AURATUS Gewürztraminer<br />South Tyrolean Gewürztraminer Auratus DOC<br />Growing region: Our Gewürztraminer AURATUS grows in its place of origin, Tramin, on the South Tyrolean Wine Road. In an exposed sunny position in the fraction Rungg<br />near Tramin, we use the ideal conditions for the production of physiologically ripe Gewürztraminer grapes. The vines grow at an altitude of 320 - 400 metres above sea level<br />in clayey loam soil.<br />Vinification: The fully ripe and selected grapes are subjected to a cold maceration of about seven hours before pressing. The temperature-controlled fermentation at 20°C and<br />the maturation on the fine yeast give this Gewürztraminer its special note.<br />Harvest and yield: When the grapes have reached the ideal physiological ripeness, they are selected at the end of September to mid-October and harvested by hand so that<br />only selected grapes are used for the further processing of this Gewürztraminer. Complex Chardonnays from high altitudes are a rarity, but that is precisely where the appeal lies for us. Troy means 'path' in the language of our ancestors. The name<br />illustrates our long journey of research and experimentation with this noble grape variety.<br /><br />The winter ended with abundant snow in the mountains. Warmer temperatures in March and April caused premature and rather uneven budding in the well-supplied soils. A<br />cool May then delayed the flowering. In humid and hot June, a high fungal disease pressure developed, which could be contained through sensitivity and a lot of careful<br />manual work. The rest of the summer was largely dry and was only interrupted by short, heavy thunderstorms. Two hot spells had practically no negative effects. A<br />significant drop in the lowest temperatures began in mid-August. High temperature differences between day and night characterised the weather throughout the harvest. The<br />harvest took place about 14 days later than in the previous year. The white wines of the 2019 vintage show an impressive freshness, Gewürztraminer are characterised by<br />particular elegance. At Castellare, Chianti Classico is produced using only two indigenous grape varieties: Sangioveto, the prince of Tuscan vines, which makes up 90% of the blend, and the<br />remaining 10% of Canaiolo, another typical variety of the area. The true Chianti Classico, therefore, without the addition of international grape varieties such as Cabernet or<br />Merlot, in order to maintain the authentic formula of the most famous of Italian wines while at the same time seeking maximum elegance.<br /><br />Tasting notes: the colour of this Chianti Classico is the ruby red of Sangioveto. The nose is fragrant, fresh with pleasant hints of red fruit, liquorice, currants and a light touch<br />of vanilla. The typical notes of Chianti Sangiovese dominate. On the palate it expresses a pleasant sweetness, is round, soft and savoury. Acidity and persistence<br />characterise a very elegant aftertaste.<br /><br />Pairings: A very versatile wine that also goes well with structured and important dishes. SOUTH TIROL DOC<br />LAGREIN RISERVA<br />VINEYARD KLOSTERANGER<br /><br />Our historic single vineyard: expressive, concentrated and straightforward.<br />IN THE VINEYARD<br />This Lagrein thrives at an altitude of 280 m in the middle of Gries. The historic vineyard is part of the monastery complex, where the vines stand on pure alluvial material from<br />the Talfer and a subsoil of Bolzano quartz porphyry. IN THE CELLAR<br />After fermentation and acid reduction in stainless steel, the wine is aged in new barrique barrels for 22 months, followed by harmonisation in enamelled steel tanks and<br />careful bottling after light filtration.<br />TASTING NOTES<br />The Klosteranger appears in deep garnet red and seduces with a bouquet of concentrated aromas. It is surprisingly lively and fruity on the nose with notes of coffee and<br />black berries as well as a hint of raspberries. On the palate, it convinces with grippy tannins, fresh acidity, delicate as well as elegant fullness and depth. Our single-vineyard<br />Lagrein is wonderfully complex, long-lasting and pampers the palate with a multi-layered structure. Best enjoyed well-tempered with braised game dishes, tenderly roasted<br />beef or spicy cheese dishes. Optimal drinking pleasure within 10 years.Alcohol: 13.50 % vol. Description: Deep and concentrated fruit, aromas of blackcurrant, cocoa, cinnamon and vanilla as well as velvety tannins make up this full-bodied yet elegant cuvée.<br />Ageing potential: 10 - 15 years.<br />Recommended food: Meat dishes of all kinds, especially red meat and game dishes as well as mature cheese.<br />Serving temperature: 16° C.<br />Grape variety: 80% Merlot - 20% Cabernet. Older trellised vines (15 - 20 years), planting density 5,000 vines/ha.<br />Sites: vineyards at 250-430 m a.s.l., moraine rubble deposits and porphyry weathered soils, south-west facing.<br />Vinification: Must fermentation followed by maceration for 7-10 days, malolactic fermentation in barriques. In spring, first racking with assemblage of the two varieties and<br />further ageing for 14 months in small oak barrels. Gentle coarse filtration and filling.
