Malolactic fermentation in vitrified cement tanks.<br />Pairings: First and second courses, both traditional and traditional Sardinian, meat and vegetable dishes, well seasoned and medium and long aged cheeses.<br />

THE PINE OF BISERNO<br />2020<br />TUSCAN IGT RED<br />It is the purest and most direct expression of Bibbona's unique terroir. The special flavour of the grape makes Pino di Biserno a classic with an intriguing aroma,<br />distinguished by its excellent balance and timeless elegance. It shares an identity with its alter-ego, the Biserno.<br />INDICATIVE PERCENTAGE: Cabernet Franc 23%, Merlot 38%, Cabernet Sauvignon 22%, Petit Verdot 17%.<br />SOIL TYPE: Partly clayey, partly Bolgheri conglomerate.<br />GROWTH: The planting system is spurred cordon with a density of 6,500 vines/ha.<br />CLIMATE CONDITIONS: a moderate vintage with more consistent rainfall in the spring months that made temperatures a little cooler than average. Then the heat arrived in<br />early June bringing with it flowering, albeit with a slight delay. The summer recorded average temperatures with a good temperature difference between day and night. It can<br />be considered a good year.<br />HARVEST: Harvest began in the second week of September with the Merlot harvest, then continued with the Cabernet Franc and ended with the Cabernet Sauvignon and<br />Petit Verdot harvest in the first week of October.<br />VINIFICATION: The grapes were carefully selected on the vibrating belt in the cellar. Destemming and soft crushing; alcoholic fermentation in truncated conical steel tanks<br />for 3-4 weeks at 28°, malolactic fermentation in barriques for 25% of the mass, the remainder in steel.<br />AGING: The wine matures partly for 12 months in new and second-passage French oak barriques, the remaining 10% of the volume remains in steel.<br />TASTING NOTES: Ruby red in colour with purple reflections, on the nose it releases a complexity of aromas ranging from ripe red fruits to Mediterranean scrub and delicate<br />notes of tobacco and spices. On the palate it is soft, silky and tasty, calibrated in its dense and elegant tannic texture, long in the finish.<br />ALCOHOL: 14.5%<br />TOTAL ACIDITY: 5.0 G/L<br />PH: 3.67<br />

The signature of Apanage is also a higher proportion of Chardonnay to give the wine a feeling of smoothness and elegance,<br />essential in the world of gastronomy.<br /><br />A superb pale yellow colour with very light golden highlights.<br />The fine buttery, almost pastry-like aromas are quickly joined by a bouquet of wild flowers and notes of candied citron and blood orange.<br />A frank attack, creamy notes in the mouth associated with notes of dried apricot and citrus fruit.<br /><br />Serving temperature: 8-10°C<br />Alcohol content: 12.5%.<br />Contains sulphites<br />

<br />Appius 2017<br /><br />Through an extreme pre-selection of the grapes, combined with a careful maturation in the cellar and a successful assemblage, it was possible to achieve a true sensory<br />symphony despite the climatically adverse conditions of the 2017 vintage. The contribution of each individual grape variety does not emerge separately, but forms a powerful<br />symbiosis.<br /><br />Eye: brilliant colour with yellowish, slightly olive reflections.<br />Nose: Intense and complex bouquet of yellow flowers (broom and lime), mainly white flowers (hawthorn and orange blossom) and citrus notes of mandarin and grapefruit.<br />Rarely white currant and gooseberry.<br />Taste: Fine, elegant, almost velvety on the palate, carried by a crisp acidity and a mineral and spicy structure. Campo ai Sassi 2021<br />Rosso di Montalcino DOC<br />Campo ai Sassi Rosso di Montalcino presents the typical characteristics of Sangiovese grown in this area, in a youthfully disengaged version. The deep soils on which<br />these vineyards are cultivated contribute to perfumed and elegant wines with a light and delicate tannic texture.<br /><br />Climatic trend<br />The 2021 season will be remembered as a dynamic vintage. After a rainy and mild winter, which had led to a slight advance in budding, temperatures dropped sharply at the<br />beginning of April, slightly slowing the growth of the buds. From May onwards, temperatures began to rise again, leading to a summer that will be remembered for both the<br />beautiful day-night temperature range and the long period of intense heat. The grapes presented themselves at harvest in a perfect state of health, thanks to the mild<br />temperatures and low humidity.<br /><br />Technical notes<br />Varietal: Sangiovese<br />Alcoholic grade: 13.5%.<br />Maturation: in oak barrels<br />Vinification and maturation<br />Once harvested, the Sangiovese grapes were fermented in temperature-controlled stainless steel tanks. During this phase, cap breaking was of fundamental importance,<br />allowing perfect extraction of the polyphenolic substances. Subsequently, the wine spent a period of maturation in the cellar, part of it in wood. Further time in bottle<br />completed its qualitative course before release for consumption.<br /><br />Tasting notes<br />Campo ai sassi 2021 has a wonderful ruby red colour. The bouquet is mainly characterised by fruity<br />fruity and floral notes. Among the fruity notes stand out the currant and morello cherry, among the floral ones certainly the violet. In the mouth it is<br />fresh, soft and persuasive. The tannin is soft. The persistence is pleasantly long.<br />

Hebo<br />Cabernet sauvignon 50%, merlot 40%, sangiovese 10%.<br />The name of an Etruscan settlement of ancient origin, Hebo recalls the historical roots of Suvereto.<br /><br />It is produced from a classic blend of Cabernet Sauvignon, Merlot and Sangiovese, vines introduced to the area by Elisa Bonaparte Baciocchi, princess of Piombino from<br />1805 and enlightened woman of wine.<br /><br />The ruby colour is bright, the aromas reveal fresh scents of sour cherries, violets and blueberries, before turning to seductive mineral hints and nuances of Mediterranean<br />scrub.<br /><br />On the palate, the wine is structured but fresh, savoury and with good momentum. The finish is pleasantly fruity, delicate in its savoury character and with gentle tannins.<br /><br />Production methodSun, wind and three complementary soils<br />The production method is rigorously aimed at defending the territorial connotation.<br /><br />The grapes are harvested in boxes, fermentation is carried out with indigenous yeasts and vinification takes place in steel tanks. The wine is aged for about a year in<br />Slavonian oak barrels and a small percentage of used barriques.
