The joy of its sip evolves over time, adding to the energy of youth the charm<br />of maturity.<br /><br />Winemaker's notes<br /><br />'The offspring of a vintage that proved to be of great level and satisfaction, Le Serre Nuove dell'Ornellaia 2021 reveals the good tannic quality and well-dosed concentration<br />that characterises the wines of this vintage.<br />In the glass it flaunts a brilliant ruby red colour, with the usual purple highlights. The nose is fresh, with hints of pink pepper and cypress berries, reminiscent of the<br />Mediterranean bush.<br />On the palate the wine is elegant, with nice acidity and a persistent, savoury finish that invites a second sip.'<br />Olga Fusari - Winemaker - April 2023<br /><br />E NOLOGO TASTING NOTES<br />50% Merlot, 28% Cabernet Sauvignon, 11% Cabernet Franc, 11% Petit Verdot Alc. 14.5% vol.<br /><br />THE CLIMATE OF 2021<br />The 2021 vintage began with a rainy and mild winter that allowed the soil's water reserves to be replenished. After a dry March, budding took place in the first two weeks of<br />April. The gradual rise in temperatures, with normal rainfall, allowed the shoots to grow steadily, leading to flowering in excellent conditions at the end of May. From June<br />onwards, fully summery weather set in, with slightly higher than average temperatures and almost no rainfall, leading to veraison in the last week of July. The drought lasted<br />throughout August and September, but the spring rains and deep Bolgheri soils allowed the vines to avoid too much water stress, creating the conditions for small, highly<br />concentrated grapes with high quality potential. September was warm and sunny with no rain, allowing an 'à la carte' harvest to express the full quality potential of each<br />individual vineyard. he harvest of the reds took place substantially during the month of September, with the Merlot in the first two weeks and the other vines on the estate<br />from 13 September, concluding on 1 October.<br /><br />VINIFICATION AND FINING<br />Harvesting was carried out by hand in 15 kg crates and the grapes were sorted on a double sorting table before and after destemming and then subjected to a soft crushing.<br />Since 2016, optical sorting has been introduced in addition to manual sorting to further increase the quality of the selection. Each variety and each plot was vinified<br />separately. Alcoholic fermentation took place partly in stainless steel vats, partly in cement vats, at temperatures between 22-28°C for a fortnight followed by maceration for<br />approximately 10-15 days. Malolactic fermentation took place in steel vats, after which the wines were transferred to barriques (25% new and 75% second-passage). The<br />wine remained in barriques in the Ornellaia cellars at a controlled temperature for a period of about 15 months. After the first 12 months it was blended and then reintroduced<br />into the barriques where it spent a further 3 months. The wine remained in the bottle for six months before release.<br />

Since the first vintage in 1981, Morellino di Scansano Classico Moris has been the<br />standard-bearer for the pure expression of Sangiovese, fresh and rich with ripe cherries and spices.<br />TASTING:<br /><br />Colour: brilliant ruby red<br />Bouquet: fruity, intense<br />Taste: full, with good freshness and harmony<br />Serving temperature: 16°C<br />Pairing: for the whole meal, with meat<br />TECHNICAL NOTES:<br /><br />Production area: Poggio la Mozza, Grosseto<br />Soils: sandstone, of marine origin, tending to acidity<br />Exposure: north-west<br />Yield per hectare: 90 ql.<br />PRODUCTION:<br /><br />Harvest time: last two weeks of September and first week of October. Vinification in stainless steel tanks with temperature control by means of two daily pumpings over for a<br />maceration period of fifteen days. The wine is bottled after 4 months, without any passage in wood, and undergoes further ageing for at least two months before being put on<br />the market.<br />

Altemasi Rosé<br />TRENTO DOC METODO CLASSICO Altemasi Rosé represents a harmonious union between the elegance of Chardonnay and the structure of Pinot Noir, for a refined<br />bouquet of small fruits.<br /><br />Area of production: The wines of this important cuvée come from Pinot Noir and Chardonnay grapes harvested in the high hillside vineyards around Trento and on the<br />Brentonico plateau at altitudes between 450 and 600 m above sea level, facing south and southwest. The Chardonnay is grown on soils that are mainly of fluvial-glacial<br />origin, of medium depth, tend to be calcareous and rich in skeleton. The soils chosen for the Pinot Noir are of volcanic origin, originating on the basalt of the Brentonico<br />plateau, with a medium texture and well structured.<br />Vinification and refinement:The grapes are harvested by hand and delivered in crates to the cellars where vinification takes place. Only the whole Chardonnay berries are<br />slowly pressed to separate the different fractions of must which, inoculated with selected yeasts, ferments at controlled temperatures in stainless steel tanks. The wine<br />from Pinot Noir is made using the 'submerged cap' system, which consists of leaving the must in contact with the skins until the first signs of fermentation begin; then only<br />the must is separated and fermentation continues in stainless steel at a controlled temperature. This allows us to obtain a soft, delicate colour from the skins, a distinctive<br />feature of Cavit's Trentodoc rosé. Foaming in the bottle takes place the following spring and the wine remains on the lees for at least 15 months. Harvesting of the grapes at perfect phenolic maturity, maceration at 35°C for 12 hours; followed<br />by fermentation at controlled temperature (max 29°C) and post-fermentation maceration on the skins for a total of 12 days from the start of fermentation. Malolactic<br />fermentation occurs naturally a few days after racking.<br />Maturation: in 225 l French oak barriques (20% first passage, 80% second and third) for 12 months. Brief passage in steel.<br />Ageing: in bottle for 10 months.<br />Ageing potential: structured Morellino di Scansano to be drunk preferably 4-8 years after harvesting.<br />Description: Morellino di Scansano Roggiano Riserva is a concentrated ruby red colour. Its nose is elegant, complex and variegated with dark fruits, flowers, spices and<br />undergrowth. On the palate it is slender, fine and balanced. Warm, fresh and rightly savoury, it shows round tannins and a nice softness. The finish has an excellent taste-<br />olfactory persistence.<br />Pairings: With roasted and braised meats, succulent meat dishes, mature cheeses.<br />Serving temperature: 16-18°C<br />Ideal glass: a large Bordeaux-type goblet.<br />

Quercegobbe<br />Merlot 100%<br />A real cru from which the merlot grapes used to produce the wine come.<br /><br />Quercegobbe is in an ideal position, on the edge of the Mediterranean maquis but close to the winery, on a well-ventilated hill overlooking the sea.<br /><br />Very concentrated ruby colour. Wide and intriguing nose, at first in the fruity notes of blueberries, raspberries, sour cherries and plums, then in the Mediterranean<br />component of myrtle, rosemary and liquorice.<br />The body is dense, rich overall, soft, with smooth tannins. As vigorous as it is balanced, it is an impactful red that does not betray expectations.<br />Production methodPrecious threads from the past weave a modern weave.<br />The production method is rigorously aimed at defending the territorial connotation.<br /><br />It ferments in truncated conical oak vats and matures for 15 months, partly in new 600-litre demi-muids and partly in second-passage barriques. After completing malolactic<br />fermentation,the wine matures in 25-hectolitre barrels of Slavonian oak.<br />Bottling normally takes place in August. The Barolo Ginestra Casa<br />Matèthen stays in the binning cellar for 8-10 months before release.<br />
