Since 1986, it has been one of the flagships of this prestigious line with<br />its aromatic autochthonous grapes. The Gewürztraminer Sanct Valentin is characterised by its intense and complex bouquet as well as its intense fruit and spice notes on<br />the nose and on the palate. A pleasurable wine that still gives great drinking pleasure even after many years.<br />Eye: golden yellow<br />Nose: wide aroma potpourri from rose scent, exotic fruit to oriental spices.<br />Taste: powerful, complex, discreet residual sweetness<br />Variety description: Gewürztraminer<br />Growing region: Site: Selected sites in Kurtatsch, Kaltern and Eppan (300-500m)<br />Exposure: Southeast<br />Soils: loamy limestone gravel soils<br />Method of cultivation: Guyot<br />Age of vines: 5 to 35 years<br />Harvest: End of September to beginning of October; harvest and grape selection by hand.<br />Vinification: Maceration of the grapes followed by gentle pressing. The grapes are<br />pressed in the traditional tanks called lagares, followed by maturation of the Port in large old oak vats in the cellars in Vila Nova de Gaia.<br />COLOUR: intense ruby<br />BOUQUET: Intense aroma of wild fruits, spices, notes of dark chocolate, with a slight floral profile, making it a refined and very expressive Port wine<br />PAIRINGS: perfect with desserts in which chocolate predominates, especially dark chocolate. The winter of 2017 ended a five-year drought with January recording the most rainfall in over 20 years. The abundant rainfall continued into March, causing a modest delay in<br />budbreak, and pushing bloom back by two weeks. Increased soil moisture allowed for healthy vine growth and development. The summer, in turn, was warm and punctuated<br />by occasional heat waves. Despite Mother Nature's variability, favorable weather in August provided optimal conditions for fruit development and maturation. Superb flavors<br />and excellent ripening led to an earlier than expected harvest, which commenced on the 5th of September.<br /><br />The Opus One 2017 offers a harmonious aromatic balance of rich dark fruit, stems of roses, and earthy forest floor. The juicy entry offers a round, silky mouthfeel with just<br />enough acidity to complement the satin texture. This seductive wine shows flavors of black cassis, black cherry and a hint of cocoa powder. The fine-grained, plush tannins<br />evolve into a long, supple finish. Vinification<br /><br />The grapes are harvested in September and left to dry for 4 months in a well-ventilated room. In December, the dried grapes are selected again. Drying results in a 2/3<br />weight loss, as well as a concentration of sugar, aromas, acidity and tannins. Due to the high sugar content, the yeast cannot carry out the fermentation completely and<br />thus a natural residual sweetness remains. After a fermentation of 6 weeks, a longer bottle fermentation takes place.<br />Tasting<br /><br />The 'Cashmere' Gewürztraminer Passito presents itself with a golden yellow colour with a light amber hue. Its bouquet is exquisite and intensely aromatic: dried apricots,<br />candied fruits, rose petals, a hint of orange and caramel. On the palate, the Passito is very concentrated, with a harmonious interplay between inviting sweetness and<br />refreshing acidity, elegant and of exquisite level.<br />
