Weiss Luis Reifer Riserva...

LR 2012
'The creation of an exclusive wine, capable of delighting discerning customers and strengthening the reputation of Schreckbichl' was Luis Raifer's idea. After several years
and several experiments in the choice of varieties, LR was born. Chardonnay, Pinot Blanc, Sauvignon and Gewürztraminer, aged on the fine yeast and matured in wood,
merge into a cuvée with remarkable structure and elegance. All this combined in a unique packaging. The outer shell: Unique in elegance and sophistication. This year's
image in the bottle depicts the 'youthful Bacchus' and is attributed to the Caravaggio school around 1600. Bacchus reaches for the grape, the 'materia prima', without
which this unique wine would not exist. The grape and the wine are united in the bottle. In between are other dimensions, from the harvest to the fermentation process to
the ripening, and what else can resonate and stimulate beyond the wine.

Description: Strong straw-yellow colour, a fruity hint of exotic scents. On the palate, the wine presents itself with great structure and character.Ageing potential: 8-10 years.
Serving temperature: 12-14°C.
Grape variety: Chardonnay, Pinot Blanc, Sauvignon and Gewürztraminer.
Vineyards: selected vineyards at an altitude of approx. 400-550 m above sea level.
Yield:35 hl/ha
Vinification: after a gentle pressing, the wine ferments and matures in oak barrels, followed by one year of bottle ageing. The wine is only put on sale 3 years after the
harvest.
Analytical values:
Alcohol: 14,20%
Total acidity: Vol5,7g/l
Sugar-free extract: 22,80g/l
Sophie MANINCOR 750ml 2018

Sophie MANINCOR 750ml 2018

Grape varieties: Chardonnay 96%, Viognier 4%
Site and soil: Half of the grapes come from TerlanLiebenAich and half from Kaltern Mazzon. LiebenAich is a warm, west-facing slope at 300 m above sea level. Chardonnay
and Sauvignon are grown here on loamy sandy soil interspersed with porphyry weathered rock.Chardonnay and Viognier on Mazzon form our steepest vineyard, the so-
called Leiten with up to 100% slope. Exposed to the south-west at an altitude of 350 -400 m above sea level, with calcareous, loamy loess soil, this steep slope offers a very
special micro-climate.

Vinification: The destemmed grapes remained in the press for four hours to extract the aroma and structure from the skins. The pressing process was very slow and gentle,
because finesse is our highest maxim. Fermentation took place in wooden barrels of various sizes, spontaneously with the grape's own yeasts. During the nine months of
ageing on the fine lees, the aroma and flavour refined.
Bottling: 19,200bottles were filled in June 2020.
Data:
Residual sugar: 1.1g/l
Alcohol: 13,5% Vol.
Acidity: malolactic fermentation 6,7g/l

Description and drinking suggestions: Bright yellow in the glass. The aroma is fruity of apricots, oranges, acacia and lime blossom on the nose, mineral of wet stone in the
depth. Dense and powerful on the palate, yet delicate with a long-lasting minerality. Optimal drinking maturity from autumn 2020 until the end of 2027.
Serving temperature: 8 -10°C, for optimal drinking pleasure decant this complex white wine and serve in Burgundy glasses.
Goes well with shellfish, poultry and strong fish dishes. It also goes particularly well with aromatic cheese.
Champange Dom Pérignon...

Champange Dom Pérignon...
2009: THE PINNACLE OF MATURITY

2009 brings to a close in the best possible way a prodigious, sunny, bold and generous decade. This continuation of favourable weather conditions is unprecedented, and
the succession of vintages has allowed us to explore the new frontiers of grape maturity in Champagne. Dom Pérignon Vintage 2009 is the result of two movements: one is
driven by nature and the other is the creative ambition of the Maison's Chef de Cave. This synergy allows us to taste the ripest and richest fruit, the grapes at their best, the
promise of a wine full of freshness and energy.

NOSE
The notes of guava and spicy green grapefruit zest blend with those of stone fruit, white peach and nectarine. The wine breathes, complemented by notes of woody vanilla
and warm, delicately toasted brioche.

PALATE
The fruit notes are majestic, ripe, fleshy and deep. Beyond the richness and a certain voluptuousness, it is the impression of coherence that dominates. The intensity is
extraordinarily restrained. All the sensations converge and persist, silky, saline and lymphatic, bitter and iodized.

CULINARY PAIRINGS
The Dom Pérignon Vintage 2009 is a wine that needs stimulation. It requires a context and lends itself to being enhanced by strong contrasts.
The champagne evokes vegetable and mineral worlds, which manifest themselves, for example, through a carbonara with sea urchins and cardamom mousse. It works
perfectly with dishes with a particular texture: for example, octopus sautéed in butter marinated in Sicilian orange juice.
