At Castellare, Chianti Classico is produced using only two indigenous grape varieties: Sangioveto, the prince of Tuscan vines, which makes up 90% of the blend, and the<br />remaining 10% of Canaiolo, another typical variety of the area. The true Chianti Classico, therefore, without the addition of international grape varieties such as Cabernet<br />or Merlot, in order to maintain the authentic formula of the most famous of Italian wines while at the same time seeking maximum elegance.<br /><br />Tasting notes: the colour of this Chianti Classico is the ruby red of Sangioveto. The nose is fragrant, fresh with pleasant hints of red fruit, liquorice, currants and a light<br />touch of vanilla. The typical notes of Chianti Sangiovese dominate. On the palate it expresses a pleasant sweetness, is round, soft and savoury. Acidity and persistence<br />characterise a very elegant aftertaste.<br /><br />Pairings: A very versatile wine that also goes well with structured and important dishes. St. Daniel<br />Pinot Noir Riserva<br /><br />Description: medium deep, garnet red colour, distinct, varietal aroma of cherries, red berries and spices, soft balanced medium body with fine finish.<br />Ageing potential: 6 - 8 years.<br />Recommended food: light hors d'oeuvres, veal or poultry<br />as well as strong fish dishes.<br />Serving temperature: 16° C.<br />Grape variety: Pinot noir. 15-20 year old trellis plant.<br />Sites: Vineyards in Girlan, Eppan and Montan (approx. 350 m above sea level) Soils of volcanic origin with moraine overlay. Cool microclimate with large temperature<br />differences between day and night.<br />Vinification: short cold maceration of the must. Then fermentation at about 25° C for 14 days. Biological acidification and ageing of the wine in large wooden barrels (35 hl)<br />for 2/3 and in barriques for 1/3, each for 12 months. SOUTH TIROL DOC<br />LAGREIN RISERVA<br />VINEYARD KLOSTERANGER<br /><br />Our historic single vineyard: expressive, concentrated and straightforward.<br />IN THE VINEYARD<br />This Lagrein thrives at an altitude of 280 m in the middle of Gries. The historic vineyard is part of the monastery complex, where the vines stand on pure alluvial material<br />from the Talfer and a subsoil of Bolzano quartz porphyry. IN THE CELLAR<br />After fermentation and acid reduction in stainless steel, the wine is aged in new barrique barrels for 22 months, followed by harmonisation in enamelled steel tanks and<br />careful bottling after light filtration.<br />TASTING NOTES<br />The Klosteranger appears in deep garnet red and seduces with a bouquet of concentrated aromas. It is surprisingly lively and fruity on the nose with notes of coffee and<br />black berries as well as a hint of raspberries. On the palate, it convinces with grippy tannins, fresh acidity, delicate as well as elegant fullness and depth. Our single-<br />vineyard Lagrein is wonderfully complex, long-lasting and pampers the palate with a multi-layered structure. MECZAN PINOT NOIR<br /><br />The Meczan is a very varietal Pinot Noir, which is characterised above all by its softness, its distinctive fragrance and its clear fruity character.<br />It has a vivid ruby red colour with slight garnet reflections. Pinot Nero Ludwig 2021<br />Alto Adige DOC<br />The long history of the Pinot Nero in Alto Adige has accompanied the development of the wine region.<br />Elena Walch's Pinot Nero 'Ludwig' was created with the 2001 vintage, from grapes of old vines, some of<br />which were even planted as Pergola. The small production of 10,000 bottles indicates the strict selection of<br />the plots to produce a classic, complex Pinot Nero of the highest quality. The many national and<br />international awards for Pinot Nero 'Ludwig', including the highest award of the 12th and 19th Italian Pinot<br />Nero Competition in 2013 and 2020, confirm the winemaker's great commitment to this noble grape variety.<br />The Pinot Noir Ludwig presents itself with a full ruby red color and with elegant concentration and<br />complexity. Fresh fruit notes of heart cherries and redcurrants as well as the spicy hint of pepper and elegant<br />roasted notes characterize the bouquet. On the palate, the wine unfolds its full power and elegance with gripping<br />tannins, a filigree structure and harmonious interplay between subtle spice and elegant freshness - with inviting<br />length and great aging potential<br />VINTAGE 2021<br />We are excited about a qualitatively excellent vintage, especially for our white wines! A dry and<br />cool spring led to a late flowering of the vines and was followed by a warm and dry June. After<br />an irregular midsummer, a surprising change in the weather followed in mid-August, which<br />brought dream weather until the end of September and the very best conditions for achieving<br />an optimal maturity of the grapes. The harvest began in mid-September, about 10 days later<br />than last year. With blue skies and lots of sunshine, midsummer daytime temperatures and<br />autumnally cool nights, the grapes were able to achieve ideal sugar levels while maintaining very<br />good acidity. Accordingly, the 2021 wines show great quality!<br />VINIFICATION<br />Traditional fermentation, partially in large Slovenia<br />oak vats, partially in stainless steel tanks. Malolactic<br />fermentation follows and, the final wine matures in<br />French oak barrels for another 12 months. Since<br />2015, a state-of-the-art fermentation cellar has<br />allowed the grapes to be processed with the utmost<br />care, with whole-grape processing using via gravity<br />fed technology. A highly sensitive destemmer and the<br />gentle transport of the grapes by means of a<br />specialized container, cuvon, which runs on rails, prove to be very gentle on the grapes and<br />preserve their high quality.
