Conceived to be consumed<br />during the year, it expresses its best side many years after bottling. In its youth it is fresh, linear and endowed with great finesse and elegance with delicate notes of white<br />flowers and balsamic, hints of apricot and almond. Time allows it to evolve, expressing its mineral notes with greater determination. The wine acquires its own complexity<br />with hints of iodine, spices and candied fruit. In the mouth it is capable of enveloping the whole palate thanks to an important savoury essence accompanied by lively and<br />exuberant acidity. TYPE: Valle de Colchagua DO - ' Cabernet '.<br /><br />PRODUCTION AREA: Colchagua Valley - Peralillo<br /><br />VINE: Cabernet Sauvignon 100%.<br /><br />SOIL TYPE: Soil of volcanic origin, made up of sandy-clayey soil and granite sand.<br /><br />AGE OF THE VINEYARDS: at the beginning of the '90s important replanting works were carried out, the vineyard is subdivided into two parts: the first one is in the middle of<br />the vineyard and the second one is in the middle of the vineyard.<br /><br />VINIFICATION: vinification is carried out according to the traditional Bordeaux method. The grapes are placed in stainless steel tanks for fermentation at a controlled<br />temperature between 25° and 27°C. This is followed by 10-15 days of maceration, during which several repassings are carried out to allow a delicate extraction of the<br />phenolic compounds.
