hills in Überetsch and Unterland<br />Altitude: 450 - 700 m.a.s.l.<br />Soil type: Predominantly loose limestone soils, with a good clay content and a normal presence of organic substances.<br />Ripening system: pergola and trellis<br />Planting density: 3,300 - 3,500 plants per hectare for the pergola, 5,000 - 6,000 for the espalier.<br />Alcohol content: 12.50 % vol.<br /><br />Product description: the three grape varieties are vinified separately, gently pressed and fermented at a controlled temperature of 14°-16°C. The wine is aged in stainless<br />steel on the lees of the first fermentation until spring. The tirage liqueur is added to the base wine and it is bottled, sealed with crown caps and stored in the cellar at 10°-12°<br />C so that the second fermentation can begin. Once completed, the wine remains on its lees for at least 24 months before being disgorged and put on the market.<br />Organoleptic characteristics: Bright straw yellow, fine and persistent perlage, fruity scents with balanced yeast notes. On the palate, fresh, dry, very persistent and with a<br />pleasant aftertaste of dried fruits.<br />Gastronomic recommendations: Classic aperitif, good companion also with light starters and with the whole menu of simple fish dishes.<br />

<br />The elegant Marlborough red<br /><br />A balanced and lively expression of Pinot Noir from the Marlborough region.<br /><br />The 2017 growing season began with ideal spring conditions; warm temperatures and few frost events encouraged good canopy growth. Settled weather over flowering led to<br />high potential crops, fruit thinning was widely employed to reduce yield and achieve optimum vine balance. Fastidious canopy management throughout the mild and sunny<br />growing season ensured fruit developed, then ripened, at an ideal rate. The excellent weather during the ripening season was interrupted by rain events during the harvest.<br />The single-minded quality focus of the viticulture and winemaking teams, with hour by hour assessment, led to optimum picking decisions. Our low-yielding, early-ripening<br />vineyards with their open canopies, stood us in good stead in what was a tricky vintage across Marlborough and New Zealand.<br /><br />Nose: Appealingly aromatic, the 2017 Pinot Noir reveals notes of Morello cherry and bramble.<br />Palate: Fine, silky tannins and juicy acidity provide an elegant structure, with complexity coming from gentle toast and.<br /><br />Harvest:<br />We hand-picked the Pinot Noir from March 24th until April 11th, at a point of excellent flavour concentration and acid balance.<br />Vinification: The Pinot Noir fruit was all de-stemmed before being gravity fed into the open topped fermentation vessels. The grape skins were gently plunged with an average<br />of 18 days skin contact. After fermentation the wines were matured in French oak for 11 months, of which 35% was new. Donna Cora Satèn 2011<br />Classification Franciacorta DOCG<br />Vintage 2011<br /><br />Vinification: The whole bunches of Chardonnay were subjected directly to a soft pressing. The 'flower' must, i.e. the one obtained from the first pressing, was subjected to<br />the first alcoholic fermentation which took place in stainless steel tanks and a small part in barriques. Towards the spring of the following year, the wine began the second<br />fermentation process in the bottle, remaining in contact with the yeasts for a period of 48 months.<br /><br />Tasting notes: Pale straw yellow colour with very light golden reflections, creamy mousse with fine and persistent perlage, delicate aroma with hints of floral notes of white<br />pulp fruit. The palate is harmonious, complex and elegant. The ideal serving temperature is between 7 and 9°C. Food pairings and drinking occasions: Particularly suitable<br />as an aperitif or with pasta dishes with fish, baked fish and white meat.<br /><br />Historical data: Tenuta Montenisa is located in the heart of Franciacorta, around the village of Calino, near Lake Iseo.
