Altemasi Rosé<br />TRENTO DOC METODO CLASSICO Altemasi Rosé represents a harmonious union between the elegance of Chardonnay and the structure of Pinot Noir, for a refined<br />bouquet of small fruits.<br /><br />Area of production: The wines of this important cuvée come from Pinot Noir and Chardonnay grapes harvested in the high hillside vineyards around Trento and on the<br />Brentonico plateau at altitudes between 450 and 600 m above sea level, facing south and southwest. The Chardonnay is grown on soils that are mainly of fluvial-glacial<br />origin, of medium depth, tend to be calcareous and rich in skeleton. The soils chosen for the Pinot Noir are of volcanic origin, originating on the basalt of the Brentonico<br />plateau, with a medium texture and well structured.<br />Vinification and refinement:The grapes are harvested by hand and delivered in crates to the cellars where vinification takes place. Only the whole Chardonnay berries are<br />slowly pressed to separate the different fractions of must which, inoculated with selected yeasts, ferments at controlled temperatures in stainless steel tanks. The wine<br />from Pinot Noir is made using the 'submerged cap' system, which consists of leaving the must in contact with the skins until the first signs of fermentation begin; then only<br />the must is separated and fermentation continues in stainless steel at a controlled temperature. This allows us to obtain a soft, delicate colour from the skins, a distinctive<br />feature of Cavit's Trentodoc rosé. Foaming in the bottle takes place the following spring and the wine remains on the lees for at least 15 months. Time is a precious commodity: it takes at least 84 months on the<br />lees to transfer the complex history of the vintage, the identity of the vineyard and the characteristics of the variety into the wine. It is an extra brut with a dosage of about 3<br />g/l. The enveloping taste and structure are merited by the quality of the grapes from old vines and the ripeness of the fruit. 2018 CHATEAU CROIX MOUTON 'BORDEAUX SUPERIEUR'<br />THE YEAR.<br />The M printed on the label of this fine-tasting and fleshy Bordeaux Supérieur wine marks the personality and particularities of each vintage and changes colour every year.<br />This cuvée from Château Croix Mouton, which dominates the Dordogne, is made exclusively from Merlot, the emblematic grape variety of the right bank of the Garonne, and<br />has a deep ruby red colour with beautiful shiny reflections. On the palate, small, acidic red fruits (mainly red plum, cherry) follow one another. On the palate it is full-bodied<br />and juicy, full of charming finesse. This wine is best appreciated when young, when its fruity bouquet shows all its vivacity.<br />THE CHÂTEAU CROIX MOUTON ESTATE<br />Château Croix Mouton is located in the town of Lugon on the right bank of the Bordeaux River and covers almost 70 hectares of vines. It is owned by the Janoueix family and<br />thrives on the clayey soil of Carney Island. The 2019 grape varieties focus on Merlot (96%), complemented by Cabernet Franc (2.5%), Malbec (1%) and Petit Verdot (0.5%).<br />The vines are on average 38 years old. The planting density is about 3,600 to 6,000 vines per hectare.<br />The work in the vineyard is meticulous and includes tillage, grassing, thinning and some leaf thinning. After sorting at harvest, vinification takes place in concrete and<br />stainless steel tanks with openings and regular puncturing. Fermentation takes place under temperature control (maximum 26-27 °C). The maturation period is between<br />three weeks and one month. Maturation lasts between three and four months on the fine lees in barrels (20%) and in vats with or without wood (80%).<br />The top Bordeaux produced by the estate are pleasant, fruity wines that tend to be drunk at a young age. Gourmet and fleshy wines that are also quite accessible.<br />

The nose has clean, intense spicy aromas that develop and highlight a powerful material and fine, dense tannins on the palate. TYPOLOGY: RIOJA AOC red wine<br />PRODUCTION AREA: Rioja Alta and Rioja Alavesa.<br />GRAPE VARIETIES: Mainly Tempranillo, with small amounts of Garnacha and Graciano.<br />SOIL TYPE: Mainly clay-limestone soil.<br />VINIFICATION: The grapes are carefully destemmed before alcoholic fermentation in temperature-controlled stainless steel tanks. Prolonged maceration with the skins lasts<br />up to 2 days to extract colour, aroma and density in the mouth. Malolactic fermentation takes place in new barrels and stainless steel tanks, depending on the parcels and<br />their origin.<br />COLOUR: Deep and luminous red.<br />BOUQUET: A bouquet with beautiful notes of toasted wood and spices, combined with liquorice-based candied red fruits.<br />FLAVOUR: Full-bodied on the palate with a background of ripe fruit and elegant, soft tannins. A long silky aftertaste.<br />AGEING: Once the process is complete, the wines are aged in barrels and racked every 6 months. For 12 months they are aged in French (6%) and American (4%) oak<br />barrels. Maturation in bottles for at least one year before marketing.<br />
