Gewürztraminer<br />Sanct Valentin<br />It is the favourite of the Italians and the autochthonous white grape variety in South Tyrol. The beguiling Gewürztraminer is one of the most exciting growths in the wine<br />world. Characteristic of Gewürztraminer Sanct Valentin is its intense and complex bouquet with aromas reminiscent of oriental spices, delicate rose scents and exotic fruits.<br />The Gewürztraminer was first vinified in 1986 as the top growth of the Sanct Valentin line. It is characterised by longevity and promises wonderful drinking pleasure even<br />after many years.<br /><br />Grape variety: Gewürztraminer<br />Vine age: 5 to 35 years<br />Growing region:<br />Site: Selected sites in Eppan and Kaltern (300-500m).<br />Exposure: Southeast<br />Soils: loamy limestone gravel soils<br />Method of cultivation: Guyot<br />Harvest: Mid-September; harvest and grape selection by hand.<br />Vinification: Maceration of the grapes followed by gentle pressing. Chardonnay<br />Sanct Valentin 2021<br />This popular grape variety is at home all over the world. In the best individual vineyards of the municipality of Eppan, however, the grapes develop so excellently that they<br />produce a high-quality, powerful yet elegant top wine. Since 1986, the Chardonnay has been part of the Sanct Valentin line and is one of the most important wines of the<br />house. Excellent balance, well-integrated acidity and excellent storage potential.<br /><br />Grape variety: Chardonnay<br />Vine age: 10 to 32 years<br />Growing region:<br />Site: selection of the best single vineyard sites in the municipality of Eppan (450-550m).<br />Exposure: south-east, south-west<br />Soils: sandy calcareous gravel soils (or calcareous gravel soils)<br />Method of cultivation: Guyot<br />Harvest: Late September to early October, hand harvest and grape selection.<br />Vinification: Fermentation, malolactic fermentation and ageing on the lees in barrique tonneaux. Assemblage after almost a year and further maturation for at least eight<br />months in concrete barrels.<br />Yield: 45 hl/ha<br />Analytical data:<br />Alcohol content: 14 %<br />Acidity: 5,55 gr/lt<br />Drinking temperature: 10-12°.<br /><br />Recommended consumption:<br />Likes to accompany strong dishes such as 'fritto misto' (fried seafood), porcini ravioli with cream sauce or risotto with grey cheese and chilli. South Tyrolean Pinot Blanc<br />Schulthauser<br /><br />Pinot Blanc, South Tyrol's most important grape variety, has awoken from its slumber and has become the region's flagship wine. Schulthauser is the classic among South<br />Tyrolean Pinot Blancs; it was first vinified and bottled in 1982. It is not a loud drop, but a consummate, finely fruity-fresh Pinot Blanc, which at the same time seduces with<br />creamy softness and racy acidity to enjoy.<br /><br />Grape variety: Pinot Blanc<br />Vine age: 10 to 40 years<br />Growing region: Site: Vineyards in 'Schulthaus' above Schloss Moos in Eppan/<br />Berg (540-620m)<br />Exposure: Southeast<br />Soils: Calcareous gravel soils with loam<br />Method of cultivation: Guyot<br />Harvest: Mid to late September, harvest and grape selection by hand.<br />Vinification: The majority (85%) is fermented in steel tanks, the rest in wooden barrels followed by<br />followed by biological acid reduction. Ripassa Valpolicella Ripasso DOC Superiore<br /><br /><br />Immediately after the fermentation of the Amarone raisins, the best selection of Valpolicella 'ripassa' on the Amarone marc, starting the second short fermentation; in this<br />way the alcohol content increases and a product richer in colour, extracts and aromas is obtained.<br /><br />After ageing in French oak tonneaux for 18/20 months, it is then left to rest in the bottle for 6 months.<br /><br />The result of this process is a refined and concentrated wine, extremely soft and velvety, with intense aromas of small red fruits.<br /><br />Ripassa offers fruity scents and fine tannins on the palate, with an aura of chocolate and spices. It represents one of the most significant wines in Zenato's oenological<br />evolution.<br /><br />Grape varieties: 85% Corvina Veronese, 10% Rondinella, 5% Corvinone.<br />Geographical location and characteristics of the vineyard: hilly area of Valpolicella, south-eastern and south-western exposure.<br />Average altitude of the land: 250-300 metres above sea level.<br />Soil type: predominantly cretaceous, calcareous<br />Training system and planting density: guyot, with about 5,000 vines per hectare.<br />Average age of vines: 10/15 years old<br />Number of buds: 8/10 per plant<br />Yield per hectare: 100 quintals<br />Harvest time and method: first and second ten days of October. Manual harvesting.<br />Vinification: The grapes are destemmed and macerated in stainless steel fermenters for 10-12 days. After alcoholic fermentation, the new wine is separated from the skins<br />by means of a soft press and stored in steel tanks until January, when the dried grapes are pressed to produce Amarone. At this point, the Valpolicella is 'repassed' on the<br />Amarone marc with a 7-8 day period at a temperature of 25-28°C. This is followed by 18 months of refinement in tonneaux and a few months of bottle ageing in<br />temperature-controlled environments.<br />Colour: deep ruby red.<br />Bouquet: intense, fine and persistent, with hints of black cherry and plum.<br />Taste: harmonious and velvety, with good structure.<br />Serving temperature: 18°C<br />Food pairings: an excellent companion to game dishes, grilled meats and roasts, cured meats and mature cheeses.<br />
