Growing region<br />The best grapes of this variety come from the growing areas of Girlan, Montiggl and Eppan Berg at 500 m above sea level. The different combinations of the growing soils -<br />clay, lime and gravel - give the wine a unique character.<br /><br />Vinification and ageing<br />The grapes are harvested by hand and delivered in small containers. After a short maceration and gentle whole bunch pressing, the must is clarified from the lees by natural<br />sedimentation. Fermentation takes place at controlled temperature in stainless steel tanks. The wine is matured for 8 months<br />in stainless steel tanks and large wooden barrels without biological acid degradation on the fine lees.<br /><br />Wine portrait<br />The Sauvignon variety has been cultivated in South Tyrol for more than a century. for more than a century. The intense aroma of citrus and elder blossom as well as the<br />freshness and liveliness in the mouth are typical for this wine. The minerality and the fresh acidity characterise the aromas. Classification<br /><br />South Tyrol DOC<br />Growing region<br /><br />For this wine we select the best Chardonnay, Pinot Blanc and Sauvignon grapes, which grow in Girlan in the Überetsch region at an altitude of between 450 and 500m above<br />sea level. All vines are at least 15 years old and are raised using the Guyot system. The soil in this growing area is particularly rich in minerals formed by sediments from<br />the glacial period.<br />Vinification and ageing<br /><br />The grapes are harvested by hand and delivered in small containers. After subsequent whole bunch pressing, the must is clarified from the lees by natural sedimentation.<br />Fermentation takes place separately for each variety in French oak barrels of 12 and 15 hl. In the case of Chardonnay, the fermentation is followed by malolactic<br />fermentation. The subsequent maturation on the fine lees lasts 10 months. Afterwards the wine is cuvèetiert, bottled and stores as Riserva for further 9 months on the bottle.<br />Wine portrait<br /><br />This wine expresses intense, clean and fresh aromas with personality. Marchese Antinori Vinsanto Chianti Classico DOC 2016<br /><br />Climate: After an autumn and winter that tended to be mild and not very rainy, spring 2016 began with good weather in Chianti Classico, bringing bud break about 10 days<br />earlier than the historical average. Starting in May and during the first half of June, rainfall and average cool temperatures were recorded, but did not affect the decisive<br />phases of flowering and fruit set. The summer up to the end of August was hot, dry and without heat peaks: optimal conditions for maintaining an excellent vegetative-<br />productive balance and ensuring constant growth of the grapes. Harvesting took place between 7 and 10 September.<br /><br />Vinification: the grapes, sourced exclusively from the vineyards of the Antinori estates in Chianti Classico, were carefully selected and harvested in boxes; they were then<br />placed by hand on the special mats of the appassitoio (drying room) of the Tignanello estate or on the penzane of the Pèppoli estate (mobile frames where the bunches are<br />hung in suspension). The grapes, left to dry until the end of December, were then softly pressed in order to maintain their organoleptic and aromatic characteristics. The<br />must obtained was put into the typical 'caratelli', made from different types of wood and with a capacity varying between 50 and 200 litres, where the long, slow alcoholic<br />fermentation took place. The wine remained in the kegs for about 3 years and was then blended and finally bottled.<br /><br />Historical data: The production of Vinsanto in Tuscany dates back at least to medieval times: it is considered a true regional speciality and the Antinori family has always<br />produced it. The first vintage of Vinsanto Tenute Marchese Antinori (a 'natural' production vinsanto) was, however, 1987.<br /><br />Tasting Notes: The Marchese Antinori Vinsanto has a dark amber colour with golden reflections. On the nose sweet notes of dried fruit, such as hazelnut and date, combine<br />with an intense sensation of candied orange, honey, and a slight hint of cinnamon. On the palate it is full, soft, supported by a pleasant freshness that makes it lively and<br />pleasant. Good persistence on the palate.<br />

The name Arenis is derived from the Ital. 'arenaria rossa', meaning 'red sandstone'.<br /><br />This rock gives the east-facing sand and clay soils their striking colour. The vineyards between 300 and 400 metres above sea level in the South Tyrolean Unterland are not<br />only considered an ideal terroir but also the home of the Gewürztraminer, which is very demanding in terms of location. Due to the greatly reduced vine yield, the Arenis<br />shows a very complex bouquet: roses, lychee, jasmine and exotic spices. A pronounced mineral nerve gives the full-bodied wine a lingering freshness. Réserve della Contessa - the feminine wine.<br /><br />Its secret is fineness and elegance, one almost wants to say noblesse. A white wine of delicate colour and delicate aromas, as if made to accompany festive hours.<br /><br />Grape varieties: Pinot Blanc 60 %, Chardonnay 30 %, Sauvignon Blanc 10 % (Terlaner).<br />Colour: strong yellow with greenish reflections.<br />Aroma and taste: fresh scent of apples, apricots and a hint of sage. Dense and elegant, with a lot of melting, long lasting.<br />Site and soil: Two thirds of the grapes come from Lieben Aich in Terlan and one third from Campan in Kaltern. In Terlan Lieben Aich we have a warm west-facing slope at<br />300 m above sea level, with water-permeable, sandy loam soil on porphyry weathered rock. Kaltern Campan is a cool, east-facing slope at 500 m above sea level. The soil is<br />a strong loamy limestone soil with rock deposits from ice-age glaciers.<br />Vinification: The destemmed grapes remained in the press for six hours for maceration to extract aroma and structure from the skins. Fermentation took place in wooden<br />barrels, partly spontaneously, with the grape's own yeasts. During the six months of ageing on the fine lees, the aroma and flavour were refined.<br />Serving temperature: 10 - 12 °C.<br />Goes well with: starters, fish and white meat.<br />

La Rose de Manincor - absolute elegance<br /><br />...for certain hours: Spring and summer are the seasons for this fruity wine of richness and juiciness, whose colour alone fires the imagination.<br /><br />Grape varieties: Lagrein, Merlot, Cabernet, Pinot Noir, Petit Verdot, Tempranillo, Syrah.<br />Colour: bright salmon red.<br />Aroma and taste: delicate scent of raspberries and cherries on the nose, juicy and creamy on the palate, long-lasting with fine tannin and mineral-fruity finish.<br />Site and soil: our best red wine sites in Manincor and at Seehof, south-eastern slopes at 250 m above sea level with strong clay soils, interspersed with limestone gravel<br />and other glacial rock deposits.<br />Vinification: La Rose de Manincor is the juice extract from the best red wine batches each year. Thus, the varietal composition and character change slightly each year. The<br />juice was extracted after a 24-hour maceration period and the must fermented in wooden barrels, partly spontaneously with the grape's own yeasts. During the five-month<br />wooden barrel maturation on the fine lees, the aroma and taste refined.<br />Serving temperature: 10 -12 °C.<br />Goes well with: spicy starters, fried and smoked fish, white and grilled meat.<br />
