And yet the essence remains invisible to the eyes, revealing itself only to the nose and mouth: the beguiling scent of roses in the vineyard awakens<br />the secrets of summer from their slumber and lingers on the tongue with sweet spice.<br /><br />VINIFICATION<br />Late harvest of the fully ripe, partially dried grapes, 20-hour cold maceration, fermentation in wooden barrels, ten months of ageing on the fine lees in large wooden barrels.<br /><br />SITUATION / SOIL<br />Höfl unterm Stein in Söll near Tramin, is a south-eastern slope situated at 480 to 550 m above sea level. Campaner Gewürztraminer DOC 2021<br /><br />Origin: the name Gewürztraminer goes back to Tramin, the neighbouring village of Kaltern, where this variety was first mentioned in documents in the 14th century. Whether<br />the variety really originated in Tramin is questionable. The fact is that it has a very long tradition in South Tyrol and produces excellent wines.<br /><br />Vintage: the winter months were predominantly sunny but decidedly cold. Temperatures rose only hesitantly even in spring, slowing down the development phase of the<br />vines. However, a warm and sunny start to the summer made up for this. August and July were very varied, so the grape harvest started relatively late on 9 September. The<br />rainy September was a great organisational challenge for our winegrowers, but finally the harvest was completed on 26 October with a very good result.<br /><br />Tasting notes:<br />- pale golden yellow<br />- intense nose, rose petals, lychee, cloves, cinnamon, some sage, complex and multilayered<br />- much volume on the palate, very clear and straightforward, tropical fruits in the long finish<br /><br />Recommendation: goes very well with prawns and flavourful fish as well as with Asian cuisine. Also try it with thinly sliced pancetta!<br /><br />Vinification: de-stemming of late harvested but perfectly healthy grapes; 12-hour cold maceration, pressing, natural must clarification, slow fermentation at a controlled<br />temperature of 18°C, ageing on fine lees for 5 months, filtration and bottling in March.<br /><br />Vineyard: south-facing slope at 450 to 500m above sea level. Gold Muscat DOC 2021<br /><br />Vintage: the 2021 viticultural year was demanding and challenging in many respects. The winter months were predominantly sunny but decidedly cold. Temperatures rose<br />only hesitantly even in spring, slowing down the development phase of the vines. However, a warm and sunny start to the summer made up for this. August and July were<br />very varied, so the grape harvest started relatively late on 9 September. The fourth edition of APPIUS, Hans Terzer's dream wine, remains true to the principle of its creator: 'to give the best expression to the respective vintage<br />through selection and targeted vinification of excellent grape lots': 2013 was characterised by a relatively late harvest, which brought us fully ripe grapes with very pithy<br />acidity, beautiful fruit and intense aromatics. The Cuvee with a main share of Chardonnay, is combined with shares of Sauvignon Blanc, Pinot Grigio and Pinot Blanc. The<br />result: a multi-layered complex nose with exotic fruit notes such as: Pineapple, papaya, passion fruit, but also hints of Williams pear and apple as well as slightly floral<br />notes. Dense and creamy on the palate with mineral acidity and a never-ending finish. The soil consists of pure limestone gravel with a high humus content.<br />Climate: the Mediterranean climate with cool fall winds causes the longer vegetation period as well as the late harvest of the grapes in mid-October.<br />Vinification: the grapes are harvested by hand. Afterwards the clarified must ferments for about 3 weeks in steel tanks. Grape variety: Pinot Blanc<br />Denomination of Origin: Alto Adige DOC<br />Altitude: 500-700 metres above sea level<br />Orientation: south-east<br />Area: Above Nals, in Sirmian, the exposed slopes lie between 500 and 700 metres above sea level with a south-east orientation. The soil is a permeable moraine deposit<br />consisting of limestone, gneiss, mica, slate and marble, formed millions of years ago by glaciers of the Vinschgau Valley and lies on porphyry, the primary rock of the<br />bedrock.<br />Climate: the alpine climate with mild summer and cool autumn months causes the longer vegetation period and the late harvest in mid-October.<br />Vinification: the grapes are harvested by hand. After a short maceration period, the clarified must ferments for about 3 weeks in 12 hl and 30 hl wooden barrels. The young<br />wine then matures for a further 8 months on the fine lees.<br />Colour: bright straw yellow, beautiful depth.<br />Aroma: pineapple, pink grapefruit, kiwi, fresh hay, a hint of thyme.<br />Taste: compact, full-bodied, spicy and with salty length.<br />Food recommendation: Spaghetti with sardines, fish soup, spelt dumplings with grey cheese.<br />Serving temperature: 10-12° C<br />Storage recommendation: cool at 10-13° C and min. 60% humidity.<br />

DENOMINATION<br />Franciacorta.<br /><br />GRAPE VARIETY<br />Chardonnay 81.5%, Pinot Blanc 1.5%, Pinot Noir 17%.<br /><br />VINEYARDS OF ORIGIN<br />162 Chardonnay vineyards, with an average age of 30 years, located in the municipalities of Erbusco, Adro,<br />Cazzago San Martino, Corte Franca, Iseo and Passirano.<br />5 Pinot Bianco vines, with an average age of 28 years, located in the municipality of Passirano.<br />30 Pinot Nero vineyards, with an average age of 21 years, located in the municipalities of Erbusco, Provaglio d'Iseo<br />and Passirano.<br /><br />ASSEMBLY<br />71% wines harvest 2019<br />26% reserve wines 2018<br />3% reserve wines 2017<br /><br />2019. The winter season passed with mild temperatures and low rainfall. These<br />conditions led to an early spring. From the second week of April, the weather changed dramatically and until mid-May, rain was the protagonist with temperatures below<br />average. These weather conditions compromised the flowering and were the cause of spinning of the wings of the bunches and floral dripping, resulting in smaller, more<br />sparse bunches with very low average weights. After 15 May we saw a clear improvement in the weather conditions which allowed us to set fruit in favourable conditions.<br />Above-average temperatures characterised the month of June, which can be described as the driest in the last 20 years. The dry weather continued until mid-July with the<br />vines beginning to show symptoms of water stress. The beginning of August brought us the much-desired rain, effectively saving the season.<br />From 20 August, with the start of the harvest, temperatures returned to normal and the fine weather accompanied us until the end of the season.<br />and good weather accompanied us until the end of August. The harvest began on 20 August and ended on 5 September in good weather. Average yield per hectare was<br />4,800 kilograms of grapes, equivalent to 3,020 litres of wine (wine yield: 63%). The small size of the bunches and the low yields in the vineyard have legitimised the high<br />quality of this vintage, which is expressed in the Cuvée Prestige Edition 44 by an intense aroma of citrus, white and yellow fruits and by a full-bodied, extremely lively taste.<br /><br />VINIFICATION<br />The base wines of the Cuvée Prestige are the result of a careful selection of grapes and a skilful vinification process conducted in full respect of the Ca' del Bosco Method.<br />The grapes, harvested by hand in small crates, are classified and cooled. Each bunch is selected by expert eyes and hands, and then benefits from the exclusive 'berry<br />spa': a special system of washing and hydromassage of the bunches consisting of three soaking tubs and a drying tunnel. After pressing in the absence of oxygen, all the<br />musts of the base wines ferment in temperature-controlled steel tanks and remain there until the following March. Seven months of refinement are then necessary for the<br />wine to clarify, mature and bring out the best of the character of the original vineyards. The wines are then skilfully blended in the 'magic ritual' of creating the cuvée. It is<br />only after a minimum of two years of ageing on the lees that this Franciacorta can express all its richness and identity. The dégorgement takes place in the absence of<br />oxygen, using a unique system designed and patented by Ca' del Bosco. This avoids oxidative shocks and further additions of sulphites. It makes our Franciacorta wines<br />purer, more pleasant and longer-lived. Stoan is a unique wine that reflects the richness and potential of our terroir. A lively blend of Chardonnay, Sauvignon, Pinot Blanc and Gewürztraminer, the brainchild of our<br />winemaker.<br /><br /><br />Description of the vintage: After a dry winter and an initially cold March, above-average spring temperatures favoured early budding and early flowering. From mid-May to<br />early June the weather was mainly rainy and wet. In the later maturation phase, rainfall was normal, with few heat peaks and concomitant short dry periods. Throughout the<br />summer the nights were characterised by pleasant coolness. Harvesting began in early September and until mid-October was interrupted repeatedly by single days of rain,<br />fortunately alternating with prolonged periods of sunshine. The white wines are fresh, with an intense olfactory profile.
