Since 1986, it has been one of the flagships of this prestigious line with<br />its aromatic autochthonous grapes. The Gewürztraminer Sanct Valentin is characterised by its intense and complex bouquet as well as its intense fruit and spice notes on<br />the nose and on the palate. Brut<br />Alto Adige - South Tyrol DOC<br />Grape variety: Pinot Bianco 30%, Chardonnay 60%,Pinot Nero 10%<br />Growing region: Medium-high hills in Überetsch and Unterland<br />Altitude: 450 - 700 m.a.s.l.<br />Soil type: Predominantly loose limestone soils, with a good clay content and a normal presence of organic substances.<br />Ripening system: pergola and trellis<br />Planting density: 3,300 - 3,500 plants per hectare for the pergola, 5,000 - 6,000 for the espalier.<br />Alcohol content: 12.50 % vol.<br /><br />Product description: the three grape varieties are vinified separately, gently pressed and fermented at a controlled temperature of 14°-16°C. The wine is aged in stainless<br />steel on the lees of the first fermentation until spring. The tirage liqueur is added to the base wine and it is bottled, sealed with crown caps and stored in the cellar at 10°-12°<br />C so that the second fermentation can begin. Once completed, the wine remains on its lees for at least 24 months before being disgorged and put on the market.<br />Organoleptic characteristics: Bright straw yellow, fine and persistent perlage, fruity scents with balanced yeast notes. On the palate, fresh, dry, very persistent and with a<br />pleasant aftertaste of dried fruits.<br />Gastronomic recommendations: Classic aperitif, good companion also with light starters and with the whole menu of simple fish dishes.<br />

Chardonnay, Pinot Blanc, Sauvignon and Gewürztraminer, aged on the fine yeast and matured in wood,<br />merge into a cuvée with remarkable structure and elegance. All this combined in a unique packaging. The outer shell: Unique in elegance and sophistication.This year's<br />image in the bottle depicts the 'youthful Bacchus' and is attributed to the Caravaggio school around 1600. Bacchus reaches for the grape, the 'materia prima', without<br />which this unique wine would not exist. The grape and the wine are united in the bottle. In between are other dimensions, from the harvest to the fermentation process to<br />the ripening, and what else can resonate and stimulate beyond the wine.<br /><br />Description: Strong straw-yellow colour, a fruity hint of exotic scents. Réserve della Contessa - the feminine wine.<br /><br />Its secret is fineness and elegance, one almost wants to say noblesse. A white wine of delicate colour and delicate aromas, as if made to accompany festive hours.<br /><br />Grape varieties: Pinot Blanc 60 %, Chardonnay 30 %, Sauvignon Blanc 10 % (Terlaner).<br />Colour: strong yellow with greenish reflections.<br />Aroma and taste: fresh scent of apples, apricots and a hint of sage. Dense and elegant, with a lot of melting, long lasting.<br />Site and soil: Two thirds of the grapes come from Lieben Aich in Terlan and one third from Campan in Kaltern. In Terlan Lieben Aich we have a warm west-facing slope at<br />300 m above sea level, with water-permeable, sandy loam soil on porphyry weathered rock. Kaltern Campan is a cool, east-facing slope at 500 m above sea level. The soil is<br />a strong loamy limestone soil with rock deposits from ice-age glaciers.<br />Vinification: The destemmed grapes remained in the press for six hours for maceration to extract aroma and structure from the skins. Fermentation took place in wooden<br />barrels, partly spontaneously, with the grape's own yeasts. During the six months of ageing on the fine lees, the aroma and flavour were refined.<br />Serving temperature: 10 - 12 °C.<br />Goes well with: starters, fish and white meat.<br />

Dom Pérignon Vintage 2009 is the result of two movements: one is<br />driven by nature and the other is the creative ambition of the Maison's Chef de Cave. This synergy allows us to taste the ripest and richest fruit, the grapes at their best, the<br />promise of a wine full of freshness and energy.<br /><br />NOSE<br />The notes of guava and spicy green grapefruit zest blend with those of stone fruit, white peach and nectarine. The wine breathes, complemented by notes of woody vanilla<br />and warm, delicately toasted brioche.<br /><br />PALATE<br />The fruit notes are majestic, ripe, fleshy and deep. Beyond the richness and a certain voluptuousness, it is the impression of coherence that dominates. The intensity is<br />extraordinarily restrained. All the sensations converge and persist, silky, saline and lymphatic, bitter and iodized.<br /><br />CULINARY PAIRINGS<br />The Dom Pérignon Vintage 2009 is a wine that needs stimulation. It requires a context and lends itself to being enhanced by strong contrasts.<br />The champagne evokes vegetable and mineral worlds, which manifest themselves, for example, through a carbonara with sea urchins and cardamom mousse. It works<br />perfectly with dishes with a particular texture: for example, octopus sautéed in butter marinated in Sicilian orange juice.<br />
