THE PINE OF BISERNO<br />2020<br />TUSCAN IGT RED<br />It is the purest and most direct expression of Bibbona's unique terroir. The special flavour of the grape makes Pino di Biserno a classic with an intriguing aroma,<br />distinguished by its excellent balance and timeless elegance. It shares an identity with its alter-ego, the Biserno.<br />INDICATIVE PERCENTAGE: Cabernet Franc 23%, Merlot 38%, Cabernet Sauvignon 22%, Petit Verdot 17%.<br />SOIL TYPE: Partly clayey, partly Bolgheri conglomerate.<br />GROWTH: The planting system is spurred cordon with a density of 6,500 vines/ha.<br />CLIMATE CONDITIONS: a moderate vintage with more consistent rainfall in the spring months that made temperatures a little cooler than average. Then the heat arrived in<br />early June bringing with it flowering, albeit with a slight delay. The summer recorded average temperatures with a good temperature difference between day and night. It can<br />be considered a good year.<br />HARVEST: Harvest began in the second week of September with the Merlot harvest, then continued with the Cabernet Franc and ended with the Cabernet Sauvignon and<br />Petit Verdot harvest in the first week of October.<br />VINIFICATION: The grapes were carefully selected on the vibrating belt in the cellar. Destemming and soft crushing; alcoholic fermentation in truncated conical steel tanks<br />for 3-4 weeks at 28°, malolactic fermentation in barriques for 25% of the mass, the remainder in steel.<br />AGING: The wine matures partly for 12 months in new and second-passage French oak barriques, the remaining 10% of the volume remains in steel.<br />TASTING NOTES: Ruby red in colour with purple reflections, on the nose it releases a complexity of aromas ranging from ripe red fruits to Mediterranean scrub and delicate<br />notes of tobacco and spices. In this late harvest, the<br />aromaticity of Sauvignon vinified in stainless steel, the softness of Chardonnay and the finesse of Turbiana meet harmoniously with an exclusive result. The nose shows<br />notes of tropical fruit accompanied by a vegetality and minerality that enhance the finesse and elegance with a very communicative impact that induces salivation stimulating<br />the taste. On the palate it is rich with an exquisitely sweet attack followed by perfectly balanced acidity and flavour, and finally the fruity and mineral notes return. Chardonnay 'Cardellino' 2021 - South Tyrol DOC<br /><br />The Chardonnay 'Cardellino' was Elena Walch's first wine and is still probably the winery's most popular wine. According to an old tale, the goldfinch - the 'Cardellino' - only<br />builds its nest in Chardonnay vines, while it does not nest in other grape varieties. Elena Walch has thus dedicated her debut, an elegant Chardonnay full of character, to<br />this faithful little bird, which has won many lovers with its minerality, freshness, coupled with suppleness and excellent structure. The Chardonnay 'Cardellino' has long<br />since become a South Tyrolean classic and continues to be the most popular wine at the Walch family's table. A wine to which one remains loyal, just as the Cardellino<br />remains loyal to its Chardonnay.<br /><br />The Chardonnay 'Cardellino' convinces with a strong, straw-yellow colour, with a complex interplay of fruity aromas, citrus and orange peel, some lime blossom, mineral<br />richness and a spicy hint of tobacco. On the palate, this classic from Elena Walch surprises with exciting freshness and mineral race, with elegance and juicy length:<br />inviting, refreshing and easy to drink.<br /><br />OUTCOME OF THE YEAR 2021: we are delighted with a vintage of outstanding quality, especially for our white wines! A dry and cool spring led to a late flowering of the<br />vines, followed by a warm and dry June. After a volatile midsummer, there was a surprising change in the weather in mid-August, which brought dream weather until the end<br />of September and created the very best conditions for optimal ripening of the grapes. The harvest began in mid-September, about 10 days later than last year. Blue skies<br />and lots of sunshine as well as midsummer daytime temperatures and autumnally cool nights enabled the grapes to reach ideal sugar levels while retaining very good<br />acidity. Accordingly, the wines of the 2021 vintage show a markedly high quality.<br /><br />VINIFICATION: gentle pressing, static clarification, fermentation at a controlled temperature of about 20°C, long contact with the yeast after fermentation. Part of the must<br />(about 15%) is fermented in French oak barrels where it matures for six months. The winter season passed with mild temperatures and low rainfall. These<br />conditions led to an early spring. From the second week of April, the weather changed dramatically and until mid-May, rain was the protagonist with temperatures below<br />average. These weather conditions compromised the flowering and were the cause of spinning of the wings of the bunches and floral dripping, resulting in smaller, more<br />sparse bunches with very low average weights. After 15 May we saw a clear improvement in the weather conditions which allowed us to set fruit in favourable conditions.<br />Above-average temperatures characterised the month of June, which can be described as the driest in the last 20 years. The dry weather continued until mid-July with the<br />vines beginning to show symptoms of water stress. The beginning of August brought us the much-desired rain, effectively saving the season.<br />From 20 August, with the start of the harvest, temperatures returned to normal and the fine weather accompanied us until the end of the season.<br />and good weather accompanied us until the end of August. The harvest began on 20 August and ended on 5 September in good weather. Average yield per hectare was<br />4,800 kilograms of grapes, equivalent to 3,020 litres of wine (wine yield: 63%). The small size of the bunches and the low yields in the vineyard have legitimised the high<br />quality of this vintage, which is expressed in the Cuvée Prestige Edition 44 by an intense aroma of citrus, white and yellow fruits and by a full-bodied, extremely lively taste.<br /><br />VINIFICATION<br />The base wines of the Cuvée Prestige are the result of a careful selection of grapes and a skilful vinification process conducted in full respect of the Ca' del Bosco Method.<br />The grapes, harvested by hand in small crates, are classified and cooled. Each bunch is selected by expert eyes and hands, and then benefits from the exclusive 'berry<br />spa': a special system of washing and hydromassage of the bunches consisting of three soaking tubs and a drying tunnel. After pressing in the absence of oxygen, all the<br />musts of the base wines ferment in temperature-controlled steel tanks and remain there until the following March. Seven months of refinement are then necessary for the<br />wine to clarify, mature and bring out the best of the character of the original vineyards. The wines are then skilfully blended in the 'magic ritual' of creating the cuvée. It is<br />only after a minimum of two years of ageing on the lees that this Franciacorta can express all its richness and identity. The dégorgement takes place in the absence of<br />oxygen, using a unique system designed and patented by Ca' del Bosco. This avoids oxidative shocks and further additions of sulphites. It makes our Franciacorta wines<br />purer, more pleasant and longer-lived. South Tyrolean Pinot Blanc<br />Schulthauser 2020<br /><br />Pinot Blanc, South Tyrol's most important grape variety, has awoken from its slumber and has become the region's flagship wine. Schulthauser is the classic among South<br />Tyrolean Pinot Blancs; it was first vinified and bottled in 1982. Nosiola CESCONI 750ml IGT

Nosiola is the only autochthonous white variety in Trentino, present since the time of the Council of Trent. The origin of the name has not yet been clarified. Many maintain<br />that it derives its name from hazelnut, due to the colour of the grapes when ripe, while others believe that it is the aroma of the wines that recalls that of wild hazelnuts.<br />What we do know is that it is a versatile variety, which like few others in the world can produce both great sweet wines and still white wines with a savoury character that<br />can age for many decades.<br /><br />Once widespread throughout the province, Nosiola was mainly grown on the Pressano hill and in the Valle dei Laghi. In recent times, the variety has undergone a major<br />downsizing in favour of international varieties to the extent that it has become almost 'rare'. Today it covers a cultivated area of only 65 hectares. As winegrowers, attached<br />to our territory and our traditions, we are happy to contribute to its preservation.<br /><br />Type of wine: White wine<br />Format: (Litres) 0.75<br />Production area: Nosiola is planted in the highest vineyards on the edge of the forest at an altitude of about 500 metres to the north-east of Pressano. Nosiola flowers early<br />and prefers high, well-ventilated and sunny areas. The vineyard is west-facing and has loose soil on a deep, fertile dolomite dejection cone. The vines have an average age of<br />35 years and are trained to the simple pergola system, with a density of about 3500 plants per hectare.<br />Vinification Part of the grapes are destemmed and macerated for 4-5 days until the 'cap rises'. At this point a cuvèe is made from the directly pressed grapes and<br />fermentation continues partly in stainless steel containers and partly in large acacia barrels. The acacia wood allows us to combine the advantages of vinification in wood<br />with the preservation of the fine and delicate bouquet of Nosiola. The wine remains in contact with its own yeast for about 9 months before being bottled at the end of the<br />summer.<br />

San Giovanni Della Sala<br />Orvieto DOC Classico Superiore<br /><br /><br />Climate: 2020 will be remembered as a tendentially dry year. The winter, almost completely devoid of rain, was dominated by temperatures that were not too cold. The<br />spring weather, which arrived slightly later than in previous years, was characterised by mild days and temperatures above seasonal averages, with the exception of a few<br />cooler periods at the beginning of April. Then, from June until almost mid-August, the warm and dry weather led to an early ripening of the grapes. A summer thunderstorm<br />towards the end of August refreshed the later varieties such as Grechetto and Procanico, ensuring that they reached a good degree of ripeness while maintaining freshness<br />and fragrance. The harvest of Grechetto, Viognier and Pinot Bianco for San Giovanni della Sala began around the last week of August and ended with the harvest of<br />Procanico towards the middle of September.<br /><br /><br />Vinification: on arrival at the winery, the grapes were vinified separately by variety to enhance the varietal characteristics. Part of the must underwent cold maceration,<br />remaining in contact with its skins for about 6 hours at a temperature of 10 °C, before being combined with the must obtained from the soft direct pressing of the grapes. The<br />must thus obtained was transferred to stainless steel tanks where alcoholic fermentation took place at a controlled temperature of 16 °C. The wine remained on its lees for a<br />few months to improve its structure, elegance and minerality until it was blended and bottled.<br /><br />Historical data: San Giovanni was born from the vineyards of the ancient Castello della Sala from the union of indigenous Grechetto and Procanico grapes with those of Pinot<br />Bianco and Viognier to tell the Orvieto Classico according to a new style. The first vintage of Castello della Sala Orvieto Classico was 1990.<br /><br />Tasting notes: San Giovanni della Sala has a light straw yellow colour with greenish reflections. On the nose, pleasant notes of tropical fruit combine with light mineral<br />sensations. On the palate it stands out for its balance between structure and freshness with good flavour and a pleasant persistence of yellow flesh fruit.<br /><br />Alcohol content: 12.0% Vol.<br />

Vin Santo<br /><br />Historical evidence tells of the existence of Vino Santo as early as the 16th century in the vicinity of Castel Toblino, and it is certain that a Vino Santo Puro was produced<br />from the Rauten vineyards in Sarche as early as 1825 (diploma Melbourne Australia 1880-1881).<br /><br />The ancient tradition, masterfully perpetrated up to the Salvetta brothers, comes back to life with the Salvetta Winery: the long and complex process leads to the birth of this<br />great meditation wine.<br /><br />Harvested late, in fact, the Nosiola bunches are left to rest in well-ventilated areas on the 'Arele', the racks on which the grapes dry naturally for several months, until they<br />are pressed during Holy Week, between March and April of the year following the harvest. The wine is then left to ferment and refine for five years in oak barrels and steel,<br />until bottling.<br /><br />The result is a sweet wine to be enjoyed at a temperature of 10 - 12 degrees, on its own or with dry desserts. The combination with blue cheeses and foie gras is<br />exceptional.<br /><br />The vintages currently being aged are those of the 2014, 2015 and 2016 harvests, while the 2009 and 2011 vintages are on sale.<br />
