<br />Pratto<br /><br />Pratto represents a challenge that we wanted to take up, going beyond conventional schemes while maintaining unaltered respect for the territory. In this late harvest, the<br />aromaticity of Sauvignon vinified in stainless steel, the softness of Chardonnay and the finesse of Turbiana meet harmoniously with an exclusive result. The nose shows<br />notes of tropical fruit accompanied by a vegetality and minerality that enhance the finesse and elegance with a very communicative impact that induces salivation stimulating<br />the taste. On the palate it is rich with an exquisitely sweet attack followed by perfectly balanced acidity and flavour, and finally the fruity and mineral notes return. Chardonnay 'Cardellino' 2021 - South Tyrol DOC<br /><br />The Chardonnay 'Cardellino' was Elena Walch's first wine and is still probably the winery's most popular wine. According to an old tale, the goldfinch - the 'Cardellino' - only<br />builds its nest in Chardonnay vines, while it does not nest in other grape varieties. Elena Walch has thus dedicated her debut, an elegant Chardonnay full of character, to<br />this faithful little bird, which has won many lovers with its minerality, freshness, coupled with suppleness and excellent structure. The Chardonnay 'Cardellino' has long<br />since become a South Tyrolean classic and continues to be the most popular wine at the Walch family's table. A wine to which one remains loyal, just as the Cardellino<br />remains loyal to its Chardonnay.<br /><br />The Chardonnay 'Cardellino' convinces with a strong, straw-yellow colour, with a complex interplay of fruity aromas, citrus and orange peel, some lime blossom, mineral<br />richness and a spicy hint of tobacco. On the palate, this classic from Elena Walch surprises with exciting freshness and mineral race, with elegance and juicy length:<br />inviting, refreshing and easy to drink.<br /><br />OUTCOME OF THE YEAR 2021: we are delighted with a vintage of outstanding quality, especially for our white wines! A dry and cool spring led to a late flowering of the<br />vines, followed by a warm and dry June. After a volatile midsummer, there was a surprising change in the weather in mid-August, which brought dream weather until the end<br />of September and created the very best conditions for optimal ripening of the grapes. The harvest began in mid-September, about 10 days later than last year. Blue skies<br />and lots of sunshine as well as midsummer daytime temperatures and autumnally cool nights enabled the grapes to reach ideal sugar levels while retaining very good<br />acidity. Accordingly, the wines of the 2021 vintage show a markedly high quality.<br /><br />VINIFICATION: gentle pressing, static clarification, fermentation at a controlled temperature of about 20°C, long contact with the yeast after fermentation. Part of the must<br />(about 15%) is fermented in French oak barrels where it matures for six months. The winter season passed with mild temperatures and low rainfall. These<br />conditions led to an early spring. From the second week of April, the weather changed dramatically and until mid-May, rain was the protagonist with temperatures below<br />average. These weather conditions compromised the flowering and were the cause of spinning of the wings of the bunches and floral dripping, resulting in smaller, more<br />sparse bunches with very low average weights. After 15 May we saw a clear improvement in the weather conditions which allowed us to set fruit in favourable conditions.<br />Above-average temperatures characterised the month of June, which can be described as the driest in the last 20 years. The dry weather continued until mid-July with the<br />vines beginning to show symptoms of water stress. The beginning of August brought us the much-desired rain, effectively saving the season.<br />From 20 August, with the start of the harvest, temperatures returned to normal and the fine weather accompanied us until the end of the season.<br />and good weather accompanied us until the end of August. The harvest began on 20 August and ended on 5 September in good weather. Average yield per hectare was<br />4,800 kilograms of grapes, equivalent to 3,020 litres of wine (wine yield: 63%). The small size of the bunches and the low yields in the vineyard have legitimised the high<br />quality of this vintage, which is expressed in the Cuvée Prestige Edition 44 by an intense aroma of citrus, white and yellow fruits and by a full-bodied, extremely lively taste.<br /><br />VINIFICATION<br />The base wines of the Cuvée Prestige are the result of a careful selection of grapes and a skilful vinification process conducted in full respect of the Ca' del Bosco Method.<br />The grapes, harvested by hand in small crates, are classified and cooled. Each bunch is selected by expert eyes and hands, and then benefits from the exclusive 'berry<br />spa': a special system of washing and hydromassage of the bunches consisting of three soaking tubs and a drying tunnel. After pressing in the absence of oxygen, all the<br />musts of the base wines ferment in temperature-controlled steel tanks and remain there until the following March. Seven months of refinement are then necessary for the<br />wine to clarify, mature and bring out the best of the character of the original vineyards. The wines are then skilfully blended in the 'magic ritual' of creating the cuvée. It is<br />only after a minimum of two years of ageing on the lees that this Franciacorta can express all its richness and identity. The dégorgement takes place in the absence of<br />oxygen, using a unique system designed and patented by Ca' del Bosco. This avoids oxidative shocks and further additions of sulphites. It makes our Franciacorta wines<br />purer, more pleasant and longer-lived. <br />Reserva Heredad<br />Reserva Heredad was created to express style, in the world of top of the range sparkling wines. We make it with the objective of offering an elegant, versatile Cava. To do<br />this, we select only the very best wines from each vintage, which will then age in bottle, in contact with the lees, for more than 30 months. This ageing ends when the winery<br />expert gives every bottle the magic touch with the last poignettage or shake of the wrist, which intensi- fies the contact of the lees with the wine, and creates a more<br />complex bouquet.<br /><br />THE VINEYARDS<br />The grapes are 100% hand harvested and transported to the winery in 25kg capacity self draining plastic boxes to prevent grape damage, and thereby avoiding the<br />possibility that the juice might oxidise, with a consequent loss of freshness.<br /><br /><br />IN THE CELLAR<br />The must for Reserva Heredad comes from the lightest pressing of the grapes. We only use the first 50% of the juice pressed. This is known as the flower must, as it is<br />the most aromatic and delicate. The first fermentation takes place in stainless steel tanks at a controlled low temperature of between 14 and 16°C, to retain the primary<br />aromas of the grapes. The blend for Reserva Heredad is made up of nine different wines, each one vinified in separate tanks. The magic of the blend is in ensuring that each<br />one lends its own touch of character to the whole. Macabeo is the dominant grape in Reserva Heredad, contributing acidity and freshness. It also allows the wine to age<br />well, during the 30 months or more that it will be in contact with the lees. Both the first and the second fermentations are carried out using our own selected yeast strains.<br />These give structure, softness on the palate, more complex aromas (honey, dried fruits and flowers), as well as an elegant and persistent mousse. Before disgorgement we<br />give each bottle a last sharp shake, or twist of the wrist, known as a poignettage, lifting the yeast cells from the side of the bottle, and mixing them once more with the<br />wine, thus intensifying the element of autolysis. The riddling or turning of all the bottles of Reserva Heredad is done by hand and in pupitres.<br /><br /><br />IN GLASS<br />Straw yellow in colour, with a small, fine, plentiful mousse. The opening aromas are of the ageing on lees, lightly smokey, with touches of biscuit or bread, which are<br />followed by hints of honey, fruit and flower petals. The palate is excellent, fruity and full of flavour, with dried fruits from the lees ageing, but very elegant, giving the drinker a<br />delightful sense of abundance.<br /><br /><br />ON THE TABLE<br />This Cava defines elegant refreshment, even in its presentation. It is a perfect companion to truffle influenced dishes, such as truffle oil drizzled pastas. White fish - sole or<br />monkfish à la meunière, or even traditional Mediterranean casseroles are perfect companions, as are cooked or cured hams, and soft white cheeses such as brie or<br />camembert. It marries perfectly with meat dishes, such as fillet of venison slow braised in a shallot sauce.<br />

South Tyrolean Pinot Blanc<br />Schulthauser 2020<br /><br />Pinot Blanc, South Tyrol's most important grape variety, has awoken from its slumber and has become the region's flagship wine. Schulthauser is the classic among South<br />Tyrolean Pinot Blancs; it was first vinified and bottled in 1982. Dedicated to the legendary temple of the Opera, to which the winery feels close and inspired, it is the best expression of the vintage and the Bellavista style. The grapes<br />that make up this great cuvée, mainly chardonnay and pinot noir, are the best possible, the result of a radical selection of individual vineyards. In addition to the exceptional<br />quality of the raw materials used, this Franciacorta differs from other Bruts in that more than a quarter of the wines from which it is made are aged for seven months in small<br />oak barrels. Statuesque in its balance, capable of supporting and at the same time riding the characteristics of the vintage, this Metodo Franciacorta is impressive for its<br />intensity and complexity. The colour is an intense straw-yellow, with a very fine and persistent perlage, a prologue to aromas that appear quintessentially Bellavista.<br />Generous and elegant are the floral notes of hawthorn, unpredictable the balsamic ones of laurel, first, then candied citrus and small pastries. The taste is thick, decisive,<br />aristocratic, creamy and deep at the same time. Nosiola CESCONI 750ml IGT

Nosiola is the only autochthonous white variety in Trentino, present since the time of the Council of Trent. The origin of the name has not yet been clarified. Many maintain<br />that it derives its name from hazelnut, due to the colour of the grapes when ripe, while others believe that it is the aroma of the wines that recalls that of wild hazelnuts.<br />What we do know is that it is a versatile variety, which like few others in the world can produce both great sweet wines and still white wines with a savoury character that<br />can age for many decades.<br /><br />Once widespread throughout the province, Nosiola was mainly grown on the Pressano hill and in the Valle dei Laghi. In recent times, the variety has undergone a major<br />downsizing in favour of international varieties to the extent that it has become almost 'rare'. Today it covers a cultivated area of only 65 hectares. As winegrowers, attached<br />to our territory and our traditions, we are happy to contribute to its preservation.<br /><br />Type of wine: White wine<br />Format: (Litres) 0.75<br />Production area: Nosiola is planted in the highest vineyards on the edge of the forest at an altitude of about 500 metres to the north-east of Pressano. Nosiola flowers early<br />and prefers high, well-ventilated and sunny areas. The vineyard is west-facing and has loose soil on a deep, fertile dolomite dejection cone. The vines have an average age of<br />35 years and are trained to the simple pergola system, with a density of about 3500 plants per hectare.<br />Vinification Part of the grapes are destemmed and macerated for 4-5 days until the 'cap rises'. At this point a cuvèe is made from the directly pressed grapes and<br />fermentation continues partly in stainless steel containers and partly in large acacia barrels. The acacia wood allows us to combine the advantages of vinification in wood<br />with the preservation of the fine and delicate bouquet of Nosiola. The wine remains in contact with its own yeast for about 9 months before being bottled at the end of the<br />summer.<br />

Altemasi Riserva Graal 2014<br />TRENTO DOC CLASSIC METHOD<br />An elegant classic sparkling wine Riserva Millesimato that Cavit produces only with grapes from great vintages. Graal derives from medieval Latin with the meaning of<br />container, this name gained notoriety in the cycle of King Arthur's novels because it was associated with the cup used by Jesus during the Last Supper.<br /><br />Production area: The highest and most suitable hilly areas for sparkling wines in Trentino (Colline di Trento, Altopiano di Brentonico and Valledei Laghi). Medium-textured<br />soils of fluvial-glacial and volcanic nature, on average not very deep and situated at altitudes between 500 and 600 metres above sea level.<br />Grape varieties: 70% Chardonnay and 30% Pinot Noir with a yield of 70 hl per hectare.<br />Climate: After a mild winter with plenty of water, a spring with plenty of rain accompanied us until the beginning of June, followed by a hot, dry summer. Towards the end of<br />August, thunderstorms cooled the days and led to sudden drops in temperature at night. These sudden changes in temperature delayed the ripening process, postponing<br />the start of the harvest until 10 September.<br />Vinification and ageing: Manual harvesting into boxes preceded the traditional soft pressing of the perfectly ripe grapes, with separation of selected fractions of the must,<br />which fermented at a controlled temperature in stainless steel and barriques.frothing took place in May, after a period of maturation of the base wine.the first disgorgement<br />took place 68 months after tirage.<br />Analytical data:<br />Alcohol: 12.50% vol.<br />Total acidity: 6,3 g/l<br />Dry extract: 22 g/l<br />Residual sugars: 5 g/l<br />Contains sulphites<br />Organoleptic characteristics: White mousse with fine and continuous perlage; straw yellow colour with greenish reflections.
