Altemasi Riserva Graal 2013<br />TRENTO DOC CLASSIC METHOD<br />An elegant classic sparkling wine Riserva Millesimato that Cavit produces only with grapes from great vintages. Graal derives from medieval Latin with the meaning of<br />container, this name gained notoriety in the cycle of King Arthur's novels because it was associated with the cup used by Jesus during the Last Supper.<br /><br />Production area: The highest and most suitable hilly areas for sparkling wines in Trentino (Colline di Trento, Altopiano di Brentonico and Valledei Laghi). Medium-textured<br />soils of fluvial-glacial and volcanic nature, on average not very deep and situated at altitudes between 500 and 600 metres above sea level.<br />Grape varieties: 70% Chardonnay and 30% Pinot Noir with a yield of 70 hl per hectare.<br />Climate: After a mild winter with plenty of water, a spring with plenty of rain accompanied us until the beginning of June, followed by a hot, dry summer. Towards the end of<br />August, thunderstorms cooled the days and led to sudden drops in temperature at night. These sudden changes in temperature delayed the ripening process, postponing<br />the start of the harvest until 10 September.<br />Vinification and ageing: Manual harvesting into boxes preceded the traditional soft pressing of the perfectly ripe grapes, with separation of selected fractions of the must,<br />which fermented at a controlled temperature in stainless steel and barriques.frothing took place in May, after a period of maturation of the base wine.the first disgorgement<br />took place 68 months after tirage.<br />Analytical data:<br />Alcohol: 12.50% vol.<br />Total acidity: 6 g/l<br />Dry extract: 22 g/l<br />Residual sugars: 5 g/l<br />Contains sulphites<br />Organoleptic characteristics: White mousse with fine and continuous perlage; straw yellow colour with greenish reflections. Refreshing and lively.<br />Brilliant yellow with golden reflections. Intense and particularly fine, velvety bouquet of almond blossom, peach and apricot, with hints of fresh hazelnut and bread crust. Very<br />fine and long-lasting perlage.<br />Terroir:<br />The Chardonnay grapes are rooted in vineyards above St. Pauls between 300 and 500 m above sea level on the calcareous dolomite rock of the Mendel mountain range with<br />sand and clay deposits. The south-east exposure, the constant aeration by fall winds and the autumnal temperature differences between day and night ensure a unique<br />microclimate in which the grapes ripen well on the vine for an above-average length of time and thus develop an optimal acid-sugar ratio.<br />Vinification:<br />Ripe grapes, harvested by hand. Gentle whole bunch pressing. Maturation of the base wine in large wooden barrels for several months, followed by traditional bottle<br />fermentation and 40 months of maturation on the fine lees at a naturally constant temperature in the historic bunker.<br />Recommended with: Classic as an aperitif.<br />Alcohol: 12,5 % vol.<br />Ingredients: contains sulphites<br />

TWC comprises single-varietal wines in perfection from a highly limited<br />production. <br />PARATUS Sauvignon<br />This Sauvignon PARATUS embodies the best possible interplay between grape variety, soil conditions and microclimate. Selected grapes from selected vineyards produce<br />this expressive, varietal and complex Sauvignon. The Paratus combines vegetal and fruity-floral tones of elderberry and gooseberry and combines fine acidity with a full-<br />bodied taste.<br />Aroma: Fruity, herbal<br />Flavour: Aromatic<br />Growing area: Municipality of Montan in the Unterland and in the municipality of Ritten at 450 - 650 m above sea level. The cultivation method is wire frame with about 7500<br />canes per ha. The soil ranges from gravel - clay soil to moraine soil with porphyry deposits.<br />Vinification: After a long maceration period of 5-10 hours, the grapes are gently pressed, followed by clarification of the must by natural sedimentation. Fermentation takes<br />place in stainless steel tanks at 17°C for about 12 days. Subsequent storage on the fine lees for a further 7 months.<br />Harvest and yield: Careful hand-picking of fully ripe grapes in mid-October with a yield of approx. 50 hectolitres of wine per hectare.<br />Food pairing: Sauvignon Paratus is an excellent accompaniment to roast fish, green and white asparagus, but also to spicy vegetable risotto and as an accompaniment to<br />special occasions. Fermentation takes place separately for both grape varieties at a<br />controlled temperature of 15°-16°C. After blending to form the cuvée, the tirage liqueur is added to the base wine in spring, so that the second fermentation takes place in<br />the bottle at a cellar temperature of 11°-12°C, during which the wine is left on its lees for at least 22 months before being degorgéed and put on the market.<br />Organoleptic characteristics: With a pale pink colour and peachy reflections, fine and persistent perlage, it expresses fruity notes of raspberry and sweet spices, enveloped<br />by pleasant scents of yeast. Part of the Chardonnay (about<br />20%) is fermented and aged in barriques, while the remaining Chardonnay and Pinot Nero ferment separately in stainless steel at a controlled temperature of 14-16°C and<br />then refine on their lees until the following spring. The blending of the respective wines (Chardonnay from the wood and Chardonnay and Pinot Nero from the stainless steel)<br />then takes place before the addition of the tirage liqueur, bottling and storage in the cellar at a temperature of 10-12°C for the second fermentation and an average yeast time<br />of at least 60 months. This style of wine-making was very popular and appreciated at the<br />end of the 19th century, particularly in certain northern European countries. Carte Blanche is therefore made from Brut Premier, to which more sugar is added at the time of<br />disgorging. The dosage gives the wine a rich, creamy and ample structure, contrasting with its freshness.<br />Grape varieties:<br />40% Pinot Noir<br />40% Chardonnay (of which 20% vinified in wood)<br />20% Meunier<br />Vinification:<br />Carte Blanche benefits from 3 years' cellar ageing, to which a 6-month rest period is added after disgorgement to perfect its maturity.<br />The dosage is 38 g/l.<br />It carries out a partial malolactic fermentation.<br />Tasting notes:<br />Carte Blanche reveals a range of sweet, ripe fruits (baked apple), intense floral notes (broom) and hints of warm, sugary almonds reminiscent of almond cream. The high<br />dosage is well balanced by both the wine's freshness and the long duration of disgorgement.<br />

BRUT PREMIER<br />Characteristics<br />Always on the borderline between aperitif wine and wine for the whole meal, Brut Premier asserts its fresh style: direct, precise and juicy at the same time.<br /><br />Brut Premier is produced each year, seeking the same balance between freshness and pleasure: it is both elegant and rich, youthful and mature, with a very particular<br />structure, on the borderline between an aperitif wine and a wine for the whole meal. Every year it is assembled and recreated with patience, starting from the strength of the<br />last vintage (the base), which must be softened, patinated and tamed with care so as never to lose its peculiarities! It is the reserve wines, aged for individual parcels for up<br />to 10 years in French oak barrels, that give Brut Premier its unmistakable character. It is a meticulous work, involving 200 to 300 different lots: the wines, the vines, the crus,<br />the vintages blend in a harmonious and delicious way so that everything changes but remains the same!<br />Grape varieties:<br />40% Pinot Noir, 40% Chardonnay of which 10% vinified in wood (oak barrels) and 20% Meunier.<br />Vinification:<br />Brut Premier benefits from an average of 3 years of ageing in the cellar, to which is added a rest period of 6 months after disgorging, to perfect its maturity.<br />The dosage is 9 g/l.<br />Tasting notes:<br />A bright yellow wine with golden hues and a very dynamic effervescence. The nose has aromas of candied citrus fruits (lemon) with notes of peel, acidulous, combined with<br />the sweetness of toasted hazelnut, acacia flowers in full bloom. The palate is rich, fluid, round and fresh. The attack is centred on juicy, direct, dense fruit, pure but<br />characterised by sweetness, prolonged by a savoury freshness that gives it a remarkable mineral precision, an elegance without excess. The sensation is delicate, fluid,<br />consistent and with a particular immediacy!<br />
