South Tyrolean Pinot Blanc<br />Schulthauser<br /><br />Pinot Blanc, South Tyrol's most important grape variety, has awoken from its slumber and has become the region's flagship wine. Schulthauser is the classic among South<br />Tyrolean Pinot Blancs; it was first vinified and bottled in 1982. It is not a loud drop, but a consummate, finely fruity-fresh Pinot Blanc, which at the same time seduces with<br />creamy softness and racy acidity to enjoy.<br /><br />Grape variety: Pinot Blanc<br />Vine age: 10 to 40 years<br />Growing region: Site: Vineyards in 'Schulthaus' above Schloss Moos in Eppan/<br />Berg (540-620m)<br />Exposure: Southeast<br />Soils: Calcareous gravel soils with loam<br />Method of cultivation: Guyot<br />Harvest: Mid to late September, harvest and grape selection by hand.<br />Vinification: The majority (85%) is fermented in steel tanks, the rest in wooden barrels followed by<br />followed by biological acid reduction. A rarity in the Alpine region are sites with a microclimate in which even red late varieties reach the stage of full ripeness. Loam Cabernet-Merlot owes its exceptional<br />character to the weather-protected location and the special nature and heat storage capacity of the soils of its vineyards.<br /><br />Vintage description: the winter ended with abundant snow in the mountains. Warmer temperatures in March and April caused an early and rather uneven budding in the<br />well-supplied soils. A cool May then delayed the flowering. In humid and hot June, a high fungal disease pressure developed, which could be contained through sensitivity<br />and a lot of careful manual work. The rest of the summer was largely dry and was only interrupted by short, heavy thunderstorms. Two hot spells had practically no negative<br />effects. A significant drop in the lowest temperatures began in mid-August. High temperature differences between day and night characterised the weather throughout the<br />harvest. The harvest took place about 14 days later than in the previous year. The white wines of the 2019 vintage show an impressive freshness, Gewürztraminer are<br />characterised by particular elegance. <br />VINIFICATION<br />Must fermentation for approximately 10 days, followed by malolactic fermentation in stainless steel tanks. Maturation for 20 months in French oak barriques. The wine is<br />then being bottle aged for several months before being released. Since 2015, a state-of-the-art fermentation cellar has allowed the grapes to be processed with the utmost<br />care, with whole-grape processing using via gravity fed technology. A highly sensitive destemmer and the gentle transport of the grapes by means of a specialized<br />container, cuvon, which runs on rails, prove to be very gentle on the grapes and preserve their high quality. The state-of-the-art building is certainly unique in Alto Adige,<br />and is probably one of the most modern fermentation cellars in Italy to produce great red wines of excellence<br /><br />Variety: 100% Lagrein<br />

The vines are between 60 and 90 years old. Old vines naturally produce low and therefore very<br />high quality yields. Traditionally, the SONNTALER is a blend of different Vernatsch varieties with a high percentage of Grauvernatsch. The ideal terroir and the traditional<br />ageing in large Slavonian wooden barrels give a wine with a complex aroma of raspberries, wild strawberries, cherries and red currants. The elegant, slender body is<br />gripping on the palate. Fine-grained tannins give the smooth, varietal fruitiness a long and hearty finish. SONNTALER: the classic.<br /><br />Vernatsch is considered the lightest red wine variety in the world, which is why the drinking temperature is particularly important: we recommend 13°C!<br />

At Castellare, Chianti Classico is produced using only two indigenous grape varieties: Sangioveto, the prince of Tuscan vines, which makes up 90% of the blend, and the<br />remaining 10% of Canaiolo, another typical variety of the area. The true Chianti Classico, therefore, without the addition of international grape varieties such as Cabernet<br />or Merlot, in order to maintain the authentic formula of the most famous of Italian wines while at the same time seeking maximum elegance.<br /><br />Tasting notes: the colour of this Chianti Classico is the ruby red of Sangioveto. The nose is fragrant, fresh with pleasant hints of red fruit, liquorice, currants and a light<br />touch of vanilla. The typical notes of Chianti Sangiovese dominate. On the palate it expresses a pleasant sweetness, is round, soft and savoury. Acidity and persistence<br />characterise a very elegant aftertaste.<br /><br />Pairings: A very versatile wine that also goes well with structured and important dishes.
