Vintage Collection Dosage Zéro 2018<br />Denomination: Franciacorta Millesimato.<br />Grape varieties: Chardonnay 76%, Pinot Noir 16%, Pinot Blanc 8%.<br />Original vineyards: 18 Chardonnay vines, average age 31 years, located in the communes of Erbusco, Adro, Cazzago San Martino, Corte Franca and Passirano. 6 Pinot<br />Nero vines, with an average age of 30 years, located in the municipalities of Erbusco and Passirano. 2 Pinot Bianco vines with an average age of 29 years, located in the<br />municipality of Passirano.<br />Harvest: 2018. Very cold winter: February with snow and minimum temperatures as low as -7°C. With the onset of spring, the weather remained cold and damp and the<br />vines began budding about ten days later than usual. From mid-April, an abnormal rise in temperatures to 29°C favoured abundant flower fertilisation. With the arrival of May,<br />however, the rain returned. It was only from 15 July that the real summer was seen, which continued until 25 August with temperatures up to above average, with almost<br />torrid heat in August. The much-desired summer rain arrived in the third ten days of August and met the water requirements of the vines. The harvest that began on 13<br />August gave us a vintage characterised by a very generous nature, well managed by thinning, with beautiful, healthy and perfectly ripened grapes.<br />Average yield per hectare: 8,300 kilograms of grapes, equivalent to 3,570 litres of wine (yield<br />in wine: 43%)<br />Vinification: Franciacorta Vintage Collection wines are the fruit of careful grape selection and skilful vinification conducted in full respect of the Ca' del Bosco Method. The<br />grapes, freshly hand-picked into small crates, are graded and cooled. Each bunch of grapes is selected by expert eyes and hands, to then benefit from exclusive 'grape<br />spas'. A special system washes and whirlpools the bunches, using three soaking tubs and a drying tunnel. After crushing in the absence of oxygen, all the musts of the<br />base wines ferment in small oak barrels. In order to seek maximum aromatic complexity and expressive power, without losing elegance, the barrel elevage lasts only 5<br />months. A pair of flying tanks allows the wine to be transferred by gravity from the small barrels to the ageing tanks. After 7 months from the harvest, the cuvée is created.<br />The 2018 Vintage Collection Dosage Zéro is the result of a skilful blending of 26 base wines of Chardonnay, Pinot Blanc and Pinot Noir that give the finished product a<br />particular profile, pure and sincere, the fruit of the best expression of the terroir and of the man who intuited its character and potential. Dégorgement takes place in the<br />absence of oxygen, using a unique system, invented and patented by Ca' del Bosco. This avoids oxidative shocks and further additions of sulphites, making our<br />Franciacorta wines purer, more pleasant and longer-lived. <br />Appius 2017<br /><br />Through an extreme pre-selection of the grapes, combined with a careful maturation in the cellar and a successful assemblage, it was possible to achieve a true sensory<br />symphony despite the climatically adverse conditions of the 2017 vintage. The contribution of each individual grape variety does not emerge separately, but forms a powerful<br />symbiosis.<br /><br />Eye: brilliant colour with yellowish, slightly olive reflections.<br />Nose: Intense and complex bouquet of yellow flowers (broom and lime), mainly white flowers (hawthorn and orange blossom) and citrus notes of mandarin and grapefruit.<br />Rarely white currant and gooseberry.<br />Taste: Fine, elegant, almost velvety on the palate, carried by a crisp acidity and a mineral and spicy structure. The demanding Gewürztraminer prefers warm, airy sites with deep, loamy soils. These conditions are found in the Brenntal vineyard in the north-west of the village of<br />Kurtatsch.<br /><br />The Gewürztraminer gets its multifaceted aromas from the red clay soils: lychee, roses, mango, caramelised orange peel and lavender. On the palate, the wine presents a<br />creamy texture and elegant acidity that balances the muscular body. The wine reaches its complexity after a longer ageing period in the cellar and in the bottle, which is<br />why the wine is only sold as a Riserva 2 years after the harvest. And yet the essence remains invisible to the eyes, revealing itself only to the nose and mouth: the beguiling scent of roses in the vineyard awakens<br />the secrets of summer from their slumber and lingers on the tongue with sweet spice.<br /><br />VINIFICATION<br />Late harvest of the fully ripe, partially dried grapes, 20-hour cold maceration, fermentation in wooden barrels, ten months of ageing on the fine lees in large wooden barrels.<br /><br />SITUATION / SOIL<br />Höfl unterm Stein in Söll near Tramin, is a south-eastern slope situated at 480 to 550 m above sea level. Campaner Gewürztraminer DOC 2021<br /><br />Origin: the name Gewürztraminer goes back to Tramin, the neighbouring village of Kaltern, where this variety was first mentioned in documents in the 14th century. Whether<br />the variety really originated in Tramin is questionable. The fact is that it has a very long tradition in South Tyrol and produces excellent wines.<br /><br />Vintage: the winter months were predominantly sunny but decidedly cold. Temperatures rose only hesitantly even in spring, slowing down the development phase of the<br />vines. However, a warm and sunny start to the summer made up for this. August and July were very varied, so the grape harvest started relatively late on 9 September. The<br />rainy September was a great organisational challenge for our winegrowers, but finally the harvest was completed on 26 October with a very good result.<br /><br />Tasting notes:<br />- pale golden yellow<br />- intense nose, rose petals, lychee, cloves, cinnamon, some sage, complex and multilayered<br />- much volume on the palate, very clear and straightforward, tropical fruits in the long finish<br /><br />Recommendation: goes very well with prawns and flavourful fish as well as with Asian cuisine. Also try it with thinly sliced pancetta!<br /><br />Vinification: de-stemming of late harvested but perfectly healthy grapes; 12-hour cold maceration, pressing, natural must clarification, slow fermentation at a controlled<br />temperature of 18°C, ageing on fine lees for 5 months, filtration and bottling in March.<br /><br />Vineyard: south-facing slope at 450 to 500m above sea level.
