TYPE OF WINE: Red wine AOC Corbières<br />PRODUCTION AREA: The estate is nestled in the rugged hills just behind the Mediterranean coast of Narbonne, in the south of France.<br />GRAPE VARIETIES: Syrah 36%, Grenache noir 35%, Mourvèdre 12%, Carignan 9%, Alicante-henri-bouschet 8%.<br />VINIFICATION: made according to the traditional method. Alcoholic fermentation takes place in temperature-controlled stainless steel and concrete tanks. During<br />fermentation, the wine is regularly pumped to allow gentle extraction of the tannins. Once fermentation is complete, the wine is left untouched for a couple of days. The total<br />maceration time is 15-2 days.<br />COLOUR: ruby red<br />BOUQUET: Pure, sunny bouquet with notes of flint and graphite. These aromas are mixed with scents of thyme, black truffle, a little liquorice and eucalyptus.<br />FLAVOUR: The palate has the same mineral character, but on a slightly different register (mentholated verbena, sage, laurel). Secondary notes (from fermentation) of<br />blackcurrant and blueberry jam and a hint of fruit brandy, a sign of the beginning of a very harmonious evolution. The tannins are well integrated, giving the wine a perfectly<br />balanced structure.<br />

TECUM<br />PINOT BIANCO RISERVA<br />'Tecum' (Latin: with you/together) is the expression of unison, elegance, and harmony. This cool and mineral Weiburgunder grows in the selected single vineyard Buchholz,<br />above Salurn. The site is located on the cooler, eastern valley side of the South Tyrolean lowlands, at an altitude of 600 m and with a mineral soil of dolomite rock. Out of full<br />respect for the terroir and the natural cycle of the vine, the wine matures for 12 months on fine lees in large wooden barrels and in stainless steel tanks, to then develop for a<br />further 12 months in the bottle. In the process, it retains its structure and complex variety of aromas. The wine is bottled exclusively in large bottles to promote its shelf life.<br />The initials 'N.D.T', which can be found on the label, stand for the philosophy of the wine: 'niente di troppo', which translates into German as 'from nothing too much'. Complex Chardonnays from high altitudes are a rarity, but that is precisely where the appeal lies for us. Troy means 'path' in the language of our ancestors. The name<br />illustrates our long journey of research and experimentation with this noble grape variety.<br /><br />The winter ended with abundant snow in the mountains. Warmer temperatures in March and April caused premature and rather uneven budding in the well-supplied soils. A<br />cool May then delayed the flowering. In humid and hot June, a high fungal disease pressure developed, which could be contained through sensitivity and a lot of careful<br />manual work. The rest of the summer was largely dry and was only interrupted by short, heavy thunderstorms. Two hot spells had practically no negative effects. A<br />significant drop in the lowest temperatures began in mid-August. High temperature differences between day and night characterised the weather throughout the harvest. The<br />harvest took place about 14 days later than in the previous year. The white wines of the 2019 vintage show an impressive freshness, Gewürztraminer are characterised by<br />particular elegance. PRIMITIVO DI MANDURIA DOP<br />Sessantanni<br />Typology: Red<br />Grape variety: Primitivo<br />Denomination: Primitivo di Manduria DOP<br />Cultivation: Trees at least sixty years old<br />Planting density: 5,000 vines per hectare<br />Production area: Valle del Sessantanni, about 40 hectares between San Marzano and Sava (TA). The thermal values characterise a rather warm environment with very low<br />annual rainfall and very high temperature variations, which has a positive effect on the quality of the grapes. This is the classic growing area for Primitivo di Manduria PDO.<br />Soil: Red residual soil with a fine texture, calcareous substrate and sparse rock outcrops. The famous red hue of these soils is due to the high content of iron oxides.<br />Harvest: Mid-September<br />Vinification: Hand-picking of slightly overripe grapes; destemming and maceration, maceration at 8°C for 24-48 hours before fermentation. Thermally controlled maceration<br />and alcoholic fermentation with selected yeasts for about 10 days at 24-26°C. Final bottling with soft presses.<br />Maturation: Malolactic fermentation in stainless steel tanks followed by 12 months in French and American oak barriques.<br />Organoleptic characteristics: Very deep and elegant ruby red colour; rich and complex bouquet, fruity with notes of plums, cherry jam with a slight spiciness and hints of<br />tobacco. At Castellare, Chianti Classico is produced using only two indigenous grape varieties: Sangioveto, the prince of Tuscan vines, which makes up 90% of the blend, and the<br />remaining 10% of Canaiolo, another typical variety of the area. The true Chianti Classico, therefore, without the addition of international vines such as Cabernet or Merlot, in<br />order to maintain the authentic formula of the most famous of Italian wines while seeking maximum elegance.<br /><br />Tasting notes: the colour of this Chianti Classico is the ruby red of Sangioveto. The nose is fragrant, fresh with pleasant hints of red fruit, liquorice, currants and a light touch<br />of vanilla. The typical notes of Chianti Sangiovese dominate. On the palate it expresses a pleasant sweetness, is round, soft and savoury. THE PINE OF BISERNO<br />2020<br />TUSCAN IGT RED<br />It is the purest and most direct expression of Bibbona's unique terroir. The special flavour of the grape makes Pino di Biserno a classic with an intriguing aroma,<br />distinguished by its excellent balance and timeless elegance. It shares an identity with its alter-ego, the Biserno.<br />INDICATIVE PERCENTAGE: Cabernet Franc 23%, Merlot 38%, Cabernet Sauvignon 22%, Petit Verdot 17%.<br />SOIL TYPE: Partly clayey, partly Bolgheri conglomerate.<br />GROWTH: The planting system is spurred cordon with a density of 6,500 vines/ha.<br />CLIMATE CONDITIONS: a moderate vintage with more consistent rainfall in the spring months that made temperatures a little cooler than average. Then the heat arrived in<br />early June bringing with it flowering, albeit with a slight delay. The summer recorded average temperatures with a good temperature difference between day and night. It can<br />be considered a good year.<br />HARVEST: Harvest began in the second week of September with the Merlot harvest, then continued with the Cabernet Franc and ended with the Cabernet Sauvignon and<br />Petit Verdot harvest in the first week of October.<br />VINIFICATION: The grapes were carefully selected on the vibrating belt in the cellar. Destemming and soft crushing; alcoholic fermentation in truncated conical steel tanks<br />for 3-4 weeks at 28°, malolactic fermentation in barriques for 25% of the mass, the remainder in steel.<br />AGING: The wine matures partly for 12 months in new and second-passage French oak barriques, the remaining 10% of the volume remains in steel.<br />TASTING NOTES: Ruby red in colour with purple reflections, on the nose it releases a complexity of aromas ranging from ripe red fruits to Mediterranean scrub and delicate<br />notes of tobacco and spices.
