TYPE: Valle de Colchagua DO - ' Cabernet '.<br /><br />PRODUCTION AREA: Colchagua Valley - Peralillo<br /><br />VINE: Cabernet Sauvignon 100%.<br /><br />SOIL TYPE: Soil of volcanic origin, made up of sandy-clayey soil and granite sand.<br /><br />AGE OF THE VINEYARDS: at the beginning of the '90s important replanting works were carried out, the vineyard is subdivided into two parts: the first one is in the middle of<br />the vineyard and the second one is in the middle of the vineyard.<br /><br />VINIFICATION: vinification is carried out according to the traditional Bordeaux method. The grapes are placed in stainless steel tanks for fermentation at a controlled<br />temperature between 25° and 27°C. This is followed by 10-15 days of maceration, during which several repassings are carried out to allow a delicate extraction of the<br />phenolic compounds. The wine is then left to mature for three months in stainless steel tanks to obtain its unique fruity style.<br /><br />COLOUR: intense ruby red<br /><br />BOUQUET: in addition to the typical and varietal herbaceous notes, which are otherwise fine and elegant, the nose displays hints of plums, cherries and small red fruits,<br />followed by spicy and vanilla nuances.<br /><br />PAIRINGS: Perfect with savoury first courses and grilled red meats, this wine is ideal with mature cheeses. Excellent with roast guinea fowl.<br /><br />FLAVOUR: full-bodied and velvety on the palate, with soft and well-integrated tannins.<br />

This grape variety most likely originates from Germany and was introduced to South Tyrol around 1900; today it is mainly cultivated in the Eisack Valley. The Sylvaner grape<br />feels particularly at home in the not too high, airy and warm slopes of the central Valle Isarco. Description:<br />Aroma of fully ripe wild berries and dark chocolate. Very dense and complex with fine tannins. Elegant Merlot with very good ageing potential.<br />Ageing potential: 6 - 8 years.<br />Recommended food: Goes well with hearty roasted or grilled meats with root vegetables and spicy dark sauces, as well as game dishes and cheeses.<br />Serving temperature: 16° C.<br />Grape variety: Merlot. The grapes come from 20-year-old trellised vineyards with a planting density of approx. 5,000 vines/ha.<br />Sites: Sun-exposed slope. Extremely dry and heat-retaining quartz porphyry weathered soil that only allows low yields.<br />Vinification: Must fermentation at 28-30° C in stainless steel tanks. Gentle circulation of grape skins and juice is used to achieve optimal extraction of colour and extract<br />substances. Further ageing takes place entirely in small wooden barrels for about 12 months. After gentle filling and 12 months of bottle ageing, the wine is put on sale.<br />

The demanding Gewürztraminer prefers warm, airy sites with deep, loamy soils. These conditions are found in the Brenntal vineyard in the north-west of the village of<br />Kurtatsch.<br /><br />The Gewürztraminer gets its multifaceted aromas from the red clay soils: lychee, roses, mango, caramelised orange peel and lavender. On the palate, the wine presents a<br />creamy texture and elegant acidity that balances the muscular body. The wine reaches its complexity after a longer ageing period in the cellar and in the bottle, which is<br />why the wine is only sold as a Riserva 2 years after the harvest.
