Grape varieties: Chardonnay 96%, Viognier 4%<br />Site and soil: Half of the grapes come from TerlanLiebenAich and half from Kaltern Mazzon. LiebenAich is a warm, west-facing slope at 300 m above sea level. Chardonnay<br />and Sauvignon are grown here on loamy sandy soil interspersed with porphyry weathered rock.Chardonnay and Viognier on Mazzon form our steepest vineyard, the so-<br />called Leiten with up to 100% slope. Exposed to the south-west at an altitude of 350 -400 m above sea level, with calcareous, loamy loess soil, this steep slope offers a very<br />special micro-climate.<br /><br />Vinification: The destemmed grapes remained in the press for four hours to extract the aroma and structure from the skins. The pressing process was very slow and gentle,<br />because finesse is our highest maxim. Fermentation took place in wooden barrels of various sizes, spontaneously with the grape's own yeasts. During the nine months of<br />ageing on the fine lees, the aroma and flavour refined.<br />Bottling: 19,200bottles were filled in June 2020.<br />Data:<br />Residual sugar: 1.1g/l<br />Alcohol: 13,5% Vol.<br />Acidity: malolactic fermentation 6,7g/l<br /><br />Description and drinking suggestions: Bright yellow in the glass. The aroma is fruity of apricots, oranges, acacia and lime blossom on the nose, mineral of wet stone in the<br />depth. Dense and powerful on the palate, yet delicate with a long-lasting minerality. Optimal drinking maturity from autumn 2020 until the end of 2027.<br />Serving temperature: 8 -10°C, for optimal drinking pleasure decant this complex white wine and serve in Burgundy glasses.<br />Goes well with shellfish, poultry and strong fish dishes. It also goes particularly well with aromatic cheese.<br />

Réserve della Contessa - the feminine wine.<br /><br />Its secret is fineness and elegance, one almost wants to say noblesse. A white wine of delicate colour and delicate aromas, as if made to accompany festive hours.<br /><br />Grape varieties: Pinot Blanc 60 %, Chardonnay 30 %, Sauvignon Blanc 10 % (Terlaner).<br />Colour: strong yellow with greenish reflections.<br />Aroma and taste: fresh scent of apples, apricots and a hint of sage. Dense and elegant, with a lot of melting, long lasting.<br />Site and soil: Two thirds of the grapes come from Lieben Aich in Terlan and one third from Campan in Kaltern. In Terlan Lieben Aich we have a warm west-facing slope at<br />300 m above sea level, with water-permeable, sandy loam soil on porphyry weathered rock. Kaltern Campan is a cool, east-facing slope at 500 m above sea level. The soil is<br />a strong loamy limestone soil with rock deposits from ice-age glaciers.<br />Vinification: The destemmed grapes remained in the press for six hours for maceration to extract aroma and structure from the skins. Fermentation took place in wooden<br />barrels, partly spontaneously, with the grape's own yeasts. During the six months of ageing on the fine lees, the aroma and flavour were refined.<br />Serving temperature: 10 - 12 °C.<br />Goes well with: starters, fish and white meat.<br />

Sweetness of selected elegance and unexpected freshness<br />fulfil the promise.<br /><br />Grape variety: Petit Manseng.<br />Colour: sparkling golden straw yellow.<br />Aroma and taste: fruity aromas of mango, lychee, dried apricots; complex depth due to fine honey and botrytis notes, balanced play between sweetness and acidity on the<br />palate.<br />Site and soil: Mazzon in Kaltern at 400 m above sea level, a high plateau sloping towards the south, sunny and airy, ideal for the late harvest. The soil is sandy loam and<br />interspersed with various stones: Dolomite, porphyry, gneiss and granite can be found from small grains to fist-sized stones.<br />Maturation: The slow pressing of the sultana berries took eight hours, fermentation took place in wooden barrels, spontaneously with the grape's own yeasts. The must<br />fermented slowly for several months; at 11% alcohol, the fermentation stopped all by itself. An optimal balance between alcohol, acidity and sugar are the natural result.<br />Serving temperature: 8-10 °C.<br />Pairing: Delicate desserts and very good with final cheese.<br />

For us, Rosso di<br />Montalcino is a wine of primary importance. For its production we use grapes from dedicated vineyards that receive the same attention and care that we give to those<br />destined for the production of Brunello. The uniqueness of the terroir is reflected in that of the wine, which expresses all the passion for the land and the vineyard and the<br />meticulous work that is the result of a long multi-generational experience. The strong recognisability of this wine is also due to our mass selection of Sangiovese.<br /><br />DENOMINATION: Rosso di Montalcino DOC<br />GRAPEVINE: 100% Sangiovese<br />HARVEST: annual in the first week of September.<br />VINIFICATION: Manual selection of the bunches before destemming and selection of the grapes with an optical selector. This is followed by spontaneous fermentation<br />without the use of added yeasts and maceration assisted by frequent punching down. HAIKU 2016<br />Tuscany I.G.T.<br />Haiku was born in 2009 and is the result of a blend of three varieties: 50% is Sangiovese, while the remainder is equally divided between Cabernet Franc and Merlot. During<br />the planting of the second part of the Montebuoni vineyard, completed in 2001, it was decided to experiment with a noble international variety, Cabernet Franc, which until<br />then had not been used at Ama. However, after a careful analysis of the soil and climate, it was assumed that Cabernet Franc would give good results. In 2001, two small<br />plots were planted, numbered 84 and 85 in the company's land register, of 1.47 ha and 0.47 ha respectively, for a total surface area of 2 hectares with clone 214,<br />appreciated in the Bordeaux area for its ability to produce 'vins-de-garde' on rootstock 110R.<br /><br />CLIMATE: The winter was mild and rainy. In April we had a rapid rise in temperature, while May and June were unstable. Finally, summer arrived in July, with a wide range of<br />temperatures between day and night, which favoured the development of aromas and flavours. Despite the hailstorm at the end of August, the grapes were healthy. After<br />numerous samplings and organoleptic analyses in the vineyard and in the laboratory, the grapes were picked by hand, in 10/12 kg crates, on 14 September for the Merlot,<br />28 September for the Cabernet Franc and 29 September for the Sangiovese.<br /><br />VINIFICATION: vinification was induced by indigenous yeasts and separated by variety in steel vats at a controlled temperature between 30/32°C, with manual pumping over<br />and a total stay of 26 days for the Merlot, 23 days for the Cabernet Franc and 23 days for the Sangiovese. After racking, the wine underwent malolactic fermentation in steel<br />tanks.<br /><br />AGING: at the end of malolactic fermentation, the three varieties were blended. AMA 2016<br />Chianti Classico DOCG<br /><br />With the 2010 vintage and the birth of the Gran Selezione in Chianti Classico, AMA was born almost entirely from Sangiovese grapes.This wine is produced from vines<br />cultivated at a high density (5,200 plants/ha), with grapes harvested entirely by hand in young vines of an average age of 10-12 years.<br /><br />CLIMATE: The winter was mild and rainy. In April we had a rapid rise in temperature, while May and June were unstable. Finally, in July, summer arrived, characterised by<br />large temperature differences between day and night, which favoured the development of aromas and flavours. Despite the hailstorm at the end of August, the grapes were<br />healthy. After numerous samplings and organoleptic analyses in the vineyard and in the laboratory, the grapes were harvested by hand in 10-12 kg crates on 26 September<br />for the Merlot and on 3-4 October for the Sangiovese. The harvest was full of expectations, which were not betrayed.<br /><br />VINIFICATION: The vinification was induced by indigenous yeasts and separated by variety in steel tanks at a controlled temperature between 30/32°, with manual pumping<br />over and a total stay (cuvaison) of 26 days for the Sangiovese and 26 days for the Merlot. After racking, the wine underwent malolactic fermentation in steel tanks.<br /><br />AGING: At the end of malolactic fermentation, the two varieties were blended. Exilissi Sell 2007<br /><br />Vintage: After an exceptionally mild winter, the vines sprouted earlier than ever before. April and May were also warmer than average, so that by mid-May the flowering was<br />already over in all locations. This 3-week advance in vegetation lasted until harvest. The cool August and a golden September proved it once again: The last weeks before the<br />harvest are decisive for the quality.<br />Whites and reds were able to ripen perfectly and were harvested at the optimal time. That is why the harvest took longer than ever before. The first grapes entered the cellar<br />on 21 August, the last on 24 October. All in all, it should be a very good vintage. The red wines promise to be the best of the last ten years.<br /><br />Vinification: gentle pressing of the delicate grapes. Fermentation of the unclarified must in 500 l tonnequx, further 15 months of maturation in the same barrel. Bottled in<br />March 2009<br /><br />Harvest conditions: a sunny and warm late autumn allowed the grapes to hang until mid-November, thus enabling the harvest of a very ripe grape.<br /><br />Site/soil: Höfl unterm Stein in Söll near Tramin, situated on a south-eastern slope at 480 to 550 metres above sea level. On gravelly, loamy calcareous gravel soil, there are<br />both 30-year-old pergola plants and wire frames that are over 10 years old, which produce something unique with an extremely low yield of 25hl/ha.<br /><br />Oenologist's notes: an enormously concentrated late harvest with intense aromas of sultanas, apricots and spices. Very smooth and long on the palate.
