Southeast exposure<br />VINE: Aglianico 100%.<br />TYPE OF SOIL: calcareous clay.<br />AGE OF THE VINEYARDS: average age 22 years.<br />VINIFICATION: in small steel fermenters with long maceration.<br />VINEYARD SYSTEM: espalier.<br />COLOUR: ruby red with garnet reflections.<br />BOUQUET: wide and intense bouquet with hints of ripe fruit.<br />PAIRINGS: goes well with savoury food, hearty first courses, game, meat and mature cheeses, also with vegetarian dishes such as stewed vegetables, legumes, baked<br />vegetable dishes such as aubergine parmigiana or vegetable soufflé.<br />TASTE: Soft and velvety in the mouth, very harmonious with good body, rightly tannic with a black cherry aftertaste.<br /><br />TASTING NOTES: Aglianico is an ancient vine, probably originating in Greece and introduced in Italy around the 7th-6th century BC. There are no certainties about the<br />origins of the name, which could be traced back to the ancient city of Elea (Eleanico), on the Tyrrhenian coast of Campania, or be more simply a mispronunciation of the<br />word Hellenico (for its Greek origin). The original name (Elleanico or Hellenico) became Aglianico during the Aragonese domination in the 15th century, due to the double L<br />pronounced gli in Spanish phonetic usage.Aglianico Contado Riserva Di Majo Norante: the ancient culture of the vine-dressing man combined with modernity and the future.<br /><br />DESCRIPTION: Di Majo Norante produces its wines exclusively from the 123 hectares of the ancient feud of the Marquis Norante di Santa Cristina. In Molise, wine has a<br />tradition that goes back to the Samnites and the Romans, who introduced the cultivation of the vine. The production methods are those handed down from one generation to<br />the next in the southern Apennines, always linked to the values of the peasant world. Di Majo Norante has sacrificed productivity and standardisation of taste in the constant<br />pursuit of quality and typicality, in the conviction that southern vines are better suited to the soil and climatic conditions of the Molise countryside. The predisposition to<br />select clones of indigenous southern vines through the study of their adaptability to the soil is at the origin of all Di Majo Norante wines. Grapes of ancient vines such as<br />Aglianico, Montepulciano, Sangiovese and Tintilia for the production of red wines, Falanghina and Greco for the production of white wines; Moscato reale for the sweet<br />passito. With regard to the cultivation of the grapes, the main aim is to maintain the biodiversity of the vineyards. Biodiversity is defined as the totality of all forms of life<br />present: plants, animals and micro-organisms. For this reason, the rules of organic farming have been followed for many years. All the vineyards are left with natural grassing<br />and spontaneous flowering to ensure the healthiness of the soil, guaranteeing the presence of the necessary micro-organisms and insects that are antagonists to many<br />parasites. Production is kept low to obtain the highest quality of grapes; thanks to the thinning out of the bunches, only the most beautiful, ripe and healthy ones reach the<br />harvest.<br /><br />AGEING: The wine is aged for about three years, one of which in barriques and tonneaux.<br />

<br />Talò Primitivo di Manduria D.O.P.<br />750 ml<br /><br />In San Marzano, the vine-growers take care of their small vineyard as you would a garden.<br />Their stories are many, as are the names of their families.<br />We have chosen one, Talò, to thank them ideally: family for family, story for story.<br /><br /><br />Grape variety: Primitivo.<br />Area: San Marzano, Salento, Apulia. About 100 metres above sea level.<br />Soil: Medium-textured, clayey, shallow and with a good presence of skeleton.<br />Cultivation: Espallier (5,000 vines per hectare).<br />Harvest: Second week of September.<br />Vinification: Thermo-controlled maceration for about 10 days followed by alcoholic fermentation with selected yeasts.<br />Ageing: In French and American oak barriques for 6 months.<br />Organoleptic characteristics: Ruby red colour enriched by violet reflections; opulent bouquet reminiscent of ripe cherries and plums, with pleasant notes of cocoa and vanilla.<br />A wine of remarkable structure, softened by the persuasive warmth of the Primitivo, ending in notes of long sweetness.<br />Pairings: Robust first courses, lamb, game with elaborate sauces and hard cheeses.<br />Serve at: 16-18 °C.<br />

Passito Comtess<br />Sanct Valentin 2021<br />Passito is the Italian term for wines that are made from air- and sun-dried, almost rosined grapes. This usually takes place in our vineyard, i.e. the grapes remain on the vine<br />until the end of the year. The elegant Passito Comtess delights with intense fruit, a creamy-soft body, with a long finish and flatters the palate with racy-fresh acidity. On the nose hints of red fruits, such as strawberry and cherry, and a light spiciness reminiscent of pepper. On the palate a fine wine, but<br />at the same time elegant and characterised by power. On the palate fullness, elegance and taut, persistent tannin, long and fine taste. Perfect pairing: Barolo par excellence<br />goes well with important dishes, such as traditional Piedmontese main courses of meat such as boiled meats and stews. Spanning the world's traditions, we find goulash in<br />Eastern Europe, entrecôte in France and reindeer stew, Poronkaristys, in Finland. In Norway, on the other hand, it can be combined with fårikål, a meat stew accompanied<br />by cabbage. Staying in Europe, Barolo goes well with a typical Greek dish, souvlaki, a skewer of meat and vegetables. Going to Japan instead, we think of gyoza (fried<br />dumplings filled with spring onion, marinated pork and spices). Moving to the United States of America, beef (angus, wagyu, ox nostral, longhorn) in the brisket cut. But if<br />you have the pleasure, even a simple 'special' toast is perfect!<br />

Spontaneous fermentation without added yeasts in cement<br />tanks, with subsequent submerged cap maceration for at least 30 days at a temperature of 29°. After racking, malolactic fermentation is triggered, about 15 days at a<br />constant temperature of 22 C. <br />ROSSO DI MONTALCINO DOC<br />2015<br /><br />This wine was originally known as 'Brunello Etichetta Bianca' and was renamed Rosso di Montalcino in 1983 when the DOC was established.<br />True to the style that characterises all Biondi-Santi wines, Rosso is distinguished by its fragrant and fruity soul, which makes it perfect to be enjoyed even at a young age.<br />THE 2015 VINTAGE<br />A majestic vintage where structure, elegance and freshness combine to create something special. 2015 was a warm, low rainfall year with high temperatures from May to<br />August, which allowed the vines to ripen very well, giving us perfect grapes for very classy wines. We started the harvest on 21 September.<br />THE ORIGIN<br />The 2015 Rosso di Montalcino was produced with the Sangiovese Grosso clone BBS11 (Brunello Biondi Santi 11), identified and selected by Biondi-Santi at Tenuta Greppo<br />in the 1970s. For this Rosso, grapes were used exclusively from the youngest vineyards, aged between 4 and 10 years.<br />AGING<br />The 2015 Rosso di Montalcino was aged 12 months in Slavonian oak barrels.<br />THE EMOTION<br />The 2015 vintage gave great satisfaction. Even in Rosso di Montalcino one can feel the makings of an outstanding vintage that stands out for its structure and very refined<br />and intensely fruity bouquet. Brilliant ruby red in colour, it offers a broad and intense bouquet with notes of violets and wisteria flowers, fresh cherries and light hints of cedar<br />that find depth in the spiciness of pink and white pepper and sweet notes of vanilla bean. In the mouth it is soft and well-structured, with a fruity core, very elegant and fine.<br />The potential of the vintage is evident in the really important tannic texture that finds balance with the fresh acidity, typical of Tenuta Greppo wines. The finish is long and<br />savoury. A ready-made wine, while maintaining a good capacity for bottle ageing.<br />ALCOHOL<br />13,5%<br />
