Praeclarus Brut 750ml

Praeclarus Brut 750ml

Praeclarus Brut
Blanc de Blancs South Tyrol DOC

Perfumed South Tyrolean joie de vivre. Elegance, freshness, harmony and complexity. Animating and seductive. Refreshing and lively.
Brilliant yellow with golden reflections. Intense and particularly fine, velvety bouquet of almond blossom, peach and apricot, with hints of fresh hazelnut and bread crust. Very
fine and long-lasting perlage.
Terroir:
The Chardonnay grapes are rooted in vineyards above St. Pauls between 300 and 500 m above sea level on the calcareous dolomite rock of the Mendel mountain range with
sand and clay deposits. The south-east exposure, the constant aeration by fall winds and the autumnal temperature differences between day and night ensure a unique
microclimate in which the grapes ripen well on the vine for an above-average length of time and thus develop an optimal acid-sugar ratio.
Vinification:
Ripe grapes, harvested by hand. Gentle whole bunch pressing. Maturation of the base wine in large wooden barrels for several months, followed by traditional bottle
fermentation and 40 months of maturation on the fine lees at a naturally constant temperature in the historic bunker.
Recommended with: Classic as an aperitif.
Alcohol: 12,5 % vol.
Ingredients: contains sulphites
Alto Adige - South Tyrol DOC
Grape variety: Pinot Bianco 50%, Chardonnay 40%, Pinot Nero 10%
Growing region: High hills in the Überetsch and medium hills in the Unterland.
Altitude: 380 - 700 m. above sea level
Soil type: Skeleton-rich lime-clay soils with a good proportion of organic matter
Vine training system: pergola and trellis
Plant density: 3,300 - 3,500 vines per hectare with pergola, 5,000 - 5,500 with espalier
Harvest date: end of August / beginning of September
Alcohol content: 12.50 % vol.
Serving temperature: 6 - 8 °C

Product description: The grapes of the three varieties come from medium and high hillside vineyards, whose cultivation allows an average yield of 10 t/ha. The night storage
(of the Chardonnay and the Pinot Nero) in cold storage cells, followed by gentle pressing to obtain the pre-fermentation must, is followed by a careful vinification. The first
fermentation takes place separately by grape variety in stainless steel at a controlled temperature of 14-16°C, followed by ageing on the fine lees until the following spring.
Then the different wines are blended, given the tirage dosage, bottled and fermented for the second time in the modern ageing cellar in a horizontal position at 10-12°C and
left in contact with the yeast for at least 40 months. No dosage is added during disgorgement, but the wine is topped up with wines from other bottles, so that this sparkling
wine is guaranteed not to have any extra sugar.
Organoleptic characteristics: The glass reveals a straw-yellow colour with golden reflections, enlivened by a fine, intense and persistent perlage. The aromas unfold in a
succession of citrus and bright fruits to medicinal herbs (mint) and forest aromas (fern, resin), finally revealing spicy hints (ginger, cardamom). On the palate, freshness and
dynamism dominate and the flavour development is influenced by the minerality that accompanies the entire sip, carried by a very fine and engaging carbonic acidity. The
finish is enticing in the clarity of its flavours, with notes of spices and dried fruits, and the tactile viscosity that compensates with smoothness for the lack of sugar.
Gastronomic recommendations: Its fullness of aromas and its versatility of taste and tactile qualities make this sparkling wine an accompaniment to the whole menu. It is
suitable both for reciprocal flavour accentuation in the context of intense hors d'oeuvres and intermediary dishes, especially seafood and shellfish, and also has the gift of
enriching the stimulation of dishes with particular texture (large fish or with firm flesh, white meat), with distinct saltiness (sea fish, caviar) and fascinating aromas (spicy
dishes). Exciting and amazingly fitting is its connection to exceptional recipes of Italian cuisine that are rich in fat and contain sauces.
Grape varieties: Pinot Nero/Chardonnay
Growing region: Medium-high hills in the Überetsch and Unterland regions
Altitude: 450-750 metres above sea level
Soil type: predominantly loose calcareous soils, with good clay content and normal occurrence of organic matter
Vine training system: pergola and espalier
Alcohol content: 12.50 % vol.
Serving temperature: 6-8°C

Product description: Rosé vinification of the Pinot Nero grapes, which make up the largest part of the cuvée, with short maceration of the skins followed by soft pressing,
also reserved for the Chardonnay grapes, which come from areas particularly suited to sparkling wines. Fermentation takes place separately for both grape varieties at a
controlled temperature of 15°-16°C. After blending to form the cuvée, the tirage liqueur is added to the base wine in spring, so that the second fermentation takes place in
the bottle at a cellar temperature of 11°-12°C, during which the wine is left on its lees for at least 22 months before being degorgéed and put on the market.
Organoleptic characteristics: With a pale pink colour and peachy reflections, fine and persistent perlage, it expresses fruity notes of raspberry and sweet spices, enveloped
by pleasant scents of yeast. On the palate, it unfolds elegantly and dynamically with the delicate freshness and fine creaminess that lingers on the aromas of small forest
fruits and herbs.Gastronomic recommendationsSeductive as an aperitif, a good companion for starters with fish, especially pink ones such as salmon, crab and prawn, it
gives its best to the whole menu with sophisticated seafood dishes. Interesting with oriental cuisine and spicy dishes in general.
Alto Adige - South Tyrol DOC
Grape variety: Chardonnay 60%, Pinot Nero 40%
Growing region: High slopes in the Überetsch and medium slopes in the Unterland
Altitude: 400 - 700 m. above sea level
Soil type: Skeleton-rich clayey limestone soils with a good proportion of organic matter
Ripening system: pergola and trellis
Plant density: 3,300 - 3,500 vines per hectare for pergola, 5,000 - 6,000 for espalier
Harvest date: First half of September
Alcohol content: 13.00 % vol.
Serving temperature: 6 - 8 °C

Product descriptionThe grapes of the two varieties come from medium and high slope vineyards, whose cultivation produces an average yield of 90 quintals per hectare.
After harvesting, they rest at night in a cold cell, are then gently pressed and the pre-fermentation must is carefully and selectively vinified. Part of the Chardonnay (about
20%) is fermented and aged in barriques, while the remaining Chardonnay and Pinot Nero ferment separately in stainless steel at a controlled temperature of 14-16°C and
then refine on their lees until the following spring. The blending of the respective wines (Chardonnay from the wood and Chardonnay and Pinot Nero from the stainless steel)
then takes place before the addition of the tirage liqueur, bottling and storage in the cellar at a temperature of 10-12°C for the second fermentation and an average yeast time
of at least 60 months. After disgorgement, the sparkling wine refines on the bottle for a further three months before being released for sale.Organoleptic characteristicsPale
straw yellow colour with golden reflections, imbued with a very fine and persistent perlage. The bouquet is wide and complex, with sensual notes ranging from candied citrus
and ripe fruit to engaging aromas of dried fruit and spices. The palate is at once supple and vibrant, with incisive acidity and an underlying mineral note. The carbonic acid
sets the rhythm of the dancing aromas that oscillate between the fragrance of fruits and the sensuality of pastries.Gastronomic recommendationsThe finesse-rich bouquet,
the dynamic perlage and the flavour complexity make it a sparkling wine that can accompany an entire menu and is particularly effective with flavour-intensive dishes, e.g.
with firm-fleshed fish (pork). For example, with firm-fleshed fish (tuna or heavy fish) and/or special preparation (fried, grilled, marinated) and/or seasoned with aromatic herbs.
Because of its spiciness, it must be tasted with spicy oriental or South American dishes with a clear spiciness.
Franciacorta Alma Cuvee...

Franciacorta Alma Cuvee...

This cuvée represents the essence of Franciacorta and the idea of harmony of the Metodo Franciacorta signed Bellavista. It is made mainly from chardon-nay grapes, then
pinot noir and a small proportion of pinot blanc. In the cellar, it is assembled by expert hands, starting with numerous selections from the harvest and some 'reserve' wines
from previous years, an indispensable treasure to perpetuate the house style over time. Another decisive factor is the fermentation and ageing of part of the base wines in
small white oak barrels, which bring intensity and complexity. The colour of the wine is straw yellow with green highlights, the perlage fine and continuous. Ample and
enveloping, the aromas range from ripe fruit to fresh flowers and notes of vanilla and pastries. In the mouth it is savoury and complete, fresh and vibrant, decidedly coherent
on an aromatic level. The finish is long and harmonious.
FRANCIACORTA DOCG GRANDE CUVÉE ALMA BRUT
Grapes Chardonnay 79%, Pinot Noir 20%, Pinot Blanc 1%.
Training system Guyot
Planting density 5000 vines/ha
Yield100 q.li/ha
Average age of vines 25 years
Harvest period End of August, beginning of September
Maturation 29% pièces, 71% inox
Sugar 5 g/l
Acidity 6.4
