The head of character.<br />The perfect symbiosis of tradition and modernity.<br /><br />IN THE VINEYARD<br />The grapes of our classic Lagrein ripen in the vineyards in the sun-drenched basin of Bolzano at an altitude of 260 m, deeply rooted in sandy alluvial soils with a southern<br />exposure.<br />IN THE CELLAR After temperature-controlled fermentation in stainless steel at 28°C for 8 days, the wine is then matured in large wooden barrels of 30 - 50 hl.<br /><br />Colour: strong purple red<br />Aroma: invitingly open and complex with notes of violets, chocolate, ripe plums and spices<br />Taste: elegant with a velvety structure, densely woven tannins and light bitter almond tones.<br />Alcohol: 13.50 % vol.<br />Acidity: 4.80 g/l<br />Residual sugar: 2.40 g/l<br /><br />TASTING NOTES<br />This Lagrein has a strong purple colour. Per la produzione del Cabernet-Merlot Sanct Valentin vengono utilizzate solo uve<br />provenienti da vigneti particolarmente soleggiati. La resa è estremamente bassa e i vitigni vengono vinificati singolarmente. Il Cabernet-Merlot Sanct Valentin, prodotto per<br />la prima volta nel 2013, è un vino rosso di prima classe, estremamente complesso e con tannini fini. It is the winery's most important red wine. This grape variety is a<br />very special challenge for the winemaker, as it is very demanding in terms of soil and climate, and must also be processed with special care in the cellar. For the Pinot Noir<br />Sanct Valentin, which has been part of the prestige line since 1995, only grapes from the best vineyards and oldest vines are used. South Tyrolean Pinot Blanc<br />Schulthauser<br /><br />Pinot Blanc, South Tyrol's most important grape variety, has awoken from its slumber and has become the region's flagship wine. Schulthauser is the classic among South<br />Tyrolean Pinot Blancs; it was first vinified and bottled in 1982. It is not a loud drop, but a consummate, finely fruity-fresh Pinot Blanc, which at the same time seduces with<br />creamy softness and racy acidity to enjoy.<br /><br />Grape variety: Pinot Blanc<br />Vine age: 10 to 40 years<br />Growing region: Site: Vineyards in 'Schulthaus' above Schloss Moos in Eppan/<br />Berg (540-620m)<br />Exposure: Southeast<br />Soils: Calcareous gravel soils with loam<br />Method of cultivation: Guyot<br />Harvest: Mid to late September, harvest and grape selection by hand.<br />Vinification: The majority (85%) is fermented in steel tanks, the rest in wooden barrels followed by<br />followed by biological acid reduction.
