2016<br />As is often the case in recent years, the winter of 2016 was characterised by unusually warm weather with heavy rainfall in February. Budding arrived on time in the last<br />week of March. The abundance of water in the soil and the warm weather in April favoured rapid and normal vegetative growth of the vines. In May, temperatures returned to<br />normal, slowing growth slightly and leading to flowering in the last week of May in dry, sunny weather, perfect for good fruit set. Summer temperatures were normal with very<br />little rain causing considerable water stress towards the end of the ripening phase. The usual mid-August storms were also absent, prolonging the water stress throughout<br />the early part of the harvest. Fortunately, the remarkably cool temperatures during the night allowed the vines to recover from the heat of the day. Maturation proceeded<br />smoothly with excellent phenolic potential and a balanced sugar/acid ratio. The harvest began on 24 August with the youngest vines. In September, the few rainfalls provided<br />the soil with sufficient water to complete the harvest in practically perfect conditions. The older vines of the 'Masseto centrale' benefited from this situation, continuing their<br />ripening until the third week of September. The last plots were harvested on 20 September.<br />TASTING NOTES: 2016 was a textbook year for Masseto, with a typically Tuscan coastal climate that saw a dry and sunny growing season, with plenty of sunshine and<br />just the right amount of rain for perfect ripeness. The 2016 has a particularly intense young colour, and on the nose the intense aroma of ripe dark fruit blends with subtle<br />notes of cocoa and spices. On the palate, the rich, dense structure of ripe, silky tannins is balanced by a sensual, vibrant fruit note and lively acidity that keeps the long<br />finish clean and full-bodied.<br />

The joy of its sip evolves over time, adding to the energy of youth the charm<br />of maturity.<br /><br />Winemaker's notes<br /><br />'The offspring of a vintage that proved to be of great level and satisfaction, Le Serre Nuove dell'Ornellaia 2021 reveals the good tannic quality and well-dosed concentration<br />that characterises the wines of this vintage.<br />In the glass it flaunts a brilliant ruby red colour, with the usual purple highlights. The nose is fresh, with hints of pink pepper and cypress berries, reminiscent of the<br />Mediterranean bush.<br />On the palate the wine is elegant, with nice acidity and a persistent, savoury finish that invites a second sip.'<br />Olga Fusari - Winemaker - April 2023<br /><br />E NOLOGO TASTING NOTES<br />50% Merlot, 28% Cabernet Sauvignon, 11% Cabernet Franc, 11% Petit Verdot Alc. 14.5% vol.<br /><br />THE CLIMATE OF 2021<br />The 2021 vintage began with a rainy and mild winter that allowed the soil's water reserves to be replenished. After a dry March, budding took place in the first two weeks of<br />April. The gradual rise in temperatures, with normal rainfall, allowed the shoots to grow steadily, leading to flowering in excellent conditions at the end of May. From June<br />onwards, fully summery weather set in, with slightly higher than average temperatures and almost no rainfall, leading to veraison in the last week of July. The drought lasted<br />throughout August and September, but the spring rains and deep Bolgheri soils allowed the vines to avoid too much water stress, creating the conditions for small, highly<br />concentrated grapes with high quality potential. September was warm and sunny with no rain, allowing an 'à la carte' harvest to express the full quality potential of each<br />individual vineyard. he harvest of the reds took place substantially during the month of September, with the Merlot in the first two weeks and the other vines on the estate<br />from 13 September, concluding on 1 October.<br /><br />VINIFICATION AND FINING<br />Harvesting was carried out by hand in 15 kg crates and the grapes were sorted on a double sorting table before and after destemming and then subjected to a soft crushing.<br />Since 2016, optical sorting has been introduced in addition to manual sorting to further increase the quality of the selection. Each variety and each plot was vinified<br />separately. Alcoholic fermentation took place partly in stainless steel vats, partly in cement vats, at temperatures between 22-28°C for a fortnight followed by maceration for<br />approximately 10-15 days. Malolactic fermentation took place in steel vats, after which the wines were transferred to barriques (25% new and 75% second-passage). The<br />wine remained in barriques in the Ornellaia cellars at a controlled temperature for a period of about 15 months. After the first 12 months it was blended and then reintroduced<br />into the barriques where it spent a further 3 months. The wine remained in the bottle for six months before release.<br />

This wine contradicts the classic idea of a South Tyrolean<br />Gewürztraminer, redefines boundaries and impressively shows what this great variety is capable of.<br />Mild temperatures in spring brought about an early start of vegetation. The summer months were decidedly sunny and dry. Cool nights ensured that the physiological<br />ripeness could nevertheless develop in a balanced way. Thanks to a cool September, the ripening process was delayed so that an excellent harvest with optimally ripened<br />grapes took place. Altemasi Rosé<br />TRENTO DOC METODO CLASSICO Altemasi Rosé represents a harmonious union between the elegance of Chardonnay and the structure of Pinot Noir, for a refined<br />bouquet of small fruits.<br /><br />Area of production: The wines of this important cuvée come from Pinot Noir and Chardonnay grapes harvested in the high hillside vineyards around Trento and on the<br />Brentonico plateau at altitudes between 450 and 600 m above sea level, facing south and southwest. The Chardonnay is grown on soils that are mainly of fluvial-glacial<br />origin, of medium depth, tend to be calcareous and rich in skeleton. The soils chosen for the Pinot Noir are of volcanic origin, originating on the basalt of the Brentonico<br />plateau, with a medium texture and well structured.<br />Vinification and refinement:The grapes are harvested by hand and delivered in crates to the cellars where vinification takes place. Only the whole Chardonnay berries are<br />slowly pressed to separate the different fractions of must which, inoculated with selected yeasts, ferments at controlled temperatures in stainless steel tanks. The wine<br />from Pinot Noir is made using the 'submerged cap' system, which consists of leaving the must in contact with the skins until the first signs of fermentation begin; then only<br />the must is separated and fermentation continues in stainless steel at a controlled temperature. This allows us to obtain a soft, delicate colour from the skins, a distinctive<br />feature of Cavit's Trentodoc rosé. Foaming in the bottle takes place the following spring and the wine remains on the lees for at least 15 months.
