Praeclarus Brut<br />Blanc de Blancs South Tyrol DOC<br /><br /><br />Perfumed South Tyrolean joie de vivre. Elegance, freshness, harmony and complexity. Animating and seductive. Refreshing and lively.<br />Brilliant yellow with golden reflections. Intense and particularly fine, velvety bouquet of almond blossom, peach and apricot, with hints of fresh hazelnut and bread crust.<br />Very fine and long-lasting perlage.<br />Terroir:<br />The Chardonnay grapes are rooted in vineyards above St. Pauls between 300 and 500 m above sea level on the calcareous dolomite rock of the Mendel mountain range<br />with sand and clay deposits. The south-east exposure, the constant aeration by fall winds and the autumnal temperature differences between day and night ensure a unique<br />microclimate in which the grapes ripen well on the vine for an above-average length of time and thus develop an optimal acid-sugar ratio.<br />Vinification:<br />Ripe grapes, harvested by hand. Gentle whole bunch pressing. Maturation of the base wine in large wooden barrels for several months, followed by traditional bottle<br />fermentation and 40 months of maturation on the fine lees at a naturally constant temperature in the historic bunker.<br />Recommended with: Classic as an aperitif.<br />Alcohol: 12,5 % vol.<br />Ingredients: contains sulphites<br />

Straw yellow colour with greenish highlights. Complex, very fine bouquet, with pleasant fruity notes of citrus and peach.<br />Dry, pleasantly fresh flavour with a good, balanced structure.<br />Pairings<br /><br />Excellent as an aperitif and with fried prawns or escalopes alla livornese.<br /> <br /><br /> <br />More Info<br /><br />The most known and traditional Altemasi label is the Millesimato, sparkling Traditional Method Blanc de Blancs, whose mark is the elegance obtained from the long<br />maturation on the yeasts (over 24 months). Elegance and finesse are linked to the fruity and mineral bouquet.<br />Tasting Notes<br /><br />Persistent foam with minute fine-grain perlage. Straw yellow colour, with very faint greenish tinges. Complex, highly refined nose, fruity, mineral,with light notes of bread<br />crust. At Castellare, Chianti Classico is produced using only two indigenous grape varieties: Sangioveto, the prince of Tuscan vines, which makes up 90% of the blend, and the<br />remaining 10% of Canaiolo, another typical variety of the area. The true Chianti Classico, therefore, without the addition of international vines such as Cabernet or Merlot,<br />in order to maintain the authentic formula of the most famous of Italian wines while seeking maximum elegance.<br /><br />Tasting notes: the colour of this Chianti Classico is the ruby red of Sangioveto. The nose is fragrant, fresh with pleasant hints of red fruit, liquorice, currants and a light<br />touch of vanilla. The typical notes of Chianti Sangiovese dominate. On the palate it expresses a pleasant sweetness, is round, soft and savoury. Acidity and persistence<br />characterise a very elegant aftertaste.<br /><br />Pairings: A very versatile wine that also goes well with structured and important dishes. Brut<br />Alto Adige - South Tyrol DOC<br />Grape variety: Pinot Bianco 30%, Chardonnay 60%,Pinot Nero 10%<br />Growing region: Medium-high hills in Überetsch and Unterland<br />Altitude: 450 - 700 m.a.s.l.<br />Soil type: Predominantly loose limestone soils, with a good clay content and a normal presence of organic substances.<br />Ripening system: pergola and trellis<br />Planting density: 3,300 - 3,500 plants per hectare for the pergola, 5,000 - 6,000 for the espalier.<br />Alcohol content: 12.50 % vol.<br /><br />Product description: the three grape varieties are vinified separately, gently pressed and fermented at a controlled temperature of 14°-16°C. The wine is aged in stainless<br />steel on the lees of the first fermentation until spring. The tirage liqueur is added to the base wine and it is bottled, sealed with crown caps and stored in the cellar at 10°-12°<br />C so that the second fermentation can begin. Once completed, the wine remains on its lees for at least 24 months before being disgorged and put on the market.<br />Organoleptic characteristics: Bright straw yellow, fine and persistent perlage, fruity scents with balanced yeast notes. On the palate, fresh, dry, very persistent and with a<br />pleasant aftertaste of dried fruits.<br />Gastronomic recommendations: Classic aperitif, good companion also with light starters and with the whole menu of simple fish dishes.<br />
