Hebo<br />Cabernet sauvignon 50%, merlot 40%, sangiovese 10%.<br />The name of an Etruscan settlement of ancient origin, Hebo recalls the historical roots of Suvereto.<br /><br />It is produced from a classic blend of Cabernet Sauvignon, Merlot and Sangiovese, vines introduced to the area by Elisa Bonaparte Baciocchi, princess of Piombino from<br />1805 and enlightened woman of wine.<br /><br />The ruby colour is bright, the aromas reveal fresh scents of sour cherries, violets and blueberries, before turning to seductive mineral hints and nuances of Mediterranean<br />scrub.<br /><br />On the palate, the wine is structured but fresh, savoury and with good momentum. The finish is pleasantly fruity, delicate in its savoury character and with gentle tannins.<br /><br />Production methodSun, wind and three complementary soils<br />The production method is rigorously aimed at defending the territorial connotation.<br /><br />The grapes are harvested in boxes, fermentation is carried out with indigenous yeasts and vinification takes place in steel tanks. The wine is aged for about a year in<br />Slavonian oak barrels and a small percentage of used barriques. It is produced with grapes grown in the classic Valpolicella area, in the municipality of Sant'Ambrogio, a<br />land full of significance, traditions and food and wine culture.<br /><br />Grape varieties: 80% Corvina Veronese, 10% Rondinella, 10% Oseleta and Croatina<br />Geographical location and vineyard characteristics Sant'Ambrogio di Valpolicella, hilly area, with exposure to South-East and South-West.<br />Average altitude of the land: 300-350 metres a.s.l.<br />Soil type: predominantly cretaceous, calcareous, rich<br />of skeleton<br />Training system and planting density: guyot, with about 5,000 vines per hectare.<br />Average age of vines: 15/20 years<br />Harvest time and conduction: depending on the vintage, between the second half of September and the first half of October. The Sangiovese<br />Vin del Fattore is a modern take on the Governo technique used in Tuscany by drying part of the grapes in crates at a controlled temperature.<br /><br />Grapes: Sangiovese 95%, Ciliegiolo 5%.<br />Training system: spurred cordon<br />Planting density: 4000 vines/hectare<br />Soil type: sandy loam<br />Altitude: between 60 and 90 metres a.s.l.<br />Age of vineyards: 5-10 years<br />Harvest time: mid-September for Ciliegiolo, early October for Sangiovese<br />Method of fermentation: The Sangiovese grapes are harvested by hand into small perforated crates and dried in cold rooms until they lose 15% of their weight. Vinification of<br />the Sangiovese grapes at low temperature (max. 27°C) with maceration on the skins for 4-6 days, racking and end of fermentation without further contact with the skins.<br />After about 4 weeks of drying, the Ciliegiolo grapes are pressed and, once full fermentation is reached, the previously vinified Sangiovese is added. Fermentation proceeds<br />until the sugars are almost completely depleted; malolactic fermentation starts naturally at the end of primary fermentation.<br />Maturation: in steel for three months on the fine lees.<br />Bottling: in the month of May following the harvest.<br />Ageing potential: to be drunk young, within 2-4 years after harvesting.<br />Description: Sangiovese Toscano IGT Vin del Fattore is an elegant ruby red wine, with pleasant notes of red fruits (plums, blackberries and cherries) and hints of spices.<br />Medium structured and dry, round on the palate with an elegant fruity finish and round tannins.<br />Food pairing: Perfect with cured meat starters, first courses with meat sauces and main courses.<br />Serving temperature: 16°C<br />Ideal glass: a large Bordeaux-type goblet.<br />
