Trento d.o.c. blanc de blancspas dosè<br />It is the unceasing work of numerous sparkling wine producers who strongly believe in the territory and in the quality of a unique wine: producing a Trentodoc sparkling<br />wine is a precious art, a vocation, a skill.<br /><br />The skilful hands of Marchesi Guerrieri Gonzaga have given life to a new expression of their savoir faire with Trentodoc sparkling wine, a tribute to the mountains of<br />Trentino where it originates.<br />Marchesi Guerrieri Gonzaga sparkling wine is a Blanc de Blancs Pas Dosè. It is made from 100% Chardonnay grapes cultivated in the Pressano hills at an altitude of 400<br />metres, on marly-calcareous soils that produce structured wines, and in the upper Cembra valley at an altitude of between 400 and 700 metres on sandy soils of porphyry<br />origin, where more floral wines are produced, with a marked acidity and great freshness. The harvest is carried out exclusively by hand between the last ten days of August<br />and the first days of September. The grapes are immediately processed and fermentation is carried out exclusively in stainless steel at a controlled temperature. The wine<br />remains for at least 8 months on its yeasts, which give it complexity before being bottled. It then remains for a minimum of 36 months in refinement where the magic of the<br />wine comes to life. Finally, after disgorging, it rests a further 6 months in the silence of the cellars. The blend of these grapes from such different vineyards gives rise to an<br />extremely elegant and vertical sparkling wine with a strong identity, a tribute to the wonderful mountains of Trentino.<br />

Through hard work and meticulous attention to detail, we ultimately achieved great results.<br />Our vines coped well with both the wet spring and the hot and dry summer, and the golden autumn helped us achieve perfect ripeness. Physiolog-ical ripeness, sugar<br />ripeness and acidity are in perfect balance. Ripe fruit, cool character and moderate alcohol characterise the vintage.<br />From mid-September to the end of October, we were able to harvest all our red wine varieties at the best time. The average yield per hectare was 53 hl.<br /><br />Winemaking<br /><br />La Rose de Manincor is the result of the top red wine batches being made by the saignée method, i.e. bleeding off a proportion of wine after only short contact with the<br />skins - in this case 6 to 12 hours; it increases the ratio of skins to juice in the vat in order to obtain a red wine with more colour and tannin. Consequently the composition<br />and character of the rosé wine may vary slightly from year to year. The lightly coloured juice so obtained is fermented in oak barrels partially using yeasts occurring<br />naturally on the grapes. They are destemmed and pressed straight after<br />the harvest, and then aged on fine lees.
