In this way, we obtain a strict<br />respect for the territorial typicality and the pedoclimatic variety. Alcoholic fermentation takes place at controlled temperature in steel vats at 27° with constant punching<br />down for about 10 days, followed by post-fermentation maceration on the skins for another 10 days.
