March and April were<br />unseasonably cold months and for this reason only at the end of April we did start to see<br />the beginnings of budding. The cooler temperature persisted into May and therefore<br />blooming officially started only the second half of June which is typically 2 weeks later<br />than usual. June and July were hotter and more humid than the average which caused big<br />challenges in the vineyards. Fortunately, at the end of summer we had exceptional weather<br />- dry and hot and also during the whole month of Seprember we had perfect conditions.<br />Harvest started 10 days later than usual on September 26th. Cool nights and hot days<br />continued and made for uniformed, healthy grapes with average alcohol levels and higher<br />than average acidic levels.<br />

The ageing in<br />barrels and bottle ageing bring complexity and depth.'<br />Franz Gojer<br /><br />Bolzano soil: deep alluvial soils of the Eisack with porphyry subsoil.<br />Subsoil. Description<br /><br />Very deep violet/black colour. Highly dense bouquet, chassis, blackberries. Very powerful yet elegant attack, densely concentrated tannins on the palate, powerful<br />backbone and enormously long finish.<br /><br />High ageing potential: 10-15 years.<br /><br />Recommended food: Goes well with strong dishes with red meat, grilled or roasted, but especially with game and with spicy cheeses.<br />Serving temperature: 16° C.<br />Grape variety: Cabernet Sauvignon.<br />Sites: The vineyard site is located at an altitude of 430 m above sea level with optimal sun exposure. A rather dry site, with sandy, gravelly moraine soil.<br />Vinification: Maceration for 10 days with gentle circulation of the marc followed by maceration for a further 10-14 days. Racking of the young wine into new/used barriques,<br />malolactic fermentation, several transfers of the wine during the 18 months of ageing. On the<br />powerful and complex on the palate with grippy tannins and an elegant finish.<br />High ageing potential: 10-15 years.<br /><br />Recommended food: White meat, poultry and lamb.<br /><br />Serving temperature: 16° C.<br /><br />Grape variety: Pinot Noir from Guyot plantations between 15-35 years old.<br /><br />Vineyards: Vineyards at approx. 400 m above sea level, the majority of the grapes grow on dry<br />moraine soils of porphyry and dolomite material. Another part thrives on<br />loamy and calcareous gravel soils.<br /><br />Yield: 35 hl/ha<br /><br />Vinification: Part of the must is cold macerated; fermentation takes place in large wooden barrels for about 3 weeks at a temperature of 25-28° C. The wine is then gently<br />drawn off.<br />The wine is then gently drawn off into barriques, malolactic fermentation and further<br />further ageing for 12 months in oak barrels, some of which are new and some of which have been filled several times.<br /><br />Analytical values:<br />Alcohol 13.5% vol.<br />Total acidity 5,4g/l<br />Residual sugar 2,5g/l<br />
