Altemasi Rosé<br />TRENTO DOC METODO CLASSICO Altemasi Rosé represents a harmonious union between the elegance of Chardonnay and the structure of Pinot Noir, for a refined<br />bouquet of small fruits.<br /><br />Area of production: The wines of this important cuvée come from Pinot Noir and Chardonnay grapes harvested in the high hillside vineyards around Trento and on the<br />Brentonico plateau at altitudes between 450 and 600 m above sea level, facing south and southwest. The Chardonnay is grown on soils that are mainly of fluvial-glacial<br />origin, of medium depth, tend to be calcareous and rich in skeleton. The soils chosen for the Pinot Noir are of volcanic origin, originating on the basalt of the Brentonico<br />plateau, with a medium texture and well structured.<br />Vinification and refinement:The grapes are harvested by hand and delivered in crates to the cellars where vinification takes place. Only the whole Chardonnay berries are<br />slowly pressed to separate the different fractions of must which, inoculated with selected yeasts, ferments at controlled temperatures in stainless steel tanks. The wine<br />from Pinot Noir is made using the 'submerged cap' system, which consists of leaving the must in contact with the skins until the first signs of fermentation begin; then only<br />the must is separated and fermentation continues in stainless steel at a controlled temperature. This allows us to obtain a soft, delicate colour from the skins, a distinctive<br />feature of Cavit's Trentodoc rosé. Foaming in the bottle takes place the following spring and the wine remains on the lees for at least 15 months. Description:<br />Aroma of fully ripe wild berries and dark chocolate. Very dense and complex with fine tannins. Elegant Merlot with very good ageing potential.<br />Ageing potential: 6 - 8 years.<br />Recommended food: Goes well with hearty roasted or grilled meats with root vegetables and spicy dark sauces, as well as game dishes and cheeses.<br />Serving temperature: 16° C.<br />Grape variety: Merlot. The grapes come from 20-year-old trellised vineyards with a planting density of approx. 5,000 vines/ha.<br />Sites: Sun-exposed slope. Extremely dry and heat-retaining quartz porphyry weathered soil that only allows low yields.<br />Vinification: Must fermentation at 28-30° C in stainless steel tanks. Gentle circulation of grape skins and juice is used to achieve optimal extraction of colour and extract<br />substances. Further ageing takes place entirely in small wooden barrels for about 12 months. After gentle filling and 12 months of bottle ageing, the wine is put on sale.<br />

I Frati<br />Lugana Doc<br /><br />The wine that has made the company's image known and continues to do so. It has a direct link with its variety, Turbiana, our indigenous vine. Conceived to be consumed<br />during the year, it expresses its best side many years after bottling. In its youth it is fresh, linear and endowed with great finesse and elegance with delicate notes of white<br />flowers and balsamic, hints of apricot and almond. Time allows it to evolve, expressing its mineral notes with greater determination. The wine acquires its own complexity<br />with hints of iodine, spices and candied fruit. In the mouth it is capable of enveloping the whole palate thanks to an important savoury essence accompanied by lively and<br />exuberant acidity. Marzemino, Sangiovese and 10% Cabernet make<br />it a wine that cannot go unnoticed. The nose is very rich with notes of red fruits, macerated blueberries, marasca cherries under spirits, balsamic and jammy hints. The<br />palate is powerful and incisive, clean, savoury, with a fine acidity that is a sign of the Benaco soil. The elegant Passito Comtess delights with intense fruit, a creamy-soft body, with a long finish and flatters the palate with racy-fresh acidity. Time is a precious commodity: it takes at least 84 months on the<br />lees to transfer the complex history of the vintage, the identity of the vineyard and the characteristics of the variety into the wine. It is an extra brut with a dosage of about 3<br />g/l. The enveloping taste and structure are merited by the quality of the grapes from old vines and the ripeness of the fruit.
