TECUM<br />PINOT BIANCO RISERVA<br />'Tecum' (Latin: with you/together) is the expression of unison, elegance, and harmony. This cool and mineral Weiburgunder grows in the selected single vineyard Buchholz,<br />above Salurn. The site is located on the cooler, eastern valley side of the South Tyrolean lowlands, at an altitude of 600 m and with a mineral soil of dolomite rock. Out of full<br />respect for the terroir and the natural cycle of the vine, the wine matures for 12 months on fine lees in large wooden barrels and in stainless steel tanks, to then develop for a<br />further 12 months in the bottle. In the process, it retains its structure and complex variety of aromas. The wine is bottled exclusively in large bottles to promote its shelf life.<br />The initials 'N.D.T', which can be found on the label, stand for the philosophy of the wine: 'niente di troppo', which translates into German as 'from nothing too much'. A<br />blend of two very different soils: rich in alberese the first and very clayey the second, just as different were the characters of the two protagonists of the film: Bud &amp; Terence,<br />strength and lightness. AURATUS Gewürztraminer<br />South Tyrolean Gewürztraminer Auratus DOC<br />Growing region: Our Gewürztraminer AURATUS grows in its place of origin, Tramin, on the South Tyrolean Wine Road. In an exposed sunny position in the fraction Rungg<br />near Tramin, we use the ideal conditions for the production of physiologically ripe Gewürztraminer grapes. The vines grow at an altitude of 320 - 400 metres above sea level<br />in clayey loam soil.<br />Vinification: The fully ripe and selected grapes are subjected to a cold maceration of about seven hours before pressing. The temperature-controlled fermentation at 20°C and<br />the maturation on the fine yeast give this Gewürztraminer its special note.<br />Harvest and yield: When the grapes have reached the ideal physiological ripeness, they are selected at the end of September to mid-October and harvested by hand so that<br />only selected grapes are used for the further processing of this Gewürztraminer. With a vine density of 7,000 vines, a yield of 45 hectolitres of wine per hectare is obtained.<br />Recommended with: The Gewürztraminer AURATUS is suitable as an aperitif and goes very well with spicy dishes, liver pâtés, Asian cuisine, sophisticated fish dishes,<br />crabs and lobster.<br />Content: 0,75 l<br />

The name<br />illustrates our long journey of research and experimentation with this noble grape variety.<br /><br />The winter ended with abundant snow in the mountains. Warmer temperatures in March and April caused premature and rather uneven budding in the well-supplied soils. A<br />cool May then delayed the flowering. In humid and hot June, a high fungal disease pressure developed, which could be contained through sensitivity and a lot of careful<br />manual work. The rest of the summer was largely dry and was only interrupted by short, heavy thunderstorms. Two hot spells had practically no negative effects. A<br />significant drop in the lowest temperatures began in mid-August. High temperature differences between day and night characterised the weather throughout the harvest. The<br />harvest took place about 14 days later than in the previous year. The white wines of the 2019 vintage show an impressive freshness, Gewürztraminer are characterised by<br />particular elegance. At Castellare, Chianti Classico is produced using only two indigenous grape varieties: Sangioveto, the prince of Tuscan vines, which makes up 90% of the blend, and the<br />remaining 10% of Canaiolo, another typical variety of the area. The true Chianti Classico, therefore, without the addition of international vines such as Cabernet or Merlot, in<br />order to maintain the authentic formula of the most famous of Italian wines while seeking maximum elegance.<br /><br />Tasting notes: the colour of this Chianti Classico is the ruby red of Sangioveto. The nose is fragrant, fresh with pleasant hints of red fruit, liquorice, currants and a light touch<br />of vanilla. The typical notes of Chianti Sangiovese dominate. On the palate it expresses a pleasant sweetness, is round, soft and savoury. Acidity and persistence<br />characterise a very elegant aftertaste.<br /><br />Pairings: A very versatile wine that also goes well with structured and important dishes. THE PINE OF BISERNO<br />2020<br />TUSCAN IGT RED<br />It is the purest and most direct expression of Bibbona's unique terroir. The special flavour of the grape makes Pino di Biserno a classic with an intriguing aroma,<br />distinguished by its excellent balance and timeless elegance. It shares an identity with its alter-ego, the Biserno.<br />INDICATIVE PERCENTAGE: Cabernet Franc 23%, Merlot 38%, Cabernet Sauvignon 22%, Petit Verdot 17%.<br />SOIL TYPE: Partly clayey, partly Bolgheri conglomerate.<br />GROWTH: The planting system is spurred cordon with a density of 6,500 vines/ha.<br />CLIMATE CONDITIONS: a moderate vintage with more consistent rainfall in the spring months that made temperatures a little cooler than average. Then the heat arrived in<br />early June bringing with it flowering, albeit with a slight delay. The summer recorded average temperatures with a good temperature difference between day and night. It can<br />be considered a good year.<br />HARVEST: Harvest began in the second week of September with the Merlot harvest, then continued with the Cabernet Franc and ended with the Cabernet Sauvignon and<br />Petit Verdot harvest in the first week of October.<br />VINIFICATION: The grapes were carefully selected on the vibrating belt in the cellar. Destemming and soft crushing; alcoholic fermentation in truncated conical steel tanks<br />for 3-4 weeks at 28°, malolactic fermentation in barriques for 25% of the mass, the remainder in steel.<br />AGING: The wine matures partly for 12 months in new and second-passage French oak barriques, the remaining 10% of the volume remains in steel.<br />TASTING NOTES: Ruby red in colour with purple reflections, on the nose it releases a complexity of aromas ranging from ripe red fruits to Mediterranean scrub and delicate<br />notes of tobacco and spices. On the palate it is soft, silky and tasty, calibrated in its dense and elegant tannic texture, long in the finish.<br />ALCOHOL: 14.5%<br />TOTAL ACIDITY: 5.0 G/L<br />PH: 3.67<br />

<br />Appius 2017<br /><br />Through an extreme pre-selection of the grapes, combined with a careful maturation in the cellar and a successful assemblage, it was possible to achieve a true sensory<br />symphony despite the climatically adverse conditions of the 2017 vintage. The contribution of each individual grape variety does not emerge separately, but forms a powerful<br />symbiosis.<br /><br />Eye: brilliant colour with yellowish, slightly olive reflections.<br />Nose: Intense and complex bouquet of yellow flowers (broom and lime), mainly white flowers (hawthorn and orange blossom) and citrus notes of mandarin and grapefruit.<br />Rarely white currant and gooseberry.<br />Taste: Fine, elegant, almost velvety on the palate, carried by a crisp acidity and a mineral and spicy structure.
