Description<br /><br />Very deep violet/black colour. Highly dense bouquet, chassis, blackberries. Very powerful yet elegant attack, densely concentrated tannins on the palate, powerful<br />backbone and enormously long finish.<br /><br />High ageing potential: 10-15 years.<br /><br />Recommended food: Goes well with strong dishes with red meat, grilled or roasted, but especially with game and with spicy cheeses.<br />Serving temperature: 16° C.<br />Grape variety: Cabernet Sauvignon.<br />Sites: The vineyard site is located at an altitude of 430 m above sea level with optimal sun exposure. A rather dry site, with sandy, gravelly moraine soil.<br />Vinification: Maceration for 10 days with gentle circulation of the marc followed by maceration for a further 10-14 days. Racking of the young wine into new/used barriques,<br />malolactic fermentation, several transfers of the wine during the 18 months of ageing. It needs attention, time to mature and likes to play the leading role: as the crowning glory of a festive table or even as a proud solitaire.<br /><br />Grape variety:<br />Pinot Noir<br />Site and soil: Mazzon, called 'Mason' by us to avoid confusion with the larger site above Neumarkt. Four hectares are planted with Pinot Nero in this unique site: a south-<br />facing high plateau at 400 - 450 m above sea level, sunny and constantly exposed to the wind. Ideal conditions for the tightly berried Pinot grapes. The soil is sandy loam<br />and interspersed with various stones: Dolomite, porphyry, gneiss and granite can be found from small grains to fist-sized stones. The highest parcel is planted with the<br />oldest vines, from which we select this 'Grand Cru from the Grand Cru' in top vintages.<br /><br />Data:<br />Residual sugar: 0.9 g/l<br />Alcohol: 13,5 % Vol.<br />Acidity: biological acid reduction 6.0 g/L<br />

Fermentation in cement, punctuated by continuous micro-oxygenation, which continues into post-fermentation, preparing the wine for the encounter with<br />alcohol, to initiate the first 'act of giving DOC Marsala'.<br />INNAMORATION: Encounter between wine, siphon (grape must giving DOC Marsala mutated - i.e. whose fermentation has been stopped - added with ethyl alcohol of vine<br />origin), cooked must and a small percentage of alcohol<br />AGING METHOD: 4 years.
