Pomino Bianco Riserva DOC<br /><br />'On the road to Pomino I am thrilled every time I discover this unique corner of Tuscany: hills and cypresses suddenly give way to steep slopes, cooler temperatures in<br />summer and snow in winter, magnificent forests of firs and centuries-old sequoias surrounding the vineyards of Chardonnay, planted here since 1855. At an altitude of 700<br />metres, the Cru Benefizio, the first white wine in Italy fermented and aged in barriques, was born in 1973.'<br /><br />Climatic trend<br />The 2021 season will be remembered as a dynamic vintage. After a rainy and mild winter, which had led to a slight advance in budding, temperatures dropped sharply at the<br />beginning of April, slightly slowing the growth of the buds. From May onwards, temperatures began to rise again, leading to a summer that will be remembered for both the<br />beautiful day-night temperature range and the long period of intense heat. The grapes presented themselves at harvest in a perfect state of health, thanks to the mild<br />temperatures and low humidity.<br /><br />Vinification and ripening<br />The Benefizio vineyard is located at an altitude of 700 m above sea level, with a southern exposure and predominantly sandy soil. The Chardonnay grapes were harvested in<br />boxes by hand with extreme care and attention. Once they arrived in the cellar, the pressing they underwent was extremely soft and gentle, allowing a good extraction of<br />clear must, which was further clarified after cold decantation. The musts thus obtained were placed in barriques, 50% new and 50% first-passage, where they underwent<br />alcoholic fermentation and only partially malolactic fermentation. Subsequently, the wine matured in wood, on the lees, with bâtonnage carried out as required. After further<br />bottle ageing, Benefizio Riserva reached its maximum taste-olfactory expression in terms of elegance and harmony.<br /><br />Tasting notes<br />Elegance, expressiveness and body. Benefizio 2021 presents a wonderful straw yellow colour with golden highlights. The bouquet is varied, presenting hints of white fruit<br />such as pear, exotic fruit notes such as mango, banana and pineapple and more citrus notes of candied citron. The citrus sensation is also picked up by hints of orange<br />blossom. On the palate it is savoury and mineral, with an elegant and harmonious finish; the aromatic intensity perceived on the palate is amplified by the alcohol content<br />and the aftertaste of dried fruit. On the label the Latin phrase 'Sator Arepo Tenet Opera Rotas' means 'the farmer with the plough directs the work'. We chose it when we acquired the vineyard and<br />became its owners. It is a vineyard on the hill of Mango, a village in the Langa. We bought it in 1990. The letter G highlighted on the label underlines the transmission from<br />father to son of the knowledge of the vineyard: Giuseppe, Giacomo and Giuseppe again.<br /><br />Denomination: Moscato d'Asti DOCG.<br />Grapes and Vineyard: Produced with 100% Moscato d'Asti grapes from our own vineyard in Mango.<br />Winery: Maceration with the skins for a few hours in a horizontal press followed by pressing. White vinification with prise de mousse in temperature-controlled autoclaves for<br />20 days at about 4°. At the end of fermentation, stabilisation with refrigeration at - 4°, microfiltration and refinement in the bottle for a few weeks.<br />Tasting: Brilliant straw yellow colour, fine foam and rich perlage. Extraordinarily fresh and very varied bouquet, with fresh fruit, orange blossom, rose and musk among the<br />many notes. Sweet but very graceful taste, aromatic characteristic of grapes, delicious and with long persistence. Accompanies: fruit desserts, fruit, dry pastries, panettone,<br />hazelnut cake, special cheeses such as Castelmagno. Very pleasant as an aperitif and as a thirst-quenching drink at any time of day.<br />Serving recommendations: Serve at 6 - 8°.<br />

(Milena Vaira)<br />DESCRIPTION: Moscato is a beautifully aromatic variety that is deeply rooted in the winemaking heritage of Piemonte. We pick our grapes at full ripening, when the berries<br />start to be gold in color. Our dream is to bring all the perfumes, the freshness and the texture intact to the bottle.<br />VARIETY: 100% Moscato bianco.<br />VINEYARD AND TERROIR: Steep, old estate vineyards.<br />HARVEST AND WINEMAKING: Moscato harvest starts usually around the end of August. Picking decisions are individual to each site. Aldo always gives few more days of<br />ripening to this variety, which is a challenging decision in a crucial period yet rewarded by the beautiful fruits. Cold settling followed by a slow fermentation at low<br />temperature. Fermentation is stopped by drop of temperature, and the wine is kept refrigerated until bottling.<br />TASTING NOTES: Beautiful soft color with green reflections. Aromas of fruit with yellow flesh: apricot, peach, exotic fruits. Then elderflower, pear and a hint of sage.<br />Delicate and persistent bubbles, refreshing and cleansing the palate. The balance between sweetness and freshness continues in a long and creamy finish,<br />surprisingly savory.<br />

<br />Pratto<br /><br />Pratto represents a challenge that we wanted to take up, going beyond conventional schemes while maintaining unaltered respect for the territory. In this late harvest, the<br />aromaticity of Sauvignon vinified in stainless steel, the softness of Chardonnay and the finesse of Turbiana meet harmoniously with an exclusive result. The nose shows<br />notes of tropical fruit accompanied by a vegetality and minerality that enhance the finesse and elegance with a very communicative impact that induces salivation stimulating<br />the taste. On the palate it is rich with an exquisitely sweet attack followed by perfectly balanced acidity and flavour, and finally the fruity and mineral notes return. Chardonnay 'Cardellino' 2021 - South Tyrol DOC<br /><br />The Chardonnay 'Cardellino' was Elena Walch's first wine and is still probably the winery's most popular wine. According to an old tale, the goldfinch - the 'Cardellino' - only<br />builds its nest in Chardonnay vines, while it does not nest in other grape varieties. Elena Walch has thus dedicated her debut, an elegant Chardonnay full of character, to<br />this faithful little bird, which has won many lovers with its minerality, freshness, coupled with suppleness and excellent structure. The Chardonnay 'Cardellino' has long<br />since become a South Tyrolean classic and continues to be the most popular wine at the Walch family's table. A wine to which one remains loyal, just as the Cardellino<br />remains loyal to its Chardonnay.<br /><br />The Chardonnay 'Cardellino' convinces with a strong, straw-yellow colour, with a complex interplay of fruity aromas, citrus and orange peel, some lime blossom, mineral<br />richness and a spicy hint of tobacco. On the palate, this classic from Elena Walch surprises with exciting freshness and mineral race, with elegance and juicy length:<br />inviting, refreshing and easy to drink.<br /><br />OUTCOME OF THE YEAR 2021: we are delighted with a vintage of outstanding quality, especially for our white wines! A dry and cool spring led to a late flowering of the<br />vines, followed by a warm and dry June. After a volatile midsummer, there was a surprising change in the weather in mid-August, which brought dream weather until the end<br />of September and created the very best conditions for optimal ripening of the grapes. The harvest began in mid-September, about 10 days later than last year. Blue skies<br />and lots of sunshine as well as midsummer daytime temperatures and autumnally cool nights enabled the grapes to reach ideal sugar levels while retaining very good<br />acidity. Accordingly, the wines of the 2021 vintage show a markedly high quality.<br /><br />VINIFICATION: gentle pressing, static clarification, fermentation at a controlled temperature of about 20°C, long contact with the yeast after fermentation. Part of the must<br />(about 15%) is fermented in French oak barrels where it matures for six months. Cloudy Bay Chardonnay<br />comes from vineyards located in the sub-regions of Omaka, Brancott, Rapaura and Renwick and requires the same time and precision as a great Burgundy white: around 2<br />years of oak ageing.<br />TASTING NOTES<br />Immediately seductive and perfumed, with aromas of white peach, apricot, flowering trees and warm hay. The palate is concentrated and inviting: hints of apple and pear<br />balanced by vanilla, hazelnut and a delicate saline note. The finish is long and fascinating, refreshed by a hint of citrusy acidity.<br />

South Tyrolean Pinot Blanc<br />Schulthauser 2020<br /><br />Pinot Blanc, South Tyrol's most important grape variety, has awoken from its slumber and has become the region's flagship wine. Schulthauser is the classic among South<br />Tyrolean Pinot Blancs; it was first vinified and bottled in 1982. It is not a loud drop, but a consummate, finely fruity-fresh Pinot Blanc, which at the same time seduces with<br />creamy softness and racy acidity to enjoy.<br /><br />Grape variety: Pinot Blanc<br />Vine age: 10 to 40 years<br />Growing region: Site: Vineyards in 'Schulthaus' above Schloss Moos in Eppan/<br />Berg (540-620m)<br />Exposure: Southeast<br />Soils: Calcareous gravel soils with loam<br />Method of cultivation: Guyot<br />Harvest: Mid to late September, harvest and grape selection by hand.<br />Vinification: The majority (85%) is fermented in steel tanks, the rest in wooden barrels followed by<br />followed by biological acid reduction.
